Kale, Sprinkles, and Celebrity Look-Alikes

Hey guys!

I am so excited to see how many of you have jumped on the Incredible Greens coupon and grabbed up a container so you can greenify your own eats…just so everyone knows, Jonathan is willing to let the coupon run for a week, but if anyone needs longer, just shoot me a quick email (kissmybroccoli [at] gmail [dot] com) and maybe we can work something out.

It’s been a little while since I’ve done one of my “Thursday Things” posts and since there’s definitely been some THINGS I’ve been loving this week, I thought it only made sense (and helped with alliteration purposes) to share them with you today!

Remember my lunch from my WIAW post?

Well, how about I’ve eaten the same exact thing for lunch for the past three days and have not regretted it ONE bit?

On Wednesday, I decided throw a few extras into my massaged kale salad…I kept the orange muscat vinegar as my “dressing” and the carrots, but added dried cranberries and candied ginger!

And today, I swapped out the candied ginger for ground ginger whisked into the vinegar and added a few orange segments.

I cannot get enough of this salad lately and paired with a cold baked sweet potato covered in Greek yogurt and granola? Who could blame me for repeating the same meal 3 days in a row?

Especially when it’s THIS granola!

Yep, when I was rearranging my pantry last weekend, I totally found an UNOPENED bag of my favorite Love Grown granola…I may or may not have felt like I won the lottery andΒ did a little happy dance. πŸ˜‰

Another thing worth happy dancing about?

Greek yogurt dessert!

Who says your yogurt has to be FROZEN to top it in shredded coconut, cookie crumbs, sprinkles…

And maybe a little Stevia-sweetened cocoa drizzle?

Better yet, you says you can’t have it for BREAKFAST?

Because that’s exactly what I did this morning! πŸ™‚

What else did I do this morning?

Totally failed at getting up early and getting to the gym…but I DID manage to get in 2 more chapters of The Hunger Games before work!

Yep, I totally caved…and I’m so glad I did!

I’m hoping I can finish it by tomorrow so maybe BB and I can catch a matinee over the weekend!

Anther highlight to my day?

Being told by a patient that I resemble Heather Graham!

I’ll take that compliment any day!

    You salad is almost identical to mine lately! Mixed lettuce/whatever greens I have on hand, candied ginger, carrot, dried cranberries and dried mango! But usually with a VERY healthy dose of hazelnuts, brazil nuts and pecans πŸ˜‰

    I haven’t yet read/seen The Hunger Games… but will hopefully get around to doing both!

    I’ve never got any celebrity comparisons… except my boyfriend sometimes says I remind him of Jenny McCarthy… “because you both smile like sharks, and if you had boobs, you’d totally be a Playboy model”.

  3. That’s it! I always thought you looked like someone and I could never place my finger on it haha. You definitely look like Heather Graham! I don’t think I’ve ever been told I look like a celebrity before…

    Also that breakfast looks amazing. Anything covered in Oreo bits = win!

    hmm, I can see Heather Graham but I’ve always thought you look IDENTICAL to Kate Winslet!

      Thanks doll! I’ve gotten that a few times too! I think it depends on the lighting and my hair…I’ve also been told I look like Uma Thurman, but I think it’s mainly just in the summer when my hair gets lighter and more blonde looking.

    the other day, though, i got sandra bullock. totally caught me off guard. not sure where she got that from.. must have been the dark hair!

  7. I can totally see the heather graham! And thanks to the scrubs, you remind me of Molly Clock (Scrubs anyone?!) haha she was always my favorite character.

    I totally agree that yogurt doesn’t have to be frozen in order to top it with deliciousness πŸ˜‰

  8. Dang that breakfast looks amazing! Love it when you can sneak in the sweet treats with the healthy eats.

    We are going to see Hunger Games this next week while the boys are on Spring Break.

    Your yogurt dessert looks amazing!! How do you make your cocoa drizzle? They just opened up not 1 but 2 fro yo places near us in Nashville. I imagine they will be my summertime down fall =)

      Haha, I know what you mean…I can never resist Sweet Cece’s whenever I’m in Nashville. It’s probably a good thing that the froyo places here in town aren’t as good otherwise, I’d be totally broke!

      The cocoa drizzle was just 1 tablespoon of cocoa powder, a couple drops of liquid Stevia, and enough almond milk to thin…it’s a great alternative to sugar laden syrups and I actually prefer the taste since it has more of that cocoa “punch”!

  11. Oh my gawwd, that is the best thing I’ve ever seen happen to yogurt. I need to top mine with cookies, stat.
    && The Hunger Games..I caved too! I’ve been reading them on my iPad, and Suzanne Collins wrote ALL the ends of the chapters as clif hangers! Very annoying, as I can’t seem to put the book down until I finish it.

    Did you just use the orange vinegar as the dressing? or something else too? because I tried making your exact lunch, lol, it looked soooo good! and the sp and yogurt turned out fabulous but the kale wasn’t my favorite. Maybe I didn’t marinade it long enough?
