“Fall” into Deliciousness

Hello my lovelies!

I want to thank you SO much for all the sweet comments on yesterday’s figgy recipe AND the pictures…I’ve been doing my best to amp up my photography skills and it really means a lot when you guys take notice! πŸ˜€

So it’s already that special time of week…time for us foodies to pull out our most drool-worthy eats!

Yep, it’s time for What I Ate Wednesday!

When I woke up Monday, I knew EXACTLY what I wanted for breakfast…

Β I took my own suggestion and crumbled a warm Coconut Fig Muffin over a bowl of plain Greek yogurt, topped it with a fresh fig and a sprinkle of shredded coconut for good measure.

Warm muffin + cold yogurt = HEAVEN!

I also had my morning ACV cocktail…only after some experiments over the last few days, I’ve temporarily ditched the aminos (the brand I have just doesn’t mix well) and decided it’s best served warm!

1 scoop matcha green tea powder, 1 tablespoon apple cider vinegar, and 5 drops lemon stevia in 10 ounces hot water

I’m thinking this is going to keep me nice and warm this winter!Β 

As for lunch, I’ve been eating the same thing for the last few days now and it has yet to get old…

Beef & Veggie Taco Salad!

Over the weekend, between baking disasters adventures, I actually had enough time to do a little meal prep so I made a big batch of my beef & veggie tacos but instead of wasting time with tortillas, I just crumbled up some of my Popchips stash and made one HUGE taco salad!

I’m sorry, but it deserves one more look…it was THAT good!

Is it sad that I’m already looking forward to lunch tomorrow just so I can have it again?

Snackage throughout the day:

Baby carrots and tomato basil string cheese (DELICIOUS combo I’m telling you), a perfectly crisp sweet/tart apple from my local farmer’s market, and a muffin from my last batch of “test muffins” before I added the figs.

It’s actually pretty tasty…
Who knows, this non-baker may just have another muffin recipe coming your way soon! πŸ˜€

Oh…and I can’t forget to mention THIS:

Any other Luna Fiber Bar lovers out there? Well I just want you to know that you
HAVE NOT LIVED until you’ve tried it nuked in the microwave for about 15 seconds!

Omg, soooooooo flippin’ good!

And it did just the trick to tide me over until I was able to get home and make my DELICIOUS breakfast…

Remember last week’s pumpkin omelette attempt?

Well, as of this morning, we have SUCCESS!

Warm, spicy and FULL of fall flavor, this is definitely one breakfast that I will be repeating!

Pumpkin Spice Omelette with Sweet Ricotta Filling

Prep Time: 3 minutes

Cook Time: 7-8 minutes

Keywords: fry breakfast gluten-free low-carb high protein eggs pumpkin fall

Ingredients (Serves 1)

  • 1 whole egg
  • 2 egg whites
  • 1/4 cup canned pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/8 teaspoon pralines and cream extract (optional)*
  • 1/4 cup low fat ricotta (or cottage cheese) mixed with your preference of sweetener (I went with stevia)
*I purchase CapellaΒ flavor drops/extracts from netrition.com and I HIGHLY recommend them!

Instructions

1. Heat a non-stick skillet over medium heat and coat with cooking spray.
2. In a small bowl, combine all ingredients (except ricotta) and whisk well.
3. Pour contents into warm skillet.
4. Allow to set for about 30 seconds before slowly swirling your skillet around until the egg mixture coats the edges of the pan (this is what will help you later with flipping).
5. Cook for 5-6 minutes or until edges start to pull away from the skillet.
6. Spread ricotta onto one half of the omelette and then using your spatula, carefully flip the other side over to cover it.
7. Allow to cook for about 2 more minutes (just enough to warm the inside) and then slide from skillet onto plate.
8. Top as desired.

It looks like a lot of steps, but honestly it came together in NO time…omelette making can be tricky so pay attention to step #4! πŸ˜€

      Oh yeah, cottage cheese would work just fine! That’s actually what I stuffed my first one with last week!

      And funny, because I often think the same thing about you…I just can’t eat enough meals during the day to keep up with all your deliciousness! πŸ˜‰

    I’ve never thought of eggs and pumpkin going together, but that’s something I’ll have to try…

    I love to heat up a rice cake with peanut butter and honey on top. It gets all melty and drippy and tastes absolutely DIVINE. (weird..I’ve never used that word before!)

  4. Yep, pretty sure a pumpkin omelette will be in my belly in the near future. I have your awesome recipe to thank for that, so, thanks!!

    I forgot about nuking things like pop-tarts; so good! I won’t touch the packaged stuff now, but I did the same thing with rice krispy treats to make them soft and gooey with delight. I could and would do this with almost an entire box as a kid. I may or may not have been a fat boy growing…..your call!

