Move Your Butt!

So, you know how you get really REALLY excited about something and your heart is racing and it feels like you have butterflies in your stomach?

How about the feeling you get when you’ve got the biggest belly fully of flutters and then you see a big

?????

Today, I was high as a kite…until I saw my “butt”…

Me: I’m so excited about moving tomorrow! I’m all packed up and ready to go!

Realtor: Um, *clears throat*…BUTT!

Well folks, looks like all of you who signed up to help tomorrow are just going to have to wait until…WEDNESDAY!

At first I was a little upset and obviously frustrated, butt after a little time to think about it, I am seeing the silver lining…the belt to the plumber’s pants if you will! 😉

Although I have another 5 days left in the old house with mere crumbs and lint left to eat in the kitchen, I do have time to:

  • Collect more boxes from work (stock comes in tomorrow)
  • Pack up what’s left of the house without losing my mind
  • Relax a bit so I’m not a total spaz on the NEW Move Day

Now, about that whole crumbs and lint left in the kitchen thing…

I had planned to post a pic loaded post of some of the combos I’ve mixed up this last couple of weeks during the Clean Out the Fridge/Pantry Challenge…butt it looks like now I’m really going to have to push up my sleeves in the creativity department…I am out of EVERYTHING!!

Howabout a little preview?

Obviously, today was all about the butt

Butternut, that is!

Breakfast burrito: One slice melted sharp cheddar, 2 egg whites, salsa, olives, and butternut squash puree to be wrapped up in a Trader Joe’s whole wheat tortilla.

And of course you know I had to sprinkle it with a little CRACK!

The squash taste was mellow, but it was still there and tasted great with the creamy melty cheese and a little kick from the salsa!

After reading a comment on yesterday’s post from the lovely Spabettie, I knew exactly what I was having for dinner tonight!

Aduki Bean Burger topped with Butternut Cheeze and roasted red peppers on a bagel thin (yeah, the only bread I have left at this point)

Aduki Bean Burger: (serves 2)
If you don’t have aduki (adzuki) beans, black-eyed peas would be a great substitution!

  • 1/2 cup cooked aduki (or adzuki) beans
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 tablespoon chia seeds mixed with 1 1/2 tablespoons warm water
  • 1 tablespoon whole wheat flour
  • 1/4 cup rolled oats
  • Spices: 1/8 teaspoon each of garlic powder, onion powder, cumin, chili powder, and smoked paprika

1. Place beans in a bowl and mash with a fork.
2. Combine all ingredients along with beans and mix together with a spoon or your God-       given master utensil: your hands!
3. Form into two patties and cook over medium-high heat until browned on each side           (about 4-5 minutes per side)

Butternut Cheeze: 2 tablespoons butternut squash puree +
1 tablespoon nooch (nutritional yeast flakes)
S&P to taste

Seriously you guys, this was one of those things that after the first bite, you mutter “Ohmifffguffffness”! So flippin fantastic! Perfect combo of flavors!

WIAW: Kabocha Luscious Bowl

Hey guys! Hope you all had a happy humpy day!

I can’t believe the week is halfway over already. One more day of work before Move Day! Eek! I’m so excited/nervous/tired already! 😉

I like having a plan. A plan helps to calm nerves. A plan helps to give you an idea of what to expect. Right now, there is NO plan and I’m trying my best not to faaaareeek out!

All I know is that I have a little over 24 hours before the big move (9 of which I will be stuck in the four concrete walls of the hospital and 14-16 hours reserved for z’s) and I still need to:

  • Finish packing the living room, my bedroom and closet.
  • Run a load of laundry…Wait, again? Didn’t I just do that?!
  • Forward my mail, oh and speaking of mail, I kinda I need to go get the new house a mailbox!
  • Call the rental truck company and sign over my unborn child for a gas-guzzling moving-machine

Oh, well, now that I’ve seen it in bullet format, it doesn’t seem so bad after all…NOT!

Ok, enough about that! Let’s move on to happier things…things that HAVE a plan! How about another edition of What I Ate Wednesday?!

