My New Favorite Oatmeal & Experimenting With Booze…I Mean Soup!

Hey guys!

Looks like I’m not the only one who got a little excited about the thought of Vegan Cheeseburger Dip! Let me know what you guys think of the recipe! Oh, and just FYI, after spending overnight in the fridge, the flavors seriously intensify!

Mmmm!

So, it’s that time of week again…

Happy What I Ate Wednesday!

Now, since this month is considered the LOVE month to many I thought it was appropriate that Jenn (our lovely host over at Peas & Crayons) has dubbed this month “Love Your Veggies Month” and has asked us linker-uppers to show our love for the veg through out WIAW posts each week!

But before I show you pics of the grub for the day (which is ALWAYS highly clad in veg), I have to show you guys my fruit and vegetable-free breakfast!

Yeah, you heard me…not a single color of the rainbow found it’s way into my breakfast bowl the other day…but I’m sure once you hear me say the words

PEANUT BUTTER S’MORES OATMEAL…

Yeah, I thought you’d understand! ;)

Who says you have can’t have s’mores in the middle of winter?

Who says you can’t make s’mores in your kitchen?

Who says you can’t eat s’mores for breakfast?

Not me!

Peanut Butter S’mores Oatmeal

  • 1 handful mini marshmallows
  • 1 Tablespoon mini chocolate chips

2. Transfer to an oven-safe bowl.

3. Stir in 1/4 cup peanut flour (or other protein powder of choice).

4. Top with marshmallows and chocolate chips and place under medium-high broil for about 1 minute or until marshmallows are browned.

5. For added chocolately goodness, stir up a little maple syrup spiked with cocoa powder and drizzle over the top of your bowl!

My glorious bowl of peanut-buttery s’more-sy (totally making that a word) goodness was enjoyed with a nice big mug coffee.

Let’s just say by the time breakfast was over, I had forgotten all about the 30 degree drop in temperatures we’ve been having lately.

A few hours later, I was off to the gym, but not before grabbing some perfectly juicy orange slices to eat on the way…

Am I the only one who gets a good zing from citrus fruit before a workout? I think it’s the perfect light pre-workout snack…just enough sugar to get you going and keep you energized for a good sweat sesh!

On my way home from the gym, with thoughts of the Boar’s Head turkey meat that I had picked just the day before, I knew EXACTLY what I wanted for lunch. I just needed ONE thing…

Yes, I needed an avocado half the size of my head! Can you believe it was only 20 cents more to get this thing over the teeny tiny ones??

Though I was practically drooling all over myself once I cracked this baby open (I’ve totally become obsessed with avocado lately), lunch came together in record time.

Spinach, sprouts, turkey, Godzilla-cado, and spicy mustard on toasted bread with a side of carrots.

Mmm, how’d you like to sink your teeth into THAT?

My afternoon snack was one of my favorites of the new Chobani flavors:

Eh, who am I kidding? I love ALL the new flavors! But this one just happened to match my Valentine’s Day themed manicure! :)

After about an hour of pinning everything from Chicken with Creamy Braised Leeks to Squash and Leek Lasagna (hmm, how’d you know I just bought leeks and had no idea how to use them??), I decided to just wing it and make a potato leek soup!

Into a pot went some leeks and potatoes, some seasoning, water, and vegetable broth
Oh wait, where the heck is the vegetable broth?!

Hmm, looks like I’ll just have to crack open a bottle of wine to use instead…

Um…yeah, about that glass…pure quality assurance testing…I swear! ;)

And just to prove that one can drink wine AND operate an emulsion blender:

Topped with sundried tomatoes and fresh parsley.

I thought it came out rather well for some one who had never even touched a leek before the other day, but I feel like I need to do a bit more quality assurance recipe testing before it’s blog ready. So, to be continued…

But wait, don’t let me fool you…dinner was not to it’s completion at this point.

Foodie must not live by soup alone!

She must have spinach, and carrots, and avocado, and heck, why not a perfectly grilled paprika-spiced chicken breast?

Now THAT’S what I call dinner!

I couldn’t help but get the biggest smile on my face when Susan saw this on Instagram and thought it was from a restaurant! Who says you can’t keep it classy when dining solo?

And this is what I’ve been calling dessert for the past 3 nights:

Strawberry Arctic Zero and banana…it’s no fro-yo, but it works in a pinch…and I don’t have to take my lactose pill! :)

Do you like to go all out for dinner sometimes even when you’re by yourself?

How did you spend your Valentine’s Day?
BB’s still out of town, but I did come home to a nice little surprise on my doorstep:

At the rate that I eat chocolate, I should be done with these by oh….
NEXT Valentine’s Day! ;)

  1. I wonder what would happen if someone said that another month was love month.
vegan cheeseburger dip? Where WAS I yesterday? *bookmarks said dip* I wonder if I have everything….aaaaaand as it happens, I bought nooch to do something with at some point. Could this be it? and I need dip….perfect combo.
also that breakfast bowl looks fabou. Seriously so many really smore-y flavours packed into a bowl. Loving your nail polish as well.
Try as I might, I cannot like avocado. It’s fine for my hair, just not for my tastebuds. What did you top your CHO with? It looks like….no idea.
I was going to ask you where on earth BB was, but I’m glad he’ll be coming home to you soon. Makes vday last longer than usual, doesn’t it? Excuses to celebrate!

