WIAW: Nothin But the Best!

Hello loves! It’s time for another What I Ate Wednesday here on your favorite broccoli kissing blog!

Let’s get this party started!

Just like last week, this post is actually a WIAT, but bear with me for posting time purposes! Plus, this was one of the tastiest WIAWs yet!

Breakfast Appetizer (6:45am)
1/2 caf coffee & “candy”! 😉

Breakfast (7:00am)
Cake Batter French Toast (recipe coming tomorrow!)

I packed a banana for a mid morning snack but was surprised to find that this breakfast kept me satisfied for a full FIVE hours!!

Lunch (12:00pm)
Burrito wrap and carrot sticks

What’s in a burrito wrap you ask?

Pure deliciousness!

Cilantro jalapeno wrap with hummus, avocado, salsa, red onion, tomato, bell pepper, a sprinkling of some real cheddar cheese and of course

Mrs. Dash Crack!

I swear this was one of THE best wraps I’ve had in a long time! The perfect combo of ingredients…tasted just like a leftover burrito!

Snack (4:00pm & 6:00pm)
Half a Luna bar pre-run and half post-run

Lovin’ this new-to-me flavor!

Dinner (7:30pm)
Leftover Apple Maple Tempeh Burger
Honey Butter Greens
and
Cinnamon Roasted Kabocha

I simply sautéed up red onion slices and some of the ginormous bag of turnip greens I got from the farmer’s market in a tablespoon of the raw honey butter (also a purchase from the market) and threw in a dash of nutmeg to finish it off. The sweetness went perfectly with the leftover tempeh burger and the roasted kabocha squash!

If you’ve never added nutmeg to greens, you HAVE to try it! It really takes the flavor of the dish to a whole new level!

I’ve gotta give myself some props for making this plate last nearly 30 minutes! I’ve been trying to focus on slowing down during meal times and I’m happy to say that this was one of the most relaxing and enjoyable dinners I’ve had in a LONG time!

Bedtime Snack (10:15pm)

I also had…wait for it…4 1/2 liters of water from my Camelbak bottle! Say what?!

    The wrap sounds really, really good! I’m just going to pretend I didn’t even see that french toast.. otherwise I would make it everyday and eat way more than I should. haha!

    What do you put in your coffee? Is that cinnamon on top?

    • Yes ma’am! I used to use creamer in my coffee and then I switched to almond milk and cinnamon. One day I was out of milk so I just had it with cinnamon and then I became addicted! LOVE it!

      Haha! I’ve been eating French toast everyday for 4 days trying to get this recipe down!

  5. Cannot handle that breakfast photo. I want all your eats! I’ve been craving Mexican lately too and I could use a good old burrito! Alsoo question: do you ever have dessert after dinner? Delishhh eats as always love!

    • Typically, I’ll have “dessert” maybe one day a week. I usually have a cup of tea or some decaf coffee later on in the night so I don’t get too snacky. I don’t keep treats in the house because I have a hard time understanding the definition of “portion control” once I get the nibbles so IF I do have a little treat I usually go for a microwave bake like Deb’s protein cake, fruit, or Greek yogurt. Sometimes I add a little bit of dry cereal to the yogurt for some crunch because I’m a texture junkie! 😉

      Example of why I don’t keep treats/baked goods in the house: Remember those dessert hummus balls I made on Friday? Well, they were gone by Monday…and remember, I live alone! Hahaha!

  6. There are so many delicious things I want to comment on…most notably, I need some of the cake batter! Secondly, I will now be attempting a Maple-Apple Tempeh burger at home (perhaps in time for Memorial Day?)…and I, too, have been pleasantly surprised by the flavor of the Lemon Zest Luna. It’s lighter than others–great for hot weather. There is a new Lemon Meringue Balance bar I’ve been wanting to try (but mostly because Balance Bars are pretty much candy bars in my opinion.)

    • I was shocked because I don’t normally go for lemon flavored foods….I don’t like lemon cookies and I’ve NEVER seen the fascination with lemon meringue pie, but this was on sale and I thought I’d give it a try. So glad I did! It was almost too sweet, but definitely tasty and worth buying again!

      I just finished up the last leftover burger and I think I may have shed a tear! 😉

    I’m trying really hard not to think about that french toast but I’m dying for the recipe.

    considering I’ve only eaten one meal today – I guess I’ll have to go with breakfast! a pancake omelette 🙂 (I know, sounds bizarre. I’ll divulge the details on my blog later! )

  8. I love seeing what people eat and totally understanding where they are coming from with food. I could totally eat with you and I don’t say that to many people. This looks like a tasty day!   9. I love how everything looks and tastes better with colored sprinkles. That cake batter french toast looks deeee-vine. And I’m even more impressed that it managed to hold you over for so long! I’m usually gnawing my arm off after a few hours.

    Best thing I ate today (or Tuesday since it’s first thing in the morning)? A panini’d apple and cheese sandwich. Mmmm. I’d kill for some leftovers from that meal, that’s for sure 😀

    We made steak spring rolls for dinner last night (still trying to use up leftover steak from graduation on Friday) that were delicious: steak, jasmine rice, cilantro and green onions with sweet chili sauce…yum!

    No, it really is leftovers that make the world go ’round. My world at least! I purposely make extras for dinner so I can not have to worry about lunch the next day! Can’t wait for that cake batter recipe, it looks so fun!

    Today I made a delicouse salad of ruccolat, avocado, mango and macadami nuts with limedressing. That was so tasty, and my favorit meal today for sure! I havent been able to post my WIAW today though, but I will post my meals tomorrow instead!

  36. I love leftovers! It’s so nice to open the fridge and see a delicious meal looking back at you. Since I love leftovers, and love makes the world go round, I think it’s safe to say leftovers make the world go round too 🙂

    I love the addition of nutmeg to your greens- I’ve never tried that! I haven’t had cooked greens in so long because the smell nauseates my family. Spinach smells pretty gross when it’s cooking!

    • So true! What is it about green vegetables that they put off the most awful odors when cooking! I get the worse looks at work when I cook broccoli!

      I like your train of thought…leftovers rule!
