I’m Just Here For The Guac!

Hola mi amgios! Happy Cinco de Mayo…or what I like to call, “Mexican FEASTival Day!”

I LOVE Mexican food! Burritos, quesadillas, empanadas, rubbertireadas…you name it! Just sprinkle it with garlic, add a little salsa, sit it in front of me and watch it disappear! I swear I have been dreaming of Mexican for dinner ALL day!

Since I was a little low on pantry items and a LOT low on time before I would chew my own arm off (remember what I said about working out in the evening), I threw together a quick Mexican themed salad! I sautéed strips of bell pepper, onion, and portobello mushrooms in a little olive oil and dashed them with chili powder, pepper, and garrrrrrlic!

I also toasted up some frozen corn

And then I got to layering!

Spinach, portobello/onion/pepper mix, corn, tomatoes, and a drizzle of plain non-fat Greek yogurt

And well, we certainly can’t celebrate Cinco de Mayo without a little guac, right?

Right!

Served up alongside some homemade baked tortilla “chips”

Just slice up a whole wheat tortilla, pop it under broil, flip when brown!

Watch them close! They only take a few minutes and they burn fast!

Classic Chunky Guacamole:

  • 1 ripe medium-sized avocado
  • juice of 1/2 a lime
  • garlic
  • S&P to taste
  • 1/2 medium-sized tomato, chopped
  • 1/4 medium-sized onion, diced
1. Slice avocado in half and cross-hatch the flesh with a knife. Scoop out into a bowl.
2. Add lime juice, garlic, and S&P and stir to combine
3. Stir in tomato and onion
4. Serve with chips.

It doesn’t get any easier than that folks! It amazes me that people actually buy the pre-made stuff! Have you ever tried it? Blech!

I swear I get more of a rush of endorphins from a spoonful of guac than I do from ANY chocolate! There…I said it…I’m sorry I’m not sorry!

I Like My WIAW Quick & Easy

Hello beautiful ladies and handsome gentlem-…Matt! You guys sure know how to boost a girl’s ego! I just finished reading all the comments from yesterday and although the idea for PB&J Hummus came from just a simple craving, I AM feeling a bit GENIUS right now! Haha! Let me know what you think if you’re daring enough to try it!

So yeah, its Wednesday! And you know the only thing to look forward to on Wednesday, right?

Breakfast (7:00am)
Quick & Easy Chocolate Protein Pancakes
topped with peanut flour sauce
and 1/2 banana

Still kinda on the fence about this flavor. It’s definitely NOT “chewy”
Well, unless you have the jaw strength of a T-Rex!

Lunch (12:30pm)
Salad: Spinach, tomatoes, portobello mushrooms, carrots, celery, and zucchini
sprinkled with Garlic Gold Nuggets
&
Cottage cheese and nutritional yeast for a quick & easy “salad dressing”

Snack (3:00pm)
Voskos Greek yogurt with granola

What’s better than quick & easy?

Pre-workout Snack (5:00pm)

On my way to the gym, I had a date…he was so easy! 😉

Dinner (7:30pm)
Steamed squash and asparagus (I swear it’s under there)
topped with salsa & three pepper hummus
and a perfectly fried egg

And then thoroughly covered sprinkled with Mrs. Dash Crack!

The only down side to working out in the evening…I’m STARVING by the time I get out of the shower! Luckily this dinner was put together in less than 10 minutes!

Now that’s what I call quick & easy!

And of course my day involved lots of loving on this guy!

Not Your Average Hummus

Wow! That’s all I know to say right now! I was a little hesitant last night to click “publish” but I’m so so glad that I did! I just finished reading through all of your comments and I can’t thank you all enough for the huge amount of support I feel right now! I love you guys SO much!

I think for now, I’m just gonna go with the flow and see where it goes….if I feel like posting every day one week and only a few days the next, so be it! Just know that I have absolutely NO intention on quitting blogging for a LONG time! I love it too much!

I have actually been excited all day today to get to this post tonight! I have a little something for you guys…

I made PB&J!

Wait…was that a little anticlimactic? Oh, I’m sorry. Let me try this…

I made PB&J HUMMUS!

Are you still there? I promise it’s absolutely delicious! Remember the disclaimer people!

It all started when I got a craving for one of my childhood favorites for dinner. It is practically impossible for me to sink my teeth into a PB&J without thoughts of bike riding, hide-n-seek, and Saturday morning cartoons. And while I’m totally not against indulging in childhood comfort food, a simple PB&J never really “sticks to my ribs” as my mama would say (Hi, Mom!).

So, how do you make a sandwich that’s filling for a five-year old work for a more grown-up sized hunger? You add beans!

Black Bean PB&J Hummus

Cranberry Bean PB&J Hummus*

*Don’t be lured into buying cranberry beans for a recipe thinking they are some sort of fancy new and exotic ingredient…they taste like plain.old.pintos! #imnotbitter #ihateyoufoodnetworkmagazine

PB&J Hummus: 

  • 1 cup cooked beans
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons of your favorite jam or preserves
  • 1-2 tablespoons of water as needed to thin out mixture

Combine all ingredients into a food processor, Magic Bullet, or blender and give it a spin. You will have to stop a few times to scrape down the sides of your mixing vessel…hmm, I like that word…all of a sudden I feel like I’m making hummus on a submarine! 😉

It also makes for a fantastic dip for apple slices!
