Ok, so I know I usually post at night, but this morning’s breakfast was SO good I just couldn’t wait to share!!
I love to make my oats “Ashley style” with a combo of oats, oat bran, and flax meal! It makes them soooooo creamy! This morning, I wanted to do something a little different (mainly due to the fact that my avocado is nearing death’s door!)
Sante Fe Oats:
3 Tbsp rolled oats
3 Tbsp oat bran
2 Tbsp flax meal
1 cup of water
dash of salt
1/2 cup cottage cheese, stirred in at end
I cooked the oats up nice and thick on the stove-top and then stirred in the cottage cheese at the end. Then I topped it with avocado, an over-medium fried egg (my fave), and salsa. I added some fresh ground pepper and I thought…Taaaaa Daaaaa! But NO, it wasn’t finished yet…ENTER my new spice friend, guaranteed to add the “kick” every dish needs…
Definitely put this bowl over the top!!
