Eating, Drinking, and BEING Green!

In honor of the last week of our green-themed Wednesdays, I thought I’d show you guys how some green managed to make it’s way into my meals yesterday.

I woke up yesterday morning with an INTENSE craving for French toast…so I whipped some up with the last of my whole wheat sourdough loaf, topped it with some overripe super sweet banana slices and drizzled on the syrup!

Although I seriously thought about mixing Incredible Greens into my syrup, I decided not to scare the crap out of you guys and opted for a glass instead alongside my mug of steamy hot [black] coffee…x 2!

and prepare to be amazed!

Lunch was actually focussed a bit more on the greens…I used my farmer’s market kale to make a massaged kale salad with carrots using the orange muscat vinegar I picked up at Trader Joe’s a couple of months ago. I also baked up a sweet potato while I dug into my French toast breakfast, and packed it along with some yogurt and granola for my “dessert.”

With my first bite of sweet potato (is it weird that I actually prefer them cold?), I was reminded how much I LOVE baked sweet potatoes…

I really need to make them more often.

Then I started taking little bites of everything until I had the idea to throw them all in the same bowl…yep, sounds weird, but I’m telling you, all those flavors together with the creamy sweet potato and yogurt, chew of the kale, and the crunch of the granola?

Absolute Heaven!

Ok, so technically I didn’t have a green vegetable for my snack, but my pistachios were green AND they were in my favorite reusable bag which is both green and GREEN!

And I’m sorry, but is that not the most beautiful apple you’ve ever seen?

Dinner was a quick throw together of ingredients 5 minutes after I walked in the door after work…gotta love those late night shifts!

I mashed up some white beans, stirred in some salsa and shredded cheddar, stuffed it in a tortilla and in 5 minutes I had a perfectly cheesy (and very messy) quesadilla!

For a little veggie action, I snacked on some [unpictured] cauliflower dipped in spicy mustard and steamed some asparagus to go with my ‘dilla…not sure why, but I love asparagus paired with Mexican-spiced food…such a great combo!

And as for my water count for the day, I surprised myself by drinking almost 4 LITERS!

Woo hoo!

All in all, a very delicious and GREEN day…just the way I like it!

  1. I just baked up a couple sweet potatoes to have on hand because I love them so much. Baked sweet potatoes are so much better than if you microwave them. I now have 3 baked sweet potatoes in the fridge waiting to be devoured!

  2. Your dinner looks delicious, and I love fast, too! I have some Amazing Greens in my fridge, I should do something with it!

  3. I love cold sweet potato too! I didn’t even discover it until this semester when I had to start packing dinners to take to campus with me for my Wednesday night class. I’m always too lazy to microwave them, so I just eat them cold. And that’s how I found out how amazing cold sweet potatoes are! 😀

    The last green thing I ate was spinach in my Mexican chicken salad last night!

      Haha! I swear I’ve discovered the best tasting things out of pure laziness! Raw okra? Yeah, I was seriously just too lazy/hungry to cook it…now I rarely ever eat it any other way. And cold leftover pizza will always have my heart!

      Mexican chicken salad…mmmmmm!

    the quesadilla thing is seriously SO clever! love that you got the protein in by adding the beans. And I’ve never tried kale raw before. I always blend it into smoothie or bake it into kale chips. I think I’m afraid it will take forever to chew!

      If you don’t massage your dressing into it first, the kale WILL take forever to chew…unfortunately, I learned that the heard way. My jaws were SO sore after I finished that salad! haha! Usually what I do now is massage a vinegar based dressing into the leaves and then allow it to sit for a couple hours or more in the fridge (if I make my lunch for work in the morning, it’s usually good to go by noon). Having that time to “marinate” helps the kale to soften up…still stays a little chewy, but you won’t have to see a dentist about TMJ later! 😉

    I love my sweet potatoes cold too!!! I made sweet potato and apple hash last night but saved it for this morning because I like it cold so much more 🙂 and french toast out of sour dough bread sounds amazing.

    Last green food I ate was broccoli!

  6. wow. my homemade quesadillas do NOT look that amazing! i’m impressed.

    i’ve been obsessed with making dehydrated sweet potato chips lately. i can’t get enough of them!

      Mmmm, that sounds amazing! Do you have a dehydrator or do you use a low oven temp? I’ve never tried making my own chips before.

      And believe me, I got the “pretty” angle on that ‘dilla…you should have seen the underside! Haha!

  7. I’m not generally a big french toast fan, but I had some when I was at the VA bloggers brunch a couple of weeks ago and it was SO good! It was a raisin spelt bread, and it was deeeeelish!

      Oh yes! Cinnamon raisin bread makes the BEST French toast…I swear once you have it, it’s hard to use any other kind of bread!

      Me too, though it’s been like forever since I’ve had any…I got a little carried away on my last veggie run at the warehouse store and bought mixed greens, carrots, mushrooms, broccoli, AND brussels. Unfortunately, the brussels were sacrificed for the good of the others…hate wasting food! 🙁 And I STILL want some! Haha

  9. Looks awesome! I’ve been craving french toast like a mad person, and seeing yours is probably something along the lines of telling me I should do it. Or at least that’s what I’m rolling with.