    • kissmybroccoli says:

Oh Hannah, how I love coming home after a long day to read comments like yours! I’m pretty sure it was fate that you have all the ingredients for the dip! Let me know what you think about it…and FYI, after it sits in the fridge overnight, it’s even better!

You know, I was just wondering the other day what it is about the flavor of avocado that some people don’t like. To me it’s such a subtle taste on it’s on…my mind focusses more on the creamy buttery consistency, but I swear in a sandwich or with Mexican dishes, it just helps boost the flavors.

The Chobani is topped with my latest Big Lots score…puffed millet! Love those little puff balls…just don’t spill them…not like I have or anything, but I’m sure it induces a lot of nasty words flowing out of one’s mouth…but like I said, I wouldn’t know first hand or anything…just a guess! ;)

  2. I wish I was eating at your place yesterday! Dang that all looks so good! I’ve done smore’s oats, but peanut butter too…that sounds like a whole other level of deliciousness! Love the pink nails! I need some time to paint mine. It always makes me feel so girly.

  3. That oatmeal looks over the top amazing! I love how you even browned the marshmallows. That’s the only good way to eat them!

Also that’s such an impressive dinner. I like to go all out when I’m cooking for myself too. Who says we should only make our best meals when we have company? :P

  4. Jeri says:

I have been a reader for a pretty long time but this is actually my first comment! I just wanted to let you know that your pictures are some of my favorites in the blog world! I can’t say I know much about photography, but your pictures are always so clear and perfectly styled :)

    • kissmybroccoli says:

Thank you SOOOO much, Jeri! Believe me, I don’t have a clue what I’m doing half the time, but I love photography still! And it means so much to me to hear such kind words about my photos!

And, ahem, you know…now that you’ve “de-lurked,” I’m going to expect to see comments from you in the future! ;) Lol

  5. Leelu says:

Yay, another person that doesn’t consider soup a full meal :) I’m always baffled by people that can eat soup for lunch and be satisfied – I need crunch in my life :)

And your photos are gorgeous by the way :)

    • kissmybroccoli says:

Heck yeah! I have this thing…I HAVE to chew something during a meal or I won’t feel satisfied. That’s why when I make my smoothies, I always top them with cereal! Crunch is a MUST!

  6. PB&Jenny says:

awww, so precious that BB found a way to be “there” without actually being “there”. Chocolate is a pretty good stand in boyfriend, right? I bet if he’s reading this post he’s dying that he missed that meal. Yum!

  7. LOVE Arctic Zero and we are not even lactose haha. Thanks for that smore recipe it looks amazing and isn’t to difficult. That will go on our “to make” list for sure!

  8. Catherine says:

Hi! Just wanted to say that I love your blog and your fun loving attitude, its really contagious :)

and every single meal you had looks amazing (i will pay you to cook for me!!!)

i will be copying your avocado sandwich ASAP

    have an awesome day!!

    • kissmybroccoli says:

Aww, thank you Catherine! You just made my night! And oh what I wouldn’t give to be a live-in chef! Ahh, a girl can dream… ;)

  9. Um, I don’t know how you do it, but now I’m craving like 90% of the food in your post. That oatmeal? OMG, that looks amazing. I totally need to try that. I think my kids would freak right out if they got a bowl like that for a special treat :D And that sandwich. Sprouts, avocado, yum! That is an amazing avocado. I’ve been going crazy for them lately but all I can get here are the tiny ones and they aren’t exactly cheap. Except when they’re on sale like this week – so I stockpiled, haha. Avocados aren’t exactly good for stockpiling are they? Oh well, guess I’ll have to eat them all.

  10. Great looking eats! I’m really intrigued by the leek/white wine based soup.

  11. That soup looks amazing. Quality control is always necessary when it comes to wine. Anyone who doesn’t sample here and there is not my friend ;)

  12. Lizzi says:

Those oats! THOSE OATS!!!!!!! WOMAN, I MUST COME AND LIVE WITH YOU IMMEDIATELY. Our life would be nothing but oatmeal and Words With Friends battles with each other from two feet away (winner has to make loser more oats ;) )

  13. I love sprouts on sandwiches! They add a nice extra crunch and the creaminess of the avocado is a delicious sandwich. I spent V-Day with some yummy leftovers, a chick flick, and saved my decadent V-Day cupcake for tonight. Happy Hump Day!

  14. Alexia says:

your oatmeal looks like a beautiful dessert and the dinner like a restaurant pic! good job!

lucky you finding an avocado the sizeo f your head. wow, i have even seen one that big!
Somehow your blog entries have made me crave marmite like crazy. need to find a store that sells it here. u know europeans are usually not a big fan of it :)

  15. I am so very behind on your posts, oof!

It’s official. I’m moving in. I’m pretty low maintenance, but I do require access to these crazy awesome meals you make. ;)

    • kissmybroccoli says:

Hey, spare room’s open anytime! ;) And I was just chastising myself for falling so far behind in YOUR posts! I didn’t even know you were sick until I just saw something on FB when I logged onto my computer! Glad to hear you are starting to get your tastes back! I’ve been going through some of the same funk lately…being sick is the pits…especially when you still have to go to work! :(

  16. Oh hello delicious oatmeal creation… I need to make you ASAP :)

  17. Courtney says:

Your eats are ALL mouth-watering, seriously. There’s something so yummy and comforting about a bowl of soup and a big’ol salad. Looks delicious! Those oats, ’nuff said. You go girlll
