Food is Love

Hey hey hey!

Can you believe the week is half over? Or more importantly, can you believe there’s only 12 more days until Christmas?!

And guess who STILL hasn’t started shopping!

Ugh…

I may not be on the bandwagon with all the other elves, but one thing I AM excited about?

Oh yeah! Time for another What I Ate Wednesday put on by the ever so lovely Jenn of Peas and Crayons.

My morning started with an apple in the light of a neon moon…or the refrigerator…who knows, it was 5:30am and I was half asleep, BUTTTTT I am happy to say that after lying in bed and debating for about 30 minutes on whether or not I was going to get up to workout, I made it to the gym!

I may have been yawning throughout most of my upper body circuit, but by the end of it and then a little date with the arc trainer, I was one sweaty mess!

Once I got home and cleaned up, I dove head first into my latest obsession:

Plain Greek yogurt topped with peanut flour and strawberry jam!

Yeah, pretty sure I’ve had this at least once every couple of days for the last week and I’m STILL not tired of it!

There was also some TJ’s Sumatra Blend organic coffee (best bold roast ever) while I hummed the words to the song printed on my cute little Christmas mug.

Lunch was a beast…

A SALAD beast that is!

Baby spinach topped with shredded carrots, orange bell pepper, sliced mushrooms, and a crumbled Millet-Black Bean Burger (don’t forget to enter my giveaway!) topped with some balsamic vinegar straight up.

And then two little “cuties” just happened to jump into my hand! 😉

Snack-time came a few hours later and while my co-workers were popping chocolate covered cherries like it was their jobs, I indulged in my own little “dessert” without the sugar crash!

And finally, after a seemingly never-ending 10 hour shift at the hospital, I came home to some fantastic leftovers…

I surprised BB with a good home-cooked meal Monday night since I had the day off and decided to make my mom’s recipe for roast with all the fixin’s…well, that is if you call throwing a slab of meat in a cooker with handfuls of veggies and broth a recipe…

What can I say, when I care about someone, I cook for them…I guess it’s part of my love language! 😉

Now, if you’ll excuse me…I have a pineapple upside down cake to make for the guys at work tomorrow!

    I had the same contemplation going on in my head about the gym this morning too. Unfortunately, sleep won for me. (I wound up going to the gym a little later in the day. Oh well!) Props to you for getting up and making it there!

    I’ve never thought of peanut flour in yogurt. Definitely something I’m going to try!

  5. I’m not done Christmas shopping either! It’s so hard to find the time while I’m studying for exams. 😛

    Girl that pot roast looks awesome! I bet BB loved it. I love cooking for others, but I get really nervous about pleasing them! Especially with my parents because they’re both such awesome cooks, so they’re a tough crowd to please.

      Ugh, I remember those times…and like my family, I’m sure yours will forgive you if you don’t get a chance to go out. When it gets down to crunch time at the end of a semester, the LAST thing you’re thinking about is going shopping!

      My dad is really hard to please…but only because he’s closed minded. He totally grew up on fried bologna sandwiches and he hates ANYTHING green! 🙁

  9. i eat greek yogurt with PF daily! best combo. but i mix the PF with water and stevia, then layer with the yogurt (spiked with vanilla stevia and pumpkin puree). so goooood!

  10. I confess, I have not heard of peanut flour – that sounds awesome. I have to try that! And I love to crumble veggie burgers over salads – a great way to amp up the protein in any salad beast!

      WELLLLLL, allow me to introduce you! It’s a powder that is formed after part of the oil is removed from the peanuts…it ends up being a higher protein count because of the reduction in the oil. Some people mix it with water or milk and use as a substitution for peanut butter, but honestly if I want a peanut butter sandwich or something, I’d rather just use the real stuff. But as far as other things, I LOVE sprinkling it over yogurt or bowls of cereal and it’s fun to throw into baked goods for a good peanutty flavor! I get mine online at netrition.com…it’s a good deal as far as price and shipping and the brand I linked is by far the best one I’ve tried!

  12. I’ve been eating clementines like CRAZY! I think Alex’s top two love languages are physical touch and words of affirmation, while mine are receiving gifts and acts of service, and both of us value quality time a lot too. I’ve read about them in the past, and it really is a neat concept which can offer a lot of insight! 🙂

  13. Yum all your eats look so good! I’ve gotta try that yogurt/jam/peanut flour concoction. I love cooking for other people more than I love cooking for myself. It makes me work harder to make it taste better and I love to see how much they enjoy it! 🙂

      Oh yeah, me too! I’ve always had a strong “motherly instinct”. Sometimes it’s a good thing and sometimes it’s a bad thing…like when I basically started “raising” my roommate my freshman year of college! I swear I felt more like her mother than her friend! Haha!

  17. I used to be seriously addicted to peanut flour in yogurt. Have you ever tried coconut flour? It’s amazing in yogurt! I just discovered it.

  20. I love PowerCrunch bars! Also, where do you buy peanut flour?! I can’t find it at my TJ’s thoughts on Whole Foods having it?

      Unfortunately TJ’s discontinued their peanut flour and since I’ve yet to find it anywhere in the store, I had to resort to buying online. I get the Protein Plus brand from netrition.com and I think it tastes JUST like the one they used to sell at TJ’s…not a bad price either!

  22. *cough* I’m sorry, ten? That’s so not many! Insert instant panic.
    I hate those mornings where you lay there and debate getting up. They’re fine when they end in you getting up, but when they don’t…..hours later you wish you had. Or perhaps sometimes you’re glad for a lie-in.
    When will the world acknowledge the wonder that is plain greek yogurt. What kind do you get? Please tell me you’ve discovered fage 2%’s creamy goodness.
    salads are always best topped with balsamic. I would have nothing else (lies, I like salsa and many other things)

      I feel the same way! I hate it when I know I HAD the time to get up and get something done, but ended up being a lazy bum!

      I’ve been buying Fage 0% from my local warehouse store for a GREAT price, but I wish they sold the 2% (it is definitely THE best!)

      LOVE salsa on salads…and hummus…and marinara sauce…and…. 😉

  23. That salad looks awesome! At first I thought it was granola on top…DUH! I’m all about “beast” salads. It’s either a “beast” or the “kitchen sink” salad. Just depends what I have in the fridge that week. Happy Hump Day!

  27. I don’t know what my love language is…but I bet it has something to do with cooking. I LOVE to cook for other people…but I’m my harshest critic, so it often causes me anxiety, too. 🙂

    PS. Are you still using up TJs peanut flour or do you have another source?

      Where do you get yours? I found the Protein Plus brand online for what I think is decent price, but I’m curious to know if you’ve found a better deal! 😉 I couldn’t help but think of you when I was typing up this post…I can always tell how much love goes into the meals you make for all your boys! 🙂
