Edamame Millet Burgers

Ok, so I can’t wait until tonight to share this new recipe with you guys. I’ve been working on it since last night and just perfected it this morning!

Yes, I got up this morning and made a burger! What can I say…I don’t take defeat very well! If you don’t get something right try, try again go to bed, dream about it and wake up early itching to try something different!

Have you ever tried these little green buttery gems? Edamame is simply the name for green soybeans and they are loaded with nutrition! We’re talking a 1/2 cup serving that clocks in at 100 calories, 3g of fat, 9g carbohydrates, 4g of fiber, and 8g of protein! Definitely a filling snack or the perfect accompaniment to a meal for a good protein boost!

Or, in this case…the perfect VEGETARIAN BURGER!

Edamame Millet Burgers: (serves 2)

  • 1 teaspoon toasted sesame oil
  • 1/4 cup finely diced onion
  • 1 small carrot, shredded (about 1/8 cup)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1 tablespoon Bragg’s Liquid Aminos (or soy sauce)
  • 1/2 teaspoon sriracha (optional)
  • salt & pepper to taste
  • 1/2 cup frozen edamame, thawed in microwave
  • 1/4 cup cooked millet
  • 1/4 cup cashew flour (just throw them in a blender or food processor until ground)
  • 1/2 chia egg (1/2 tablespoon chia seeds mixed with 1 1/2 tablespoons water and allowed to set for 4-5 minutes, or you can use 1 egg white)

1. Saute onion and carrot in sesame oil until tender.
2. Stir in garlic powder, ginger, aminos, sriracha, and salt & pepper.
3. Transfer mixture to a food processor and combine with edamame, millet, cashew flour,     and chia egg (or egg white).
4. Pulse until mixture gets sticky and soybeans are well incorporated.
5. Scoop mixture out of food processor and form into two patties.
6. Place in oven under low broil for 8-10 minutes or until tops are browned and crispy           then flip patties and broil for another 8-10 minutes.

Served atop a bed of mixed baby greens, shredded yellow squash and red bell pepper strips. Garnished with sesame seeds and a drizzle of more sriracha.

Crispy and crunchy on the outside, smooth and buttery on the inside!

The variations of grains and flours are pretty much limitless. I think it would also be pretty tasty with quinoa and chickpea flour as would brown rice and a little cornmeal!

French Toast…Denied!

You ever have one of those mornings where you get up and you have such an intense craving for something that you just have.to.have.it?

Well, that was me this morning. I walked into the kitchen and without even thinking about it, I opened the fridge and started gathering things to make stuffed French toast (hmm, must’ve been the sweet oats from yesterday).

Ezekiel Cinnamon Raisin bread (aka best French toast making bread)…CHECK!

Almond milk…CHECK!

Eggs…CHaaaa…Whaaa? Wait a minute!

Umm…what tha?

Yep, that would be what a frozen egg looks like! Seems my new refrigerator works pretty well on the halfway setting!

Morning dialogue with myself:

Ok, don’t panic…maybe there’s still a way to save Christmas breakfast!

Hmm, microwave! Yeah, yeah, I’ll just defrost it in the microwave for a few seconds!

*Ding*

Ohhhhkay, you can’t defrost an egg in the microwave without COOKING it!

Grrrr!

Ok, now I have to make eggs…omelet, scramble?…omelet, scramble?

Oh, I don’t care…but I still want my cinnamon raisin toast!

1 (cooked from frozen) egg + 2 egg whites scramble with sautéed kale
2 slices Ezekiel Cinnamon Raisin toast
spread with TJ’s Valencia PB and nanners.

Luckily, this breakfast turned out to be perfectly satisfying and didn’t leave me pouting and still wanting my French toast! But I can tell you right now what I’m having in the morning! I love having greens with breakfast…I don’t know about you guys, but I feel like it gets my day started off on the right vegetable foot!

I also had a cup of coffee, but not my usual cup:

1/2 caf Joe with *gasp* almond milk & cinnamon added in!

I’ve been drinking my coffee straight up for about 6 months now. LONG ago, I was a liquid creamer AND sugar sort of gal but then slowly made the progression to just creamer, to almond milk, to black with cinnamon. I just thought this morning, I’d give it a try the old way…verdict? Tomorrow’s cup will definitely be black!

Vickie Vibe Update: I found out today that she IS fixable! Bad news is it’s going to take 2-3 weeks (possibly longer) before she’s back to her old self! 🙁

WIAW: A Little Sweet, a Little Savory

Hey hey my peoples! Hope you are all having a great week so far! Only two more days till the weekend…so you know what that means!

Time for another What I Ate Wednesday!

Breakfast (7:00am)
Ashley’s French Toast Oats
topped with
cocoa almonds, dried cherries, and carob chips
(and a mug of un-pictured 1/2 caf coffee with cinnamon)

I was really excited to try Ashley’s newest oat creation. I didn’t have any bananas or maple syrup but it was still perfectly delicious. The addition of a whole egg during cooking makes for some SUPER creamy oats (I used all Irish oats and looks at how smooth and creamy it came out!)

Lunch (12:30pm)
Salad “trough” topped with a TJ’s veggie burg, hummus mixed with
balsamic vinegar, and nooch

Snack (4:30pm)
Plain Low-fat Stonyfield yogurt topped with a Lundberg brown rice cake,
cinnamon and chia seeds

Dinner (8:00pm)
1/2 cup oats cooked in water topped with nooch, Mrs. Dash crack, steamed
broccoli, yellow peppers, 1/3 avocado, and mild salsa

I promise there are oats under there!

This was one of the first savory oats combos that I’ve made without topping with a fried egg. I just LOVE the flavor/texture of a runny yolk mixed into creamy oats, but I didn’t even miss it in this bowl! The combo was absolutely perfect and satisfied my raging veggie craving!

And of course my day included appearances by…

and lots of water! Including tea, I drank about 80 ounces of water! Pretty darn good for a girl who frequently forgets to drink more than 1 cup! 😉
