When I saw this survey on Laura’s post yesterday, I couldn’t help myself…

BREAKFAST
1. Favorite cereal as a child?

Hands down, I was seduced by the Leprechaun
Anyone else try to pick up the marshmallows with the back of your spoon?

2. Coffee or Tea? With milk or without?

This is so weird for me to say…coming from a former coffee addict, but nowadays, I’ve actually found myself craving tea more and more, but you can forget the milk…just hand me some cinnamon!

3. The one food you eat most often at breakfast?

Although lately I’ve been practically LIVING off Pumpkin Cakes,

You guys know…there’s no giving up my pancakes on Sunday!

LUNCH
1. Sandwiches are generally considered a “lunch food.” If you had to choose between a grilled cheese and a peanut butter and jelly, which would you pick?

Peanut Butter & Jelly!!
…preferably with a little BBQ tofu thrown in there! 😉

2. You can only put four ingredients in your salad (not including greens); what do you throw in the mix? Additionally, which greens and dressing do you pick?

Since I missed the farmer’s market last weekend, my produce stash has been getting pretty low, but I whipped up a salad yesterday that was simple, delicious, and coincidentally only had 4 ingredients:

Golden beets, cucumber, pickled peppers, and hemp seeds!

On a bed of mixed baby greens (spinach is my favorite, but I like to mix it up) and drizzled with a bit of plain balsamic vinegar…the tanginess mixed with the sweet of the beets and peppers was AMAZING!

3. One food you can’t live without at lunch?

I’m really not a creature of habit, but I’ll admit I get into “food fascinations” quite easily…

Over the past FOUR days I’ve eaten a different variation of the same thing…

DINNER
1.
 It’s the end of the day. You’re tired, hungry, and your fridge is empty.  If fast food (from a chain) is your only option, where do you go and what do you order?

2. TV/computer on or off while you’re eating?

Computer…on…always…I’m actually just finishing up my lunch now! 😉

3. The one food you eat most often at dinner?

Again, not really a creature of habit, but I do pack a lot of salads for work…quick and easy, but NEVER the same!

DESSERT
1. Choose between these two American desserts: cheesecake or apple pie?

Cheesecake…sorry, never really been a big fan of apple pie…though apple COOKIES are a completely different subject entirely!

2. Choose between these two foreign desserts: tiramisu (Italy) or flan (Spain)?

Ugh, I HATE flan…all it is is sugar and eggs…basically the Spanish version of a chess pie…you can keep it…but I’ll take that Tiramisu off your hands! 😉

3. Ice cream: cone or cup?

Cup…Duh!
How else am I supposed to cram all my colorful toppings in?! Funny, you’d think my favorite cereal was Fruitty Pebbles! 😉

Cake Talk

Wow!

I am absolutely BLOWN AWAY by all the comments on yesterday’s Pumpkin Cake! You guys are the best!

But I’m telling you, I may just have a hard time making pancakes this coming
Pancake Sunday because for the last three days, all I’ve wanted is this cake!

Original, Chocolate Peanut Butter, and Vanilla

For the chocolate version I made yesterday, I just added in a 1/2 tablespoon cocoa powder and a few chocolate chips into the batter. The vanilla one I made this morning subbing in 1 scoop of vanilla protein powder (30g) plus 1 tablespoon of coconut flour. It came out a bit more crumbly in texture (next time, I’ll omit the milk from the recipe) but it was definitely JUST as delicious as the others!

But I wasn’t the only one swooning over my breakfast this morning…

Both Allie and Rebekah (my number one fan and loyal blog reader) couldn’t wait to get in on the pumpkin cake action either!

Honestly, I STILL can’t get over how well the first one came out on the FIRST try. I was listening to one of my favorite talk shows on the radio while I was driving home from work and they started talking about muffins with streusel topping (which the guy kept referring to as “crumblies”…not to be confused with Sarah’s patented crumblies, but still delicious!)

Anywho, next thing I know they’re talking about fall…and fall treats…and pumpkin pie…and how omg, wouldn’t it be incredible to have pumpkin pie topped with crumblies?!

Get on that Sarah! 😉

Microwave cakes can be difficult…all it takes is one missing ingredient and you end up gnawing on something that much more resembles a rubber tire or sponge than a cake or muffin.

