Flashback Friday: Gone Fishin’

Happy Friday Boos!

I hope you all had a good week. Any exciting plans for the weekend?

BB and I are meeting some friends of mine in Nashville for some pizza and pottery painting on Sunday. Sound familiar? Now I just have to decide if I want to paint a bowl or a plate to match my KMB mug! 😉

So, I already told you guys about mine and BB’s sa-here-reiously lazy Sunday, but I thought I’d do a fun flashback post to show you guys what happened the next day!

Time for a roadtrip!

But first, how about a little glimpse of the food that fueled our trip?

I broke out my latest Christmas present to myself and got to flapjackin’ while BB was on bacon duty.

I can’t believe I almost forgot about this pancake mix that I picked up from Trader Joe’s back in NOVEMBER!!

For the record, it is beyond delicious! From the moment I opened the bag and caught a whiff of the pumpkin spiciness, I knew it was going to be a good morning!

This breakfast kept ME full for hours…unfortunately, BB “had” to stop for a snack along the way:

Sorry, but I laugh every time I look at this pic! I told him, “Take a big bite and look at me!” Bahahaha!

So where were we going? Oh just a quick jaunt (total sarcasm, it’s like a 2 hour trip!) to Kentucky to visit BB’s mom. Once we got there, we did a little bit of this:

I’m telling you, it’s been about TEN years since I’ve held a fishing pole! I used to go with some of my friends when I was in high school, but it was more of a “let the boys fish and all us girls will just sit on the bank and talk about the boys” sort of thing. I’ve never actually caught a fish on my own that I can remember.

But I did my best to make it look good!

Unfortunately, after casting into just about every tree, shrub, or bush that was surrounding the pond, I gave up and let BB start casting for me.

I actually DID end up getting one bite…it startled me so I ended up losing it, but it felt good to come close to catching my first fish!

It was a bit cold and windy that day so we didn’t stay out for long, but I WAS able to get a quick shot of the two of us before heading in for some lunch…

Once back inside, BB’s mama heated us up some leftover chili (sorry no pic) and a childhood favorite to go along with it…

Mmm, peanut butter crackers!!

We stayed for a while longer chatting and watching some Who Wants To Be a Millionaire (wow, that show has changed a LOT since I used to watch it) before heading back to Tennessee.

On the way back, BB decided to take the “scenic route”

Even though the wind had picked up a bit and it had started to sprinkle, I hung half out of the car window with my cell phone and was able to get a couple of good pictures of Kentucky Lake.

This one was my favorite!

The rest of the ride was spent chatting and hand holding:

We were so lost in conversation that we almost signed ourselves up for a smelly evening:

This little guy was just chilling in the middle of the road.

I had never actually seen a live skunk this close before so obviously I took a few pictures:

I never knew that some of them were all white on top! Hmm, learn something new every day, right?

Speaking of animals, BB asked me on the last leg of our trip what I was craving for dinner and well, ever since I started following Sonali @thefoodiephysician on Instagram, I’ve been drooling over practically everything she posts, but the one that stuck with me the most was a picture of some perfectly sauced up spare ribs.

Without hesitation, I spit out “RIBS!”

Pretty sure you can’t suggest anything better to a hungry carnivorous man 😉

So we ducked into the first grocery store we came to, picked up the necessities and once we got home, I set to work.

It couldn’t have been simpler. I used my go-to BBQ sauce recipe from Healthy Happy Life.
Big thank you to Emilia for introducing me to this sauce.

Then I just popped them in a 325 degree oven with some sweet potatoes and forgot about them for about an hour and a half!

Of course by that time, we were both starving…

Good food, a little adventure, and great conversation…
That’s what good days off are made of!

Thoughts on a Thursday

Warning: This post is going to be COMPLETELY random!

First off, could this little guy get ANY cuter?!

Ok, now that we’ve all had our daily dose of Tiger cuteness, on with the randomness that has been my mind lately:

Someone puhhhh-lease tell me how on Earth I CONVINCED that I can keep a plant alive for more than a month…

Here’s what Mr. Rosemary Tree looked like almost exactly THREE weeks ago:

No photo editing…he was really that green.

Key word = WAS! 🙁

Is it just me or is it a bit early for these guys? I mean, can’t we make it to Valentine’s Day first??

The new PB Cheerios are pretty rockin’…

But the Dulce de Leche ones are even better…
especially with the new apple cinnamon flavored Chobani!

Let’s just say I was in a state of pure and unadulterated bliss this morning…ok, Christin, I guess your safe from my shenanigans for now…just don’t find the blood orange flavor before me!

Oh yeah, that would be MY KITCHEN!!