      Haha! Funny how much our diets can change over the years, huh? I wouldn’t even think of eating pop-tarts (or practically any of the processed foods I used to eat) now…unless someone gave it to me…how could I possibly turn down a FREE pop-tart?! πŸ˜‰

      I’d love to know what you think of the omelette! It’s definitely going to be in regular breakfast rotation for me this season!

      • Ha ha, I’m an ingredient nazi and once I know what has enriched flour, HFCS, and the like, I just can’t enjoy things anymore. It sucks, but I guess it’s a good thing too. Cache-22?

        Just wanted to update you. I am sitting down with my wife and we both just enjoyed some awesome pumpkin omelettes! I didn’t use ricotta or any filling, just pumpkin and egg whites with lots of cinnamon, ginger, nutmeg, and clove. Thanks for the idea, I’ll be posting about this soon!

          And I’m the SAME way! Sometimes I wish I could just lead a life of ignorance, but I can’t help it…every time I pick up a new product, I immediately flip it over to see the label!

    Mmmm warm chocolate chip cookies with a tall glass of almond milk, in my mind you can’t beat it!
    Today the yummiest thing I ate was a sundried tomato, spinach pesto I made tossed with chicken and brown rice pasta.

      Oh yes, HOW could anyone deny a perfect fresh-outta-the-oven chocolate chip cookie? And I’m totally a dunker…or sometimes I’ll just crumble the whole thing up, throw it in the glass of milk and eat it with a spoon! YUM!

      And speaking of yum, that pasta dish sounds amazing! Love the flavor of sun-dried tomatoes! πŸ˜€

  6. I adore figs! I have to go for the dark ones, because the green ones look unripe, and, psychologically, I can’t stomach them. I used to love getting taco salad in junior high. We had a little taco bar where you could load up on things like sour cream, beef, and cheese. You pics make me want to healthfully recreate it! πŸ™‚

      The last time I went to Whole Foods, I was able to get a variety pack of each of the fig varieties they had and honestly, I didn’t really taste much from the green ones. I think the darker ones (Black Mission) have the most flavor on their own…which you know, is still kind of mellow. I gotta have my cinnamon to spice em up a bit! πŸ˜€

      We had a taco bar too, but my favorite was when they’d run out of tortilla chips and sub in Fritos! #iwassohealthyasakid Lol

  9. Ahhh, love love LOVE your breakfast! That’s what I like to call a muffin mess – and hot damn are they good! It’s like all the best breakfast components in one!

    Your second breakfast here is another lot of awesome!

    The best thing I’ve eaten today would have to be coconut banana muffins – I was worried they wouldn’t be blog-able, but they are so much more than that!

  18. I’m loving all the figgy love in this post! And that pumpkin omelette looks so good!

    The best thing I ate yesterday was an open faced baguette sandwich with pesto, local tomatoes, soft pecorino fresco cheese, and basil. I was so sad when I was done eating it haha.

  19. That luna fiber bar looks awesome! It makes me reminiscent of my childhood favorite: strawberry nutrigrain bars. So goooood.

    My favorite (and only) thing I have had so far today was microwave protein banana bread.

    Best thing warmed up as a child… Oh, I know! I used to take a pre-packaged rice krispie treat, put it on a plate, then top it with a whole bunch of chocolate chips. Microwave for a few seconds and BAM. Awesome-ness.

      I’ve recently become addicted to thinly sliced apples with cinnamon…WHY have I not tried popping them in the microwave yet?! This is so happening soon!

  26. Okay so… ALL of your meals basically put my best eats to shame! How on earth do you manage to come up with some of the most amazing things? Pumpkin spice omelette? Uhm… hell yes? Make way for Ms. Culinary Genius over here πŸ˜› Soooo how about I just share one of the best eats from my time down in Cali instead? I had the most amaaaaazing BBQ chicken flatbread pizza with caramelized onions and BBQ sauce. Omigosh I get weak in the knees just thinking about it. I think I definitely need to go on vacation again in the very near future… And Poptarts… mmm. Talk about a serious love affair. My favorite were the s’mores kind, which were absolutely amazing all warmed up.

  28. the warm muffin cold yogurt thing is the best. I get this giant carrot raisin muffin/cookie thing at the market on saturday mornings – pick up some full fat farm fresh yogurt and eat it that same way when I get home. It is my favorite!!

      Oh you HAVE to try them! My favorite is the peanut butter and strawberry…tastes just like PB&J! The only thing is, I wish they were a little bigger…or maybe my mouth needs to be smaller! πŸ˜‰

      I found the matcha powder just a couple of weeks ago on http://www.netrition.com. That’s actually where I buy most all of my supplements…great prices AND flat rate shipping for the win!
