Happy Pancake Day!

To all my American peeps out there who may not have heard yet…

It’s Pancake Day over in the UK!
*pause to acknowledge my clever use of rhyming before 7am*

Also known as Shrove Tuesday…or the day before Lent.

Now, I’m fully aware that I don’t live in the UK, I’m not Catholic, and I JUST celebrated Pancake Sunday two days ago, but c’mon…you can’t expect me (The Pancake Queen) to turn down a chance to wake up early and make pancakes instead of going to the gym!

I may have beat off the crowds at the gym tonight when I get off work, but believe me…

It was worth it!

Pumpkin Peanut Flour Pancakes topped with leftover Cashew Cream Icing and thawed frozen raspberries!

And the “recipe” couldn’t be simpler:

1 serving just-add-water pancake mix…this one is my favorite!

1/4 cup peanut flour

1/4 cup pumpkin puree

sprinkle of pumpkin pie spice

Are you giving up anything for Lent?
Like I said, I’m not Catholic or anything, but I have given up things for Lent in the past just as kind of a test of my willpower. One year I gave up chocolate…that’s the year I found out cocoa is in red velvet cake! Lol

I’ll have to do some thinking today and decide if I’ll be doing it this year.

    This morning, I made oatmeal for breakfast because it totally slipped my mind that its PANCAKE DAY!! Ahhhh how dare I?? 😛 Sadly, I dont have all the ingredients to make pancakes today.. but I will be having pancakes someday this week. 😀

  5. i was raised catholic and i didn’t even know it was lent! i kind of fell out of the religion after i went to college. but i always do like to give something up, i’ll have to think quick!

  6. I was planning on pancakes today, but forgot I have to work late, so so pancakes for me. I will celebrate pancake day on Thursday. I know, I’m a little late to the party, but that’s all I can do. These look killer of course. I am a lapse Catholic and give up nothing for Lent. I know, I should be better…

  8. Pancake day is totally one of my favourite days of the year! I love pancakes loads, and any opportunity to eat them is good by me. I always opt for buckwheat pancakes on Shrove Tuesday, with a variety of toppings… but these peanut pumpkin ones do look rather tempting!

  10. YEAH pancake day!! Only funnily enough, british pancakes are more like crepes (don’t let my flat mates hear me telling you that)
    I treated myself to pancakes as well. Spelt ginger plum ones. Wow I think best yet!! Yours look fab though. cashew cream icing mmmmm
    lent? um….when does it begin? today? tomorrow? SHOOT.
    not catholic or religious. But as a religion major, perhaps I should give it a shot. I’ll give up nut butters.

      Spelt ginger plum?! Those sound incredible! Lent starts tomorrow and I STILL haven’t decided what to give up…coffee, chocolate, fro-yo *GAAAAASP* Lol
