Cookies ‘n Cream Pancakes

Prep Time: 10-15 minutes

Cook Time: 10 minutes

Ingredients (Serves 2)

  • 1 cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 2/3 cup milk (I used unsweetened almond milk)
  • 4 Oreo cookies, coarsely chopped
  • 1/2 tablespoon sprinkles (optional)

Instructions

1. Preheat skillet or griddle to medium heat and coat with coconut oil or cooking spray.
2. In a medium-sized bowl, mix flour, baking powder, and salt.
3. In a separate bowl, add egg and whisk until it starts to get frothy (about 2 minutes).
4. Stir together egg, coconut oil, applesauce*, vanilla, and milk.
5. Add wet ingredients to dry ingredients and stir until just combined.
6. Fold in chopped Oreos and, if using, add sprinkles.

*I substituted the applesauce in for half the oil to decrease the fat in the base recipe since I was adding in the cookies. Feel free to omit applesauce and use 2 tablespoons of oil instead if preferred.

It took every bit of restraint in me not to shove a fist-full of cookies in my mouth while preparing these babies!

I was pleasantly surprised that the decrease in oil did end up drying out the pancakes…they were just as…ahem, humid? on the inside as any of my other pancake recipes!

As for the “icing” I simply mixed some coconut flour with almond milk until I got the desired consistency…wait to make until just before serving since it will thicken up the more it sits.

Grocery Haul & Ninja Cookies

So I promised you guys some deets on the Trader Joe’s run from last weekend.

Well, I did a little shopping today too so I thought I’d just round everything up for one big grocery haul fiasco post!

Last weekend, I convinced BB that we absolutely positively HAD to go to Trader Joe’s…I lured him in with fro-yo

We both got cake batter and pistachio swirl and his looked like mine only without as much color….sprinkle hater!

Then it was off to TJ’s!!

I know, I know…WHAT was I thinking with those spreads? I’ve still got another 3 WEEKS until Easter!

And that is why they are buried in the deep dark depths of my pantry…but I swear they’re taunting me! 😉

Oh and that kalamata hummus is my new FAVORITE!! I’ve had to pace myself so as not to eat the entire container in one sitting.

In the not so sparkly (haha, get it…sprinkles?) natural food shopping, I hit up the local warehouse store to replenish my veggie bulk stash…

1 pound of greens, 3 pounds each of broccoli and carrots, 5 pounds of oranges, 24oz mushrooms and whole wheat English muffs x 2 (I’ve seriously been craving these lately…can’t wait to whip up some sort of drippy yolk sandwich!)

Then there was the other stop for the day…

I will have you guys know, I went into Food Lion JUST for the Chobani sale (yeah right…we all know my track record with keeping focussed in a grocery store) when out of nowhere, I was blindsighted!

I’m talking serious jujitsu pulled on me in the middle of the dairy aisle…

Marie’s all natural yogurt dressing, organic romaine x 2 (on sale for 99 cents yo!), my beloved Chobanis (2 for $2), cage-free eggs, green grapes, and…

BIRTHDAY CAKE OREOS?!

C’mon, I just couldn’t resist after being taunted with them for weeks on commercials, food blogs, AND Instagram!

I had a pretty tough week at work and Monday I actually went to THREE different stores looking for them, but couldn’t find them anywhere.

One whiff of the inside of the bag after opening and I swear my eyes rolled back into my head.

Then just when I thought my senses were overloaded with the sight of SPRINKLES,

I took a bite…

And then I passed out in the kitchen floor!

Ok, not really but seriously I believe it was fate for me to discover this cake cookie HEAVEN!

I had a very long and stressful week, so other than a housewarming party for a friend tomorrow, BB and I are just chillaxing around the casa!

New Breakfast Pizza & Green Eats

Hey loves!

I hope you all are having a great week so far…sorry I went a little MIA on you guys. BB and I had a busy yet FUN weekend and well, I guess it took me a couple of days to recover! Lol

So, it’s already that time of week again…time to bring out our very best foodie photos and inspire others to get in the kitchen and create drool-worthy food of their own!

And our lovely Jenn just came up with a new theme for the month of March…

I am MORE than excited for this month’s weekly parties…

Not only because green is my favorite color, my signature veggie is a broccoli, and I’m part Irish, but because including more greens into your diet is incredibly easy and so much fun once you get to experimenting.

I can’t wait to see what everyone comes up with!

Ok, enough rambling, how about we get to the goods?

After I got home from the gym yesterday (day 23 of the LiveFit trainer…woo hoo!), I was craving protein in a major way and what better way to get a good dose of healthy protein but to whip up a Breakfast “Dessert” Pizza?!

This time I used cream cheese as the base instead of peanut butter (for obvious Lenty reasons) and swiped on a bit of pumpkin butter before adding some banana slices, dried cranberries, and coconut.

I swear it was even BETTER than the original version!

For lunch, I had a salad of spinach, mushrooms, and carrots and topped it off with a big ol’ spoonful of salsa.

But that’s not all I had…

I’ve been on a bit of a hot dog kick since I picked up these chicken ones again from Trader Joe’s over the weekend (grocery post soon to come).

Yesterday I remembered to pack some bread in my lunchbox…the day before, I sorta forgot and had to get resourceful…

Enter leftover taco shells from our Mexican themed potluck a few months ago!
(don’t worry, they were still sealed…I’m not THAT desperate)

I have to say, the “taco” dogs weren’t bad, but there’s nothing like sinking your teeth into soft fluffy bread.

Mmm, carbs!!

Snacks throughout the day included some of my favorites:

Honeycrisp apple, individual Smart Pop popcorn, and my latest Luna bar steal…I got 6 of these babies marked down for 49 CENTS!

I’m working my late shift this week, so by the time I got home around 7:45pm, all I wanted was dinner in my face in 15 minutes or less.

It took 17 minutes.

Another TJ’s find: Pesto-marinated chicken breast, sweet potato topped with avocado and steamed broccoli

Think I could’ve gotten any more green on that plate?
