Portobello Bean Burger…It’s What’s for Dinner!

As promised, I have a DELICIOUS recipe to share with you today, but FIRST…

We’ve got some partying to do!

That’s right, it’s already time for another What I Ate Wednesday…AND the perfect time to check in on those good habits that we’re “falling” into! Be sure to head on over to

I’ve had a can of pumpkin burning a hole in my pantry for weeks now, so when I got off work the other morning and the weather was cool and crisp, I KNEW it was time to break it out. Still, I just wasn’t feeling a big bowl of oats…so I made something a little different!

Although not very photogenic, I assure you my pumpkin omelet stuffed with cottage cheese and topped with warm raspberry sauce and granola was EVERY bit of the fall-flavored deliciousness that I thought it would be!

Lunch was supposed to be Laura’s Lemon Thyme Salmon cakes, only we had some problesm…

But they didn’t stay that way for long!

If necessity is the mother of invention then ricotta cheese and Edamame Spinach Pesto are the parents of this beautiful love child!

I literally sighed after the first bite of this! I thought I’d try to make the cakes again tomorrow, but after tasting this, I’m not so sure! πŸ˜‰

Since I’ve been trying to reach for veggies more when it comes to snacks, I picked up a package of organic celery hearts at the store the other day…

And then the dip-aholic in me was unleashed!

I know, I have problems…

But getting my veggies in ain’t one of them! πŸ˜‰

Now, what you’ve all been waiting for…

DINNER!

After spotting these beauties on Pinterest the other day, the wheels got to turning…I’ve been craving a good bean burger for a while now, and how could I resist one with the meaty flavor of portobellos?

Obviously I can’t follow a recipe to save my life (see salmon “crumblies”) so I got to work on something of my own…

Portobello Black Bean Burger

Prep Time: 10 minutes

Cook Time: 12 minutes

Ingredients (Serves 2)

  • 1 large portobello mushroom, stemmed and chopped
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup diced onion
  • 1 Tablespoon dijon mustard
  • 1 Tablespoon ground flax
  • 1/3 cup whole wheat bread crumbs
  • 1/2 teaspoon of your favorite salt-free seasoning
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon pepper

Instructions

Preheat oven to 350 and line a baking sheet with parchment paper.

In a food processor, combine all ingredients and process until well combined.

Transfer mixture to a bowl and form into 2 medium-sized “burger” patties.

Bake for 10-12 minutes or until patties start to crisp.

And I have to say it was pretty darn delicious!

And…if I could go so far?

Just as good, if not BETTER than a meat version!

    Sorry the cakes crumbled… but it looks like you managed pretty well. I’m going to make mine crumble next time so I can copy you. Also, I want key lime-ginger mustard!

  5. Ooh that pumpkin omelet looks interesting! Was it made with just pumpkin and eggs?

    And of course that burger looks amazing! I love a good black bean burger. I’ve never experimented with putting mushrooms in my burgers though, even though I’ve seen lots of recipes that do it. That’s something I definitely need to try. I love how mushrooms can give such a hearty flavour to meatless dishes!

      Yep yep! But it was NOT at all easy to work with…I think I might play around with the stove top temp a bit and see if that helps.

      This was my first bean and mushroom burger and I can’t believe it took me this long to try it! I LOVE the meaty flavor of portobellos alone, but with the black beans, it’s even more amazing!

  8. Those burgers sound so interesting. My dad keeps on mentioning that he wants me to make him one of those grilled portobello steaks, but that’s just too easy. I think I’ll make him this instead!

      Thank you Lori! And yes, I am DEFINITELY a fan of smoked paprika…can’t believe I went so long not knowing it existed! Love that robust flavor!

    I can’t follow recipes worth anything, either. And yet it doesn’t mean the results aren’t tasty! Gorgeous burgers–I love bean + mushroom ones, I find they are the most “meaty” and usually get the best reviews from meat-eaters.

    All those dips look finger-licking delicious–though maybe not in the case of the peanuts, as those may be hard to swipe up with a single finger;D I have never tasted pumpkin butter before (at least, not that I can recall), so I will have to either buy or make some soon to celebrate pumpkin season!! And that burger recipe looks delicious as well; I can imagine that it would be fun to make about a zillion variations on it:) That’s what I love about veggie burger recipes–they are so easy to customize.

      Well…we COULD make a savory nut butter out of the peanuts and THEN it would be finger-licking delicious! πŸ˜‰

      Oh my gosh, pumpkin butter is amazing…and highly addictive! I’ve only had my jar open for a few days and it’s already half empty! Lol

      And I agree, I love coming up with new flavor/spice combos for burgers and such! Never a boring food in MY house! πŸ˜€

      Haha! I do get overwhelmed sometimes! Then I just have to “hide” all the extras and focus on one thing at a time…but you better believe I finish them all! Good to the last drop…or crumb! πŸ˜€

        Yes, it came in my Love with Food box one month. I eat it with celery like you, mostly because I don’t want anything messing with the flavor haha. It’s only a tiny jar, so I’m going to have to start browsing stores and online. Though I heard a rumor that Trader Joe’s got the sweet & hot mustard back, which is a priority since I’m a mustard addict and haven’t tried it yet.

          Nice! I found mine while I was shopping online for sodium-free baking soda…http://healthyheartmarket.com/eastshorekeylime.aspx but yeah, I just heard TJ’s got the hot & sweet back in and it’s one of my absolute favorites. Wanna hear something funny? I JUST finished snacking on some of the hot & sweet with portobello strips! I cracked open my last jar I’ve been hoarding last week and it’s almost gone! Ahhhh! I’ll definitely be sure to stock up on it the next time I make a trip…I didn’t even realize it was a seasonal thing until recently!

      Just the burger, but I did score on some 80 calorie buns that actually have a little “oomph” to them…just means MORE room for toppingsssssss! πŸ˜‰
