Carrots & Coconut

Good morning my little marshmallow peeps! Happy Easter Sunday! I hope you are all having a great holiday and are able to spend it with family and friends. And for those of you who gave up sweets for Lent…try not to get too much of a tummy ache! ๐Ÿ˜‰

Pretty sure the kiddos around these parts are going to be hunting for Easter eggs in the dryer and under the sofa today…unless they WANT to take a little trip to Oz…

Yeah, I had a feeling it was you little guys!

When I think about Easter, the first things that always come to mind are carrots and coconut. So I figured today would be the perfect day to whip up a batch of some rich and creamy homemade coconut butter!

Mmmmmm!

As content as I could be just going at this with a spoon, I figured it’d be best to actually have a real breakfast this morning. And what’s the best thing to have for breakfast on Easter Sunday? Carrot Pan-CAKES of course!

I know I’ve never repeated a recipe for Pancake Sunday before, but who could pass up the chance to have carrot “cake” for breakfast this morning? Not this girl!

I followed my recipe from my recipe tab, but since I didn’t have any pineapple juice, I had to improvise a bit…pineapple Greek yogurt anyone? Yes, please!

I also omitted the honey from the original recipe and didn’t miss the sweetness a bit!

Pancakes filled to the brim with carrots, raisins, pineapple, and walnuts…what more could you ask for on Easter…well, other than a little sunshine?

Now, if you’ll excuse me, there is a gigantic mug of ginger tea calling my name! Hope you all have a lovely Sunday! “See” you tomorrow!

What is your favorite Easter candy?
I’ve never been a fan of peeps….I like marshmallows, but I’m sorry, peeps are right up there with the Lollipop Guild on a level of creepiness. :-/

My fave would have to be Reese’s eggs…though I’ve made up my mind that I AM going to try a Cadbury egg for the first time this year…tomorrow, when they go on sale! ๐Ÿ˜‰

  2. The boys love Reese’s eggs. All three of them. That’s what they got today along with jelly belly’s which are my favorite! Happy Easter and I hope the sun shines for you today!

    • Mmm, I just had a couple of jelly belly’s yesterday! Is it weird that my favorite flavor is the buttered popcorn? Everyone always looks at me funny when I say that! Haha!

      And believe it or not, the sun DID peek out for a couple of hours yesterday! Yay!

  3. I’d have to say the Reese’s eggs as well… I am not a Peep fan, although they are cute ๐Ÿ™‚ and the Cadbury’s are way too sweet for me… good call on waiting until after Easter sale!

  4. I LOVE giant Reese’s eggs! I considered buying some this year, but I always feel like death after I eat them. We have cloudy weather here too ๐Ÿ™ Such a bummer! I wanted to eat in my backyard!

    • Death, huh? Wait a minute, how giant are we talking here??

      Boo for bad weather! I’m ready for some sunshine, but surprise, surprise…they’re calling for rain AGAIN today! ๐Ÿ™

    • Hahaha! That’s great! Oh, I needed a good giggle this morning! Early on in our “relationship,” I just couldn’t find it within myself to trust ginger tea…until I tried Yogi. It’s my absolute favorite! All that great ginger taste without that killer bite afterwards! Have you ever tried it?

    Carrots and coconut are one of my favorite combos. They go so well together I think. But then again I tend to add coconut to just about everything ๐Ÿ™‚ Cute post!

    My favorite are mini reese’s peanut butter eggs. Delicious! I’m not a fan of cabury eggs…*shudder*

    You know I love carrot and coconut oh SO much- so I’ll be making these a-sap. With buckwheat or millet flour, that is ๐Ÿ™‚

    • I actually ended up with this jar and another little one (probably about 1/4 the size)! I just dumped the whole container of shredded coconut in the food processor and voila! Though it was more like: process, process, process, scrape, scrap, scrape…voila! ๐Ÿ˜‰

      And you are too sweet girlie! You make me blush!

  20. Growing up I love love LOVED Cadbury eggs, followed by the Reese’s eggs, and then the little candy coated Cadbury mini chocolate eggs. Peeps freak me the eff out!! ๐Ÿ˜‰
