WIAW: Kabocha Luscious Bowl

Hey guys! Hope you all had a happy humpy day!

I can’t believe the week is halfway over already. One more day of work before Move Day! Eek! I’m so excited/nervous/tired already! πŸ˜‰

I like having a plan. A plan helps to calm nerves. A plan helps to give you an idea of what to expect. Right now, there is NO plan and I’m trying my best not to faaaareeek out!

All I know is that I have a little over 24 hours before the big move (9 of which I will be stuck in the four concrete walls of the hospital and 14-16 hours reserved for z’s) and I still need to:

  • Finish packing the living room, my bedroom and closet.
  • Run a load of laundry…Wait, again? Didn’t I just do that?!
  • Forward my mail, oh and speaking of mail, I kinda I need to go get the new house a mailbox!
  • Call the rental truck company and sign over my unborn child for a gas-guzzling moving-machine

Oh, well, now that I’ve seen it in bullet format, it doesn’t seem so bad after all…NOT!

Ok, enough about that! Let’s move on to happier things…things that HAVE a plan! How about another edition ofΒ What I Ate Wednesday?!

Breakfast (7:00am)
Perfect Protein Oats in a Jar + 1/2 caf of Meet Joe Black

I’m getting a little desperate for ingredients now in the final days of the Clean Out the Fridge/Pantry Challenge. I was forced to get a little creative with my oats this morning since I happen to be out of my “oatmeal making staples” (bananas and milk).

Perfect Protein Oats: (serves 1)

  • 1/3 cup rolled oats
  • 1 cup water
  • 1/2 scoop vanilla protein powder
  • 3 tablespoons egg whites

1. Combine oats, water, and protein powder in a pot on the stove and cook over medium- Β  Β  high heat until boiling.
2. Add egg whites and whisk until cooked through (it will form little egg white swirls in Β  Β  Β  Β  the oats)

I enjoyed my oats in a waning jar of one of my favorite peanut butters (about 1 tablespoon left in jar) and topped with a small handful of Kashi Autumn Wheat cereal and a half cup of thawed frozen peaches.

And of course I had my morning dose ofΒ candy vitamins!

Lunch (12:30pm)
Kabocha Luscious Bowl: millet, aduki beans, and roasted kabocha squash
topped with a sunflower butter/nooch drizzle
Water

I finally got around to making a bowl inspired by Carrie’s “Luscious Bowls.” I loved EVERYTHING about this meal! I honestly don’t prepare millet enough! It is such a fabulous grain and only takes minutes to cook!

The aduki beans were something new for me. Have you ever tried them? They remind me of black-eyed peas but with a little more flavor. Definitely a great combo with the sweet squash and nutty/cheesy sauce!

Dinner (7:30pm)
1 cup plain yogurt (strained overnight), 1/2 cup mixed berries,
and a handful of more Autumn Wheat cereal

Wanna know why dinner was so light?

Well, you see, it seems as if my lovely home state of Tennessee has decided that it hates me.Β Never in my 23 years of living in this state, have I EVER had a problem with allergies…until now!

I didn’t have much of an appetite for dinner, after my afternoon/evening of this:

Yep, that’s right…sick again!

Just be glad this is a vlog post since I totally sound like death warmed over! Rawr!

Now, if you’ll excuse me, I’m going to toss down a few more cough drops, rub Vicks all over my body, take a Benedryl and hope that this will all be gone by Friday! *fingers crossed*

    • Snotmuffin, huh? You’re oh so charming my lady! πŸ˜‰

      The millet reminds me of couscous…only maybe more nutty tasting? And the aduki (sometimes spelled adzuki) beans really taste like black-eyed peas, but not AS gritty texture-wise. I got the millet out of the bulk bin section and the beans were with the rest of the canned beans at Whole Foods. They also had them dry in the bulk bin section, but I am soooooo bad a planning ahead for my meals that I decided to go the lazy girl route and stick with the canned stuff! When you first open the can, the liquid and beans seem kind of goopy. I rinsed them before adding them to the LB, but I think with a little bit of the liquid added in, they would make really great bean burgers…good stickability! And Spabettie says she’s made burgers out of them before!

  5. Oh Heather, I am so sorry you’re sick. I can’t tell you how many people say, “I’ve lived her X number of years, and never had bad allergies until now”. Eventually everyone falls prey to Nashville allergies…I still haven’t succumbed, but I’m sure my days are numbered. I think it’s b/c Nashville lies in a valley, and allergens get trapped in the air. Move to HEAB utopia with me – sunshine all year round, zero humidity, lots of fresh air…and all the kabocha squash you can eat. πŸ™‚

    Still need to try your sunflower seed nooch combo!

  9. aw, gaah, sorry you’re sick! I would totally help you move if I could… I had an aduki adzuki? bean burger at a restaurant and LOVED it… I’ve been meaning to look for them to make my own burgers… need to get on that!

  14. If I lived closer, I would totally help you move. I’m sorry you are sick again. Tony’s parents live in TN and the pollen always gets me when we go during spring time. We are going to suck it up anyway and spend spring break there…hopefully the pollen won’t be so bad in a couple of weeks. I hope you got some rest and feel better today.

    your harried day and some extreme vocabulary ie-faaaaareeeeeking!!!!! out had my gut exercizing happily during reading and afterwards, several times afterwards, thank you for the needed release; others felt the same!! maybe i’ll come back to this date when i need a good hoot. remember to be gentle to yourself, since there is alot happening, rome wasn’t built in a day. i appreciate your exclaiming and explaining the moment(s).
