Granny’s Chicken “Stuff”

How was your Monday?

Mine was FULL of cookies…not made by me, but made by my co-worker’s wife…whom I’ve deemed Satan’s mistress. I swear I don’t know what it is, but if there are cookies within an arm’s reach of me, I get “cookie fever” and wind up feeling like a diabetic about to go into insulin shock by the end of the day, but I’ll touch on this more in tomorrow’s WIAW post…

Oh yeah, it’s coming.

Time to show all the gory details of my single-handed cookie massacre!

Um, sorry about that folks, not sure what came over me ::cough::sugar::cough:: there!

Anywho, I thought I’d share the chicken recipe from last week’s “Southern Cookin’ Potluck”, but first a little background:

This recipe has been in my family for YEARS! It’s a dish that my great-grandmother was always famous for and like a lot of simple southern recipes, it’s quite the money-saver and most of the ingredients can be found in your kitchen any old time.

I honestly was not a fan of this dish as a child…probably stemming from the fact that I hated eating meat because it “took too long to chew” and the only vegetable I liked was tomatoes…as in ketchup. Fortunately, I’ve come to my senses in the past few years and realized why my family always got so excited about the thought of having “stuff” for dinner!

Granny’s Chicken “Stuff”

Prep Time: 5-10 minutes

Cook Time: 30 minutes

Ingredients (Serves 4-6)

  • 1 whole roasted chicken (3-5 pounds)
  • 1/2 stick butter
  • 1/2 large onion, chopped
  • 4 Tablespoons flour
  • 2 cups milk (dairy or non-dairy)
  • 1 cup low-sodium chicken broth
  • 1 cube chicken bouillon (optional)
  • 1 teaspoon A-1 steak sauce
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground sage*

*Sage was not included in the original recipe but I threw it in assuming the flavor would pair nicely with the other ingredients…and I was SO right in making that assumption. πŸ™‚

Instructions

1. Bone and skin chicken and, using your hands, shred the meat into bite sized bits. Set aside.
2. In a medium-large soup pot, melt butter over medium heat and saute onion until translucent.
3. Sprinkle flour evenly over onions and stir together until it resembles a paste of sorts.
4. Stir in 1/2 cup of milk and whisk well.
5. Add the remaining 1 1/2 cups of milk and the chicken broth, stir and reduce stove temperature to low heat.
6. Add the rest of the ingredients and the shredded chicken from earlier and allow to simmer for 15-20 minutes at least to allow time for flavors to meld.
7. Serve over warm crumbled cornbread.

I didn’t get fancy with my cornbread…just used the recipe on the back of the package of cornmeal, but if you’re like me and always seem to produce dry crumbly cornbread from just about any recipe, don’t worry in the slightest…that is the BEST kind of cornbread to soak up all that glorious sauce!

As for the recipe for the out-of-this-world-amazing pineapple upside down cake, I only WISH I could take credit for that, but I owe it all to Deb over at Smitten Kitchen! The only changes I made were using whole wheat pastry flour (ha, the ONE healthy ingredient), being lazy and going with canned pineapple, and throwing in the maraschino cherries so I could get that traditional pineapple upside-down cake look!

If I failed at getting the point across last week, let me just say again that this is THE best pineapple upside-down cake I have ever tasted in my life!

Now, if only I could go back in time and relive re-taste last Wednesday’s potluck!

Dairy-Free Eggnog Pancakes with Spiced Pumpkin Syrup

I hope you have all had a fantastic weekend…guess what!

I finally started my Christmas shopping! Emphasis on the word started…as in not at all finished…Nevermind the fact that I’m sure to be running around town like a mad woman two days before Christmas this year…I have some pancakes to tell you guys about!

Obviously, I didn’t get my eggnog fix the other day with my oats. I swear I wasn’t even finished with my bowl and I was already having dreams of pancakes.

So this morning, I made my dreams a reality and took BB along for the ride!

