The Best [Breakfast] Sandwich Ever!

Hey guys! Hope you all had a great time at the What I Ate Wednesday Party yesterday! You know, I heard that Ollie Oats and Peggy Peanut Butter got caught in a pretty “heated” situation back behind the bleachers…I just hope Johnny Jam doesn’t hear about this…

Speaking of oats, lately I’ve been a bit disappointed with my oat creations for breakfast, so instead of trying for like the third day in a row to create what in my mind tastes like a trip to Disneyland, I decided to forego the oats altogether and go for something completely different.

BEST.DECISION.EVER!

  3. Oooohhh yum! I have been eating an egg on toast with salt, pepper, ketchup and Tabasco, but girl, your creation certainly knocks mine out of the water! Why didn’t I think of hummus with eggs sooner!? and broiled portabello? mmm

  5. Yum! That looks awesome 😀 I don’t think I have a favorite breakfast sandwich 🙁 Except maybe peanut butter and banana but I think that may be too boring to count, haha. That needs to change though. I’m making bread tomorrow, I am totally in a sandwich mood now.

    I love Portabellos any way I can get them! That sandwich is very creative and super duper delish! I think hummus goes with just about anything.
    I dont really eat breakfast sandwiches so I dont have a favorite. But if I did, I’m sure it would involve eggs, jam, mushrooms, cheese and turkey bacon.

    This sandwich looks phenom! I love an egg sandwich, on an english muffin. Throw on some feta cheese, cracked pepper, tomato, perhaps some ketchup. Yum!

  9. I loooove egg sandwiches with hummus and tomato…and I can only imagine how good it is with spinach and a portabello, too! Yum :] That said…I can’t “do” savory for breakfast anymore…but I’d have this for lunch or dinner in a hot second 😉

  14. Oh wow, that IS a masterpiece! I LOVE hummus on sandwiches but I’ve never tried it with egg! Great way to get a protein boost! I need to buy some bread so I can try this! haha

    My favorite bfast sandwich is a plain old ham, egg (over easy (or over sleazy as my husband calls it)), and cheese on an everything bagel!

  17. That looks delicious! As I was preparing the hubby’s lunch today (hummus and cucumber slices, among other things) I licked the spoon when I was done and thought, hummus for breakfast would actually taste pretty good. Looks like you were one step ahead of me on that one 🙂

  27. The only breakfast sandwich I’ve ever made involves lots of sweet stuff- bananas, maple syrup, and peanut butter! Yummmm. This looks delicious, although I would definitely eat it at lunch. I have a hangup about eating veggies before noon- I know, I am weird 🙂

    This was a really good sandwich!
    I never realized how much hummus would bring to it…
    Sadly, I couldn’t “noochify” it – I couldn’t find nutritional yeast so bought dry active yeast instead, soon to realize I couldn’t even used it 🙁

      Oh no! Yeah, nutritional yeast and active dry are totally different animals! Usually, you can only find nutritional yeast in health food-type stores. It takes a little getting used to, but the best way to start out with it (in my opinion) is mixed in hummus. If you’re having a hard time tracking it down though, I’d be more than happy to zip you up some in a baggie and mail it to ya! That way you can give it a try without having to buy a whole container. Just let me know!

    Could this be made celiac-friendly by using mega-portabellos as “the BREAD”?!…Absolutely gorgeous mix of color/ingredients…a perfect combo that screams “get out of bed!”…At least….for me personally!!

    An aside….I simply LOVE your haircut (on your blog photo) and am shamelessly going to take it to my hairdresser here in France to see if she can possibly duplicate it…Sooo pretty and not the usual “coiffure” you see in this vicinity!…

      Of course! That or you could use any type of gluten-free bread alternative…or maybe even socca flatbread!