It wasn’t until recently, that a few ladies helped me see otherwise:

Made with Vega’s Vanilla Chai protein powder and topped with fresh figs, cinnamon…

And drizzled with raw honey!

Seriously guys, AFTER you make my pumpkin cake, you really should try this! 😉

And in case you’re wondering, I use of peanut flour (and I purchase it from that website)…yes, it’s worth it…don’t even bother asking! Peanut flour has been one of my TOP kitchen staples for almost two years now! Endless possibilities!

What I’ve Been Craving Wednesday

Hey guys!

I LOVED reading through all the comments on yesterday’s post. I’m so glad to hear that most of you do your best to listen to your body and give in to true cravings, but it’s also nice to know I’m not the only one who gets a little confused sometimes.

In an effort to be more in tune with my body, I’ve been doing my best to take notice of my cravings over the last couple of days…and they’ve led me into some pretty delicious AND filling eats! 🙂

So just in time for this week’s edition of What I Ate Wednesday, here’s a look into what I’ve been craving AND eating over the last few days…

Now onto those cravings!

Lately, it’s gotten a bit chilly in the mornings. I couldn’t believe it when I left the hospital the other day and could see my BREATH! Needless to say, all I’ve wanted on these particular mornings is something warm and comforting…

Like big bowls of creamy PEANUT BUTTERY oat bran!

I stirred some peanut flour into this bowl and THEN topped it with a spoonful of peanut butter for double the nutty fun and I also added a bit of FROG jam!

By the way, check out Sarah’s homemade version of my beloved FROG…I’m trying that out just as soon as I finish my jar! 😉

And perfectly poached eggs!

When Laura posted her tried and true method for the poaching eggs, I couldn’t help but give it a try…

It doesn’t get any easier! Just put a tablespoon of vinegar in the water and boil like usual, reduce the heat to simmer, drop in your egg, and in 2-3 minutes you get this:

#yolkporn at it’s finest!

And I have to say this was one amazing breakfast!

Mashed chickpeas, roasted eggplant, this sun-dried tomato spread, basil, and of course our lovely star of the show…I swear I may never fry an egg again!

But come afternoon, once the temperatures rise, the craving strikes for something cool and refreshing…

Like SUPER thick and creamy smoothies!

This one had a bit of everything in it…mixed baby greens, mangoes, avocado, ginger…it was kind of a “clean out the fridge” smoothie! 😉

And if you’ve never added avocado to your smoothie, you just haven’t LIVED! It brings on a WHOLE new level of creaminess! 😀

And even BIGGER veggie-packed salads!

This one had romaine, chick peas, red bell pepper, roasted eggplant, olives, and some tomato basil mozzarella. I topped it with the same sun-dried tomato spread as I did the eggs and it was PHENOMENAL!

Seriously, one of the best salads I’ve ever made!

Yet even with the deliciousness of unseasonal eats, fall is now upon us, and there is no denying those cravings that come with the changing of the leaves…

I’m sorry, but I just can’t seem to get enough pumpkin!

Whether it be adding it to big bowls of yogurt with crunchy granola and crack nuts

Or in sippable form, giving me that little pick-me-up midway through a shift.

But the one that tops them all?

The one I think you guys will be most excited about?

This morning’s breakfast:

How about a nice slice of pumpkin cake for breakfast?

Or better yet, how about a WHOLE pumpkin cake for breakfast?

And guess what…it’s ready to eat in 3 minutes or less!

Peanut Butter Pumpkin Cake for One

Prep Time: 5 minutes

Cook Time: 2-3 minutes

Ingredients (Serves 1)

  • 1/4 cup peanut flour
  • 1/4 teaspoon sodium-free baking powder
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 cup pumpkin puree
  • 1 egg white
  • 1 tablespoon applesauce
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • 5-7 drops liquid stevia or other preferred sweetener

Instructions

1. Combine all ingredients. Stir well.
2. Coat a microwave-safe dish with coconut oil or cooking spray.
3. Transfer batter to dish and microwave on high for 2-3 minutes.
4. Serve drizzled with healthy chocolate saucechopped nuts, and/or anything else your heart desires! 😉