Eggnog Pancakes with Pumpkin Spice Syrup

Prep Time: 2-3 minutes

Cook Time: 8-10 minutes

Ingredients (Serves 2)

    For the Pancakes

    • 1 cup whole wheat pastry flour
    • 1 teaspoon baking powder
    • 1/8 teaspoon salt
    • 1/2 teaspoon freshly grated nutmeg*
    • 1 large egg
    • 2 teaspoons vanilla
    • 2 Tablespoons Earth Balance non-dairy butter, melted
    • 1/2 cup Silk Soynog (or regular eggnog if not dairy-free)

    For the Pumpkin Spice Syrup

    • 1/4 cup pumpkin puree
    • 1/2 cup pure maple syrup
    • 1/2-1 teaspoon pumpkin pie spice

    Instructions

    For the Pancakes

    1. Heat a non-stick skillet over medium heat and coat with cooking spray.
    2. In a medium-sized bowl, combine dry ingredients and stir with a wire whisk to break up any lumps.
    3. In a separate bowl, whisk together egg, vanilla, melted butter, and eggnog.
    4. Add wet ingredients to dry ingredients and stir just until combined.
    5. Spoon batter onto skillet, forming 8 small to medium-sized pancakes) and cook 4-5 minutes per side or until golden brown.
    6. Transfer to plate and top with Pumpkin Spice Syrup.

    For Pumpkin Spice Syrup

    1. Combine all ingredients and whisk until smooth.
    2. Heat in microwave for 5-10 seconds if desired.
    3. Serve over pancakes.

    *Please, please, PLEASE use fresh nutmeg!

    You can find these microplane graters at Bed Bath & Beyond or any kitchen accessory type store for around 10 bucks…sounds a bit pricey but they make such a useful tool around the kitchen. I use mine for nutmeg, cinnamon, chocolate, zesting citrus, and I’ve even used it for grating cheese a few times!

    But anywho…back to some delicious pancakes!

    Coated in a good drizzle of pumpkin-y goodness…

    And dusted with a little snow!

    The flavor of the eggnog shines PERFECTLY thanks to the addition of the nutmeg.

    And rolling every fluffy bite into a pool of spicy pumpkin syrup makes your mouth want to sing!

    Fa la la la laaaaaaaaaa!

    Luckily BB accepts the fact that along with taking 5 million pictures of our food before we sit down to eat, I occasionally burst into song after the meal.Β Honestly, I don’t think he cares what I do as long as there’s bacon on the table! πŸ˜‰

    Well, speaking of meals…I have some veggies to chop for enchiladas tonight.

    Vegan Pumpkin Eggnog Oats

    Hello my lovelies and happy Friday!

    Hope you all have a fun-filled yet relaxing weekend! I’ve already gotten mine off to a good start.

    Knowing I wouldn’t have time to get a workout in later today (BB is coming over right after work today to spend the weekend with me), as soon as I got up this morning, I changed and was back to the gym…hmm, only 12 hours since my last workout…but don’t worry, I focussed on a whole other area of the body today.

    It’s been rainy and nasty outside for the last couple of days and when I made it back to the house after my workout, I knew I wanted something warm and comforting for breakfast…but it had to be something to help with muscle recovery too.

    And then a little lightbulb went off!

    Or the bells sounded…whatever I’m going with it! πŸ˜‰

    Vegan Pumpkin Eggnog Oats

    Prep Time: 2-3 minutes

    Cook Time: 3 minutes

    Ingredients (Serves 1)

    • 1/3 cup oats
    • 1/3 cup Silk Soy Nog
    • 1/3 cup water
    • 1 teaspoon vanilla extract
    • 1 scoop vegan protein powder (optional)
    • 1/3 cup pumpkin puree
    • 1/2 teaspoon pumpkin pie spice

    Instructions

    1. Combine oats, eggnog, water, vanilla extract, and protein powder (if using) in a microwave-safe bowl and cook for 3 minutes, stirring halfway through.
    2. After cooking, stir in the pumpkin and pumpkin pie spice (oats will still be watery until after the addition of the pumpkin).
    3. Top with your favorite granola, fresh or dried fruit, and/or nuts.

    I also ‘nogged up my coffee!

    If you remember, I bought the Silk Nog last year around this time, but wasn’t much of a fan of the sweetness, but when mixed in other things, like coffee and oatmeal, it lends the perfect flavor without the overwhelming sweet taste.

    Fueling my muscles never tasted so good!

    Now before I go and primp for BB’s visit, I’ll get down to what I know a lot of you are eagerly anticipating…