Breakfast (7:00am)
Perfect Protein Oats in a Jar + 1/2 caf of Meet Joe Black

I’m getting a little desperate for ingredients now in the final days of the Clean Out the Fridge/Pantry Challenge. I was forced to get a little creative with my oats this morning since I happen to be out of my “oatmeal making staples” (bananas and milk).

Perfect Protein Oats: (serves 1)

  • 1/3 cup rolled oats
  • 1 cup water
  • 1/2 scoop vanilla protein powder
  • 3 tablespoons egg whites

1. Combine oats, water, and protein powder in a pot on the stove and cook over medium-     high heat until boiling.
2. Add egg whites and whisk until cooked through (it will form little egg white swirls in         the oats)

I enjoyed my oats in a waning jar of one of my favorite peanut butters (about 1 tablespoon left in jar) and topped with a small handful of Kashi Autumn Wheat cereal and a half cup of thawed frozen peaches.

And of course I had my morning dose of candy vitamins!

Lunch (12:30pm)
Kabocha Luscious Bowl: millet, aduki beans, and roasted kabocha squash
topped with a sunflower butter/nooch drizzle
Water

I finally got around to making a bowl inspired by Carrie’s “Luscious Bowls.” I loved EVERYTHING about this meal! I honestly don’t prepare millet enough! It is such a fabulous grain and only takes minutes to cook!

The aduki beans were something new for me. Have you ever tried them? They remind me of black-eyed peas but with a little more flavor. Definitely a great combo with the sweet squash and nutty/cheesy sauce!

Dinner (7:30pm)
1 cup plain yogurt (strained overnight), 1/2 cup mixed berries,
and a handful of more Autumn Wheat cereal

Wanna know why dinner was so light?

Well, you see, it seems as if my lovely home state of Tennessee has decided that it hates me. Never in my 23 years of living in this state, have I EVER had a problem with allergies…until now!

I didn’t have much of an appetite for dinner, after my afternoon/evening of this:

Yep, that’s right…sick again!

Just be glad this is a vlog post since I totally sound like death warmed over! Rawr!

Now, if you’ll excuse me, I’m going to toss down a few more cough drops, rub Vicks all over my body, take a Benedryl and hope that this will all be gone by Friday! *fingers crossed*

Huminara Sauce

Hey guys! Hope you are all having a fantastic night. I loved reading all of your ideas for your own homemade peanut butters! I can’t wait to try out some of your combos!

Also, the recipe page got a majorly needed update last night. Feel free to take a gander! 😉

So I’m sure you’re looking at the title of this post and thinking…huma-wha?!

Please, let me enlighten you. You see, there once was a collection of white beans and chickpeas that didn’t make the final cut in the dessert hummus auditions. All those little beans dreamt that someday they would become a smooth and creamy hummus…and (on the other side of the refrigerator) there lived a container of tomato puree that envisioned a future as a perfectly seasoned marinara sauce.

*Insert lightbulb!*

I introduce to you huminara (hummus + marinara) sauce!

Huminara Sauce:

  • 1/2 cup white kidney beans
  • 1/2 cup chickpeas
  • 1/2 cup tomato puree
  • 1/2 tablespoon Italian seasoning {edited, originally typed 1 tablespoon…oops!}
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon pepper
  • salt to taste

1. Combine all ingredients in a food processor and blend until creamy.
2. Enjoy as a pasta sauce, pizza sauce, dip for bread sticks, or on a spoon!

I made this from scratch and it was super easy, but for all my Sandra Lee lovers out there, you could always use pre-made hummus and marinara sauce. Which would be helpful if you do not own a food processor. Also, I think the addition of fresh basil would take this to a whole new level!

So what does one do with such a fabuloso creation? You make spaghetti of course!

 

Whole wheat linguine topped with” huminara” and freshly grated parmesan cheese served with a side of steamed broccoli sprinkled with Garlic Gold nuggets.

And FYI, it reheats very well…I had this for my lunch today and it was just as tasty as the day I made it!

Well, I’m off to finish up my Dexter oogling watching so I can get it back to Netflix before the craziness of the move sets in! 3 more days! Ahhhh!