I have to say BB has definitely motivated me to get back to flexing my cooking muscles lately…can’t be feeding my man the same boring things all the time! 😉

I’m just sorry I’ve been keeping these from you guys…I swear if it weren’t for Instagram, I’d have hardly any pics at all!

Dinner by candlelight tastes 110% better!

Sometimes the best advice comes from a bottle of Riesling.

And sometimes? Sometimes you just need to let off some steam on facebook…

And then go to the gym…

I just hope I can walk tomorrow! 😉

How to Have a Perfectly Lazy Day and What to Eat

Hey kids! How’s the week lookin so far?

Since I had the day off Monday (that I used paid time off for…yeah, no “holidays” in the medical profession), yesterday was definitely a Munnnnnday sort of day. I think I did a bit too much lazy-ing around this weekend because when the alarm went off started screaming like a wild banshee this morning, I was so not ready to greet the day!

But don’t you think for a second that if I had it to do over again, I would change a thing!

I’m of the mindset that everybody deserves a day to lounge around in their pajamas till 4pm, study the art of how the rear end can form a perfect mold of itself into a couch cushion (or two), and never once think about leaving the house without feeling an ounce of guilt.

With that in mind, allow me to offer up a few important “lazy day” factors and a photo-tutorial for you to use as a model for your own torpid experience (oh, how’s that for using a thesaurus?!)

So, I don’t know about you guys, but I always like to start my laziest of days off with a little booze…

But I’ve found if I add it to my coffee and make it look pretty, it makes me seem a bit more normal! 😉

*21 and older peeps…and please, drink and loaf responsibly*

Also, it’s good to have a sleep over the night before, because then someone else can cook you breakfast:

Perfectly toasty French toast topped with peanut butter, banana, and maple syrup compliments of BB…don’t worry, I didn’t make him do all the work…I totally sliced the banana all by myself!

To conserve energy (and keep up with idle appearances), leftovers for lunch is entirely necessary:

I shall call it, Squash-etti! 🙂

Or maybe I’ll just call it “yum”!

And hear this…BB tried nutritional yeast for the first time and LIKED it!!

As far as entertainment goes…one can only be amused so long with the in-depth study of couch cushion construction…

Your best bet is to have a new TV series on DVD (preferably of the flesh-eating zombie variety) that you can get totally sucked into and suddenly misplace several hours out of the middle of your day.

Cannot.stop.dreaming.about.zombies!

As necessary, feel free to pause for bathroom breaks (don’t forget to check the shower for the undead) and snack breaks:

Always good to choose a snack that builds muscle and strong bones…makes you less likely to become a zombie victim…you know, in case there IS one lurking in the shower.

And of course, don’t be alarmed, if after a long day of dilly dallying, you happen to get a small surge of energy (it’s probably the adrenaline) and all of a sudden want to whip up something delicious in the kitchen see just how much more nutritional yeast you can get into your boyfriend’s system.

Mmm…kale chips!

Which happen to go really well with wheat beer….ummm, I mean ROOT beer…yeah, that’s what I meant! 😉

Feel free to tote your “kale and ale” back into the living room for more brain-eating entertainment.

Unfortunately, if you aren’t lucky enough to have access to more silver discs of moving pictures (otherwise known as DVDs), you may at this point realize that you haven’t showered all day and excuse yourself to go “wash off the funk”…

Just be sure to check the shower.

And finally, at the end of the day…if you’re a dedicated foodie like me…you might get an itch (hopefully it’s not of the infectious skin disease variety) to get in the kitchen.

There is only one rule here: Regardless of cooking times, hands-on time must be kept to a minimum (you don’t want to over do it ya know).

One of my go-to meals on such an occasion?

Stuffed chicken breast!

1. Slice chicken breast in half, careful not to go all the way through,
2. Flatten it out with a meat tenderizer (or plastic wrap and a glass like us classy people),
3. Stuff with veggies, sauces, cheese…whatever you like
4. Seal it shut with toothpicks* and throw some breadcrumbs at it,
5. Pop it in a baking dish and cook for 1 hour in a 350 degree oven.

Note: Be sure to count the number of toothpicks you use to be sure you collect them all after cooking…or prepare to give your best “whoopsies” look to the boyfriend when he pulls half of one out of his mouth. 😉

I went with one of my favorite combos to make…what I like to call
“Pizza Chicken”:
Spinach, mozzarella cheese, turkey pepperonis, coated in pizza sauce (this time “Pizza Pizza” Cashew Cheese Sauce) and bread crumbs.

Served with a side of roasted broccoli that I just threw in next to the chicken during the last 30 minutes of cooking.

And finally, with a full and satisfied tummy, you can tuck yourself into bed knowing you had one of the best languorous days in the history of all lackadaisicalness.

Just be sure to brush your teeth…and check the shower 😉
