WIAW: Fruits ‘n Veg

Hello loves! Thank you guys SO much for all the awesome ideas for rhubarb! They all sound delicious! Now the problem is figuring out which one to make!

I can’t believe it’s already Wednesday…hopefully the rest of the week will continue to fly by since we are looking to have another gorgeous weekend coming up!

Coffee (7:00am)
1/2 caff…black…good!

Breakfast (8:00am)
Sugar Chocolate ‘n Spice Smoothie

Chocolate ‘n Spice Smoothie: (serves 1 very thirsty person)

  • 1 cup milk (I used flax)
  • 1 scoop protein powder (I used Tera’s Whey chocolate)
  • 1 teaspoon carob powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon maple extract
  • 1 tablespoon peanut butter
  • 1 medium banana
  • 2 big handfuls of kale
  • 1 cup ice

Place all ingredients in a blender (or I used my food processor) and blend, blend, blend baby! The flavor of this smoothie was absolutely incredible! I loved the combo of the chocolate and maple extract (thanks for the idea Kayla!) and the hint of spice from the cinnamon was perfect!

Lunch (12:00pm)
Hummus ‘n veggie sandwich on sourdough bread
Kale, tomato, red onion, and yellow zucchini with nooch for sprinklin’

With a side of jaaaauicy black cherries

And a “special occasion” kombucha
Special Occasion = It’s Tuesday 😉

Who knows, maybe a few more days like this, and I’ll justify my produce buying addiction! 😉

Confessions

Hey guys! So I saw this post on Katy’s blog today and I thought I’d do a little confession post of my own. I know it’s not the first time I’ve “bared all” here on KMB, but there seems to be some habits I’ve developed over the past few weeks that I feel I need to just get out there…plus, I here it’s good for the soul! Or wait, maybe that’s chicken soup?

1. Although I live alone, and have for quite some time now, I seem to think I am a bottomless bit when it comes to fresh produce…either that, or I’m a little addicted to the local farmer’s market.

2. I buy foodie items with absolutely NO idea what I’m going to do with them…please refer to Exhibit B. Quick! I need ideas for rhubarb!

3. For someone who used to think coconut was “gross,” I seem to have developed quite a liking obsession with it!

4 POUNDS for 10 bucks?!?! Heck yeah!

5. No matter that I probably have 20+ books in my office that have NEVER been read…I’d     rather read food blogs instead!

6. Apparently I also think I’m kin to Dr. Seuss!

7. I didn’t have one sip of water yesterday! 🙁

8. I don’t even remember the last time I actually put some effort into cooking dinner!

Dinner: Egg sandwich with homemade roasted potato chips
(I hate the word “tater”)

9. The entire time I was eating dinner, I was dreaming of oatmeal.

Yes, PB&J BBQ oatmeal!

Mmmm!

10. Sometimes I put food I’ve never tried up on a pedestal…

Only to be disappointed in the end.

My First Ever Pancake Fail

Thank you guys so much for the congratulations yesterday! I seriously couldn’t wait to share the news with you guys and I’m so excited to be in my new blog home!

So as you know, today is Pancake Sunday, but if you can believe it, I woke up thinking I might have something other than pancakes this morning…I know, crazy right?

I thought about it…

I made coffee…

I thought about it some more…

I finished my coffee…

But in the end, I just couldn’t think of anything I really wanted. So I decided to make them anyway.

I opened the fridge to gather a few ingredients, spotted the last apple, and got an idea!

Hmm…

How about the flavor of apple & cinnamon instant oatmeal in a pancake!

…or just apple cinnamon oatmeal that LOOKS like a pancake!

Huh?

Yep! Perfectly browned and crisp on the outside and warm and mushy (like oatmeal) on the inside. It’s kind of like how I would imagine a breakfast cookie tasting if you were to slap it in a skillet for a few minutes.

I haven’t really decided it these were a complete bust or not. They were still tasty, but just not what I was expecting. You know how it is when you have it set in your mind how something should taste and then it comes out not quite matching up? Totally what happened! I think next time, I may try using dried apple slices for a more intense apple flavor and perhaps less oats and more flour.

So until I have a chance to perfect these (and you bet your spatula I will), I thought I’d share my little oatmeal pancake recipe with you guys.

Apple Cinnamon OATMEAL Pancakes: (serves 1)

  • Modified flax egg (1/2 tablespoon flax + 1 1/2 tablespoons water)
  • 1/3 cup rolled oats
  • 1/8 cup whole wheat pastry flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/3 cup milk (I used flax milk)
  • 1 teaspoon vanilla extract
  • 1 small apple, peeled and grated

1. Heat a non-stick skillet over medium heat and coat with cooking spray.
2. Combine ground flax and water to make flax egg and allow to set.
3. Combine together dry ingredients in a medium-sized bowl.
4. Add milk, extract, grated apple, and flax egg to the dry ingredients and stir just until         incorporated.
5. Spoon batter into skillet making 3 medium-sized pancakes. Flip once the edges begin         to set (batter will not bubble).
6. Continue cooking until browned and crisp.
7. Top with butter and maple syrup.

Uh…

I wonder if this means I was supposed to have oatmeal?
