Pancakes Fit For a King

Good evening loves! I hope you are all enjoying a nice relaxing Sunday!

I finished watching The King’s Speech last night and for those of you who haven’t seen it…you HAVE to get it! It has been a while since I’ve seen a good movie, but this one did not disappoint! Incredible acting, great story line, and the perfect amount of suspense to keep you glued to the screen!

It was a bit late when I headed to bed last night (is it bad that I consider 11:30 like SUPER late?) but I had no problem getting out of bed this morning! I couldn’t wait for breakfast! Not only was I excited for Pancake Sunday, but after my PB&J fiasco the other day, Jenny mentioned something that immediately made me swoon:

Peanut Butter, Banana, & Bacon Pancakes

Eeek!

Knowing this came from a highly credible source…I mean c’mon, the name of her blog is Peanut Butter & Jenny (which I absolutely adore)…I KNEW this was going to be good!

Elvis Pancakes: (serves 1)
Adapted from Peanut Butter & Jenny’s Bacon Pancakes 

  • 1/4 cup whole wheat pastry flour
  • 1/4 cup rolled oats
  • 2 tablespoons wheat germ
  • 1/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 flax egg (1 tablespoon flax + 3 tablespoons warm water)
  • 1 medium banana, 1/2 mashed banana, 1/2 sliced
  • 1/2 tablespoon coconut oil
  • 1/2 cup almond milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon maple flavoring*
  • 4 slices of bacon, cooked and crumbled
1. Heat a non-stick skillet over medium heat.
2. Combine water and flax and allow to set 3-5 minutes.
3. Stir together all dry ingredients to break up any clumps.
4. Combine wet ingredients in a separate bowl, add flax and mix well.
5. Add wet ingredients to dry ingredients.
6. Add 1/2 of the cooked and crumbled bacon to the batter, stir to combine.
7. Spoon batter into greased skillet and allow to cook for 6-7 minutes before flipping.
8. Continue cooking for 6-7 minutes on the other side before plating.
9. Top with other half of banana and crumbled bacon, drizzle with pure maple syrup.
10. Enjoy while humming “You Ain’t Nothing but a Hound Dog”

Jenny, my dear, you are a genius! And I can now die happy!

Other than dying and going to Heaven enjoying this plate of awesomeness, I met my sis for a lunch date at my favorite sushi place and then came home to watch the third Narnia movie, which I loved! Makes me want to go back and watch the other two again! I am a total sucker for all the digital animation and special effects!

Welp, now that I’ve spent almost the entire day being lazy, I guess I should get up and do some laundry. Not sure they’d be too happy if I showed up tomorrow in my pj’s! Anyone volunteer to fold it and put it away for me? I’ll make pancakes! 😉

Saturday Shenanigans

Hey y’all! So, wow! There are some fans of freaky PB&J concoctions among us! Not a single negative comment out of you guys yesterday! Well, aren’t we just a big bunch of open-minded hippies?! 😉

I was gonna skip posting tonight, but I just had to share with you guys some snippets of my Saturday! I’m on call this weekend AND it’s been raining Poodles and Persians all day so there were no exciting trips to faraway lands (Nashville)…although I’m seriously going through some Trader Joe’s withdrawals right now…next weekend perhaps? Nevertheless, my day was sprinkled with little bits of goodness all day…or maybe I’m just that easily amused!

Eh, humor me!

After giving Vickie a good interior cleaning (mother nature took care of the exterior) and giving her the newest in the line of Hot Car Colognes (new car scent is so sultry), I went out to run a few errands.

Anyone noticed that my last WIAW posts haven’t included these guys?

I’ve been out for two weeks! Luckily, I stumbled upon this big mamba jamba at Sam’s!

Barrrrrrrrrs!

What? I couldn’t pass up a sale at a BUCK a piece!

Then I found out that my local herbs and vitamin store carries GT’s!

So, I haven’t decided if that is a GOOD or a BAD thing! :-/

And now I’m watching 1 of the 2 movies I borrowed from a co-worker!

I had to pick The King’s Speech first…I’ve heard so many great things about it!

Am I the last person on Earth to see it?

And dinner was flippin awesome!

Freaky Friday

Yeah, so I’m sure that’s a post title you haven’t seen today? What can I say, I’m an original! *brushes fingertips across chest*

So, anybody have any weird and crazy things happen to them today? I’m not superstitious, but if there is ONE thing you learn when working in the hospital, it is this: there is SOME truth in the whole cycle of the moon/Friday the 13th thing…don’t believe me? Venture into an emergency room on the next full moon…it won’t take long to see the signs (bonus points if they look like dude from the bookstore!)

Now that I’m off work, I can officially say (without jinxing myself) that today was surprisingly a fairly normal day. So what makes this post worthy of the “Freaky Friday” title? Well, that would be my latest PB&J obsession!

Watch out PB&J Hummus, there’s a new kid in town!

When Jessica told me about her favorite PB&J, I have to admit I was a little curious. But then, the more I thought about it, the more I COULDN’T STOP thinking about it…I mean, seriously? Peanut butter and jelly with barbecue tofu?!?!

Barbecue chicken PB&J anyone?

Ok, so I was having a bit of fun with this…but then the REAL magic happened!
