Coconut-Maple Banana French Toast

So it’s only been just over 36 hours since my last post, but it feels like it’s been FOREVER since I talked to you guys!

Well, as of 7:30pm tonight, Heather’s weekend has officially started! And you know I’m super excited for the weekend when I start talking about myself in the third person!

This week has been LONG and EXHAUSTING! I’ve only worked out twice, the house is a disaster, my Google Reader is up to 256, and no matter what time I go to bed, I STILL wake up tired! Bleh! I’m on a mission tonight to get a good night’s sleep if it kills me! <- Hmm, now THAT would be a good night’s sleep! πŸ˜‰ #ihaveawarpedsenseofhumor

This morning, I woke up to the sound of my alarm and took all of about 2 seconds to successfully talk myself out of working out. I justified it by telling myself that I knew we would be busy today and I would definitely get my cardio in…which I did! I swear at one point in the day, I was just a blue blur running down the hall back and forth to the ER!

I played Smurfette at the hospi today!

And I totally rocked that headband for about 2 hours!

Am I the only one that gets a crazy headache from headbands?!

After I finally rolled out of bed, I decided another batch of French toast was in order, but I of course am hardly ever satisfied with the exact same meal twice in a row, so I switched things up a bit!

Coconut-Maple Banana French Toast: (serves 1)
Inspired by Lori’s Smashed Banana French Toast

  • 2 slices whole wheat bread
  • 1 small ripe banana, mashed
  • 2 whole eggs
  • 3-4 tablespoons unsweetened almond milk
  • 1 tablespoon coconut flour
  • 1/2 teaspoon coconut extract
  • 1/2 teaspoon maple flavoring (or 1 teaspoon maple syrup)
  • 1/2 teaspoon cinnamon
1. Preheat a greased skillet to medium-high heat.
2. Divide mashed banana and spread on top of bread slices.
3. Whisk the rest of the ingredients in a shallow dish or bowl (you can consider this a Β  Β  Β  Β  Β  Β  Β mini arm workout since the coconut flour is prone to clumping! ;))
4. Thoroughly coat bread slices on both sides with egg mixture.
5. Place slices in skillet banana side down and cook until golden brown and crisp, flip.
6. Mandatory coconut crepe must be made with residual batter
  • Just pour and flip…easy peasy!

I topped my toasts with melted coconut butter that I watered down to a drizzly consistency, unsweetened shredded coconut, and a few chia seeds because I love those little buggers! πŸ™‚

YPIAJ
(Yogurt Parfait In A Jar)

Fage 0% plain Greek yogurt, Cheerios, dried cranberries and apricots
with a good sprinkling of cinnamon
in a my waning jar of Valencia PB

After the pic, I added a bit of almond milk and stirred it all up to make a

    Headbands always kill my head too. I can only wear them for about 5 minutes.

    I was a smurf fan. Not sure that I had a favorite, but I did watch them.

    Yup, headbands=headache! You look super cute in your blue scrubs and headband–at I see the busy week hasn’t worn out your face–it looks fresh as a daisy! Probably all the delicious and nutritious foods & fats you eat! Love the french toast and yogurt mess! πŸ™‚ I loved Smurfette but I think only b/c she was cute and like the only female (is that right? I really don’t remember much about the actual show). For yogurt, I like to make a yogurt mess too but mixing in fresh fruit and some crunchy cereal like fiber one or Kashi golean or something similar.

  7. Headbands always give me a headache. But for some reason, I still wear them everyday – easiest hairdo ever! The french toast looks incredible!! My fave yogurt toppings are granola, fresh fruit, and chia seeds. I LOVED the Smurfs! My fave was Dreamy Smurf πŸ™‚ Wait – was that his name? The one that was always falling asleep and dreaming? Sounds right…

  9. I think I feel the EXACT same way that you do!! I’ve only worked out about 2x in the past 10 days and it only takes about 2 seconds for me to talk myself OUT of going to the gym!! After all, I walk up and down the stairs at work all day…

    Too bad we don’t live close to each other… We could push each other out the door!!

    • I just try to remember how great it makes me feel afterwards and how crappy I feel if I go too many days without it! Luckily, I got a great workout in today and now I’m pumped for a run tomorrow! It’s all about balance!

  10. ahhh i hate headband headaches! and the worst is after the 2-3 hours you can comfortably wear them you get a big crease in your hair. so it’s “do i walk around with a dent in my head” or “do i walk around with a giant headache.” it’s quite the conundrum.

    • Oh yeah, rocked the dent in the hair for a couple of hours and then ended up just suffering through the headache for the next few hours until I got off work, got in the car, and threw that stupid thing in the back of the car!

    Why oh why haven’t I bought coconut flour yet? The Smurfs always kinda freaked me out so I avoided watching them. I actually don’t eat yogurt all that often anymore but I used to love it with bananas, almonds and a drizzle of honey.

    • It took the cheapskate in me a while to breakdown and get some, but now I can’t imagine my kitchen without coconut flour! It’s so versatile and a little goes a LONG way! I love it!

  16. YES! Headbands always hurt my head. But then I forget the pain and try to wear it and end up having to lose it halfway through the day–and am left with a weird kink in my hair. Awesome. πŸ˜‰

    • Oh yeah, totally rocked the dent in the hair look for a couple of hours and then put the headband back on and just dealt with it! Oh, the sufferings women endure! Haha!

  21. I always get headaches from headbands, but I love them so much. The Smurfs…I guess Papa? I used to watch them all the time, but I can’t remember their names. I do remember Gargamel and his cat Azreal or something. I could google it, but I’m too lazy.

    Favorite yogurt toppings…crunchy peanut butter and something chocolaty and warm – a crumbled muffin or cakey type thing.

  25. That French toast looks so good! YUM! I loved the smurfs as a kid. I remember waking up on Saturday mornings and being so excited to watch it. The kids have cartoons 24/7 now. I think that kind of ruins the excitement of it now. I hope you had a great weekend!
