What I Ate in a Hurry

Hey lovelies! I hope you are all having a marvelous week so far! Can you believe it’s already time for another What I Ate Wednesday Party? Well I can’t…but that’s no surprise given my present absent condition! I finally got a chance last night to read your comments on the Pancake Sundayย post! Thank you all so much for your sweet comments! You really know how to stroke this girl’s chef ego! And here I was thinking I’d lost my touch! ๐Ÿ˜‰

Anywho! Let’s get this party started shall we?

Breakfast (6:30am)
Golden honeydew melon with Kashi Go Lean (I promise it’s in there), 2% plain Chobani, and granola

Black coffee with ma’ vitamins!

FYI: Melons do NOT make the best take-and-go breakfasts! I was running a tad bit late today and had to rush out the door with my melon. Anyone see me? I was the weird girl driving with her knee and slurping on a melon on the interstate!

ย Snack (10:30am)
Cinnamon Roll Larabar: One of my (almost forgotten) favorite flavors

Not gonna lie, this bar was gone in three bites…such is the life of a busy hospital worker!

Lunch (12:30pm)
“Un-salad”, horsey hummus, Barney Butter, and a super juicy peach!

Yeah, remember how I said I was running late? Well, this is what happens when I open up the fridge and just start throwing things in my lunchbox! Lol

And yes, that would be a whole tomato included in my lunch!

No shame!

{Insert GLORIOUS nap right about the time I normally have my afternoon snack}

I was feeling extra tired today, so I decided to take my rest day and have a day of REST!
Best.decision.ever. Sometimes you just gotta listen to your body, right?

Snack (6:30pm)
I woke up with the hugest craving for chips and salsa

Since I haven’t bought a bag of chips in I don’t even know how long, I just sliced up two corn tortillas and threw them in the oven for a couple of minutes until nice and crispy. Reminded me of my teenage years when I could AND would polish off a bag of chips and a jar of salsa in a weekend!

‘Twas delicious!

ย But what REALLY hit the spot was dinner…

Eggplant, red onion, and black olive pizza with parmesan cheese and fresh basil
on a TJ’s whole wheat crust

Dinner (8:30pm)
2 slices pizza and spinach salad with purple bell pepper, tomato, & balsamic vinegar

I’ve been craving pizza for over a month now but every time I thought to make it, I was out of something…cheese, sauce, dough…tonight I had them all…AND I found a use for my sorry looking eggplant!

And the best part about this dinner? It was ready in less than 30 minutes! Made and eaten in enough time so that I could go meet a friend for a game of late night trivia at our local pub brewery.

What’s the strangest thing you’ve eaten or done in the car while driving?
I have to say I was pretty talented this morning with my melon munching, but I’d say the thing that tops them all was when I changed clothes one time while I was on my way to work [let it be known that this was in my younger “I am invincible” years…I do not recommend it!]

    That pizza looks absolutely to die for! Basil pesto sabra?! I’ve never seen it. Must. Find.
    My TJ’s doesn’t sell that horseradish hummus. I think I’m going to have to make it myself

      Oh I know I’m going to be making my own…I’ve only had the container for 4 days and it’s almost gone! Can’t really justify paying 2 bucks for the store-bought stuff when I know I can just make it myself…and the best part? You can decide for yourself the amount of horsey “kick”! ๐Ÿ™‚

  3. No shame in bringing a whole tomato in your lunch- i’ve been known to do that with whole bell peppers. It’s the “cool” thing to do these days. Well, for foodies, that is ๐Ÿ™‚

  5. That pizza looks amazing! I need to start tracking my water consumption. I know it’s way too low some days. Do you have goal amounts, or do you just keep tabs on it very generally?

      Ideally, I like to aim for a gallon (roughly 4 of my Camelbak bottles) a day, especially on workout days and when it’s exceptionally hot outside, which surprise! has been every single day here lately. I’ve been slacking on the water front lately, but I know that since I started using my Camelbak, it’s been a LOT easier to track!

    Also, I LOVED seeing that you, too, use your melons like bowls. I then had to laugh, because once I tried to eat a quarter of a watermelon while driving. Now THAT was a sight to behold…

    That pizza looks fabulous. I’m a huge fan of homemade pizza. Dare I say it’s better than restaurant pizza? Oh, I dare. I would be a huge sloppy mess if I ate the melon in the car. I went through a stage in high school where I would only use my left foot when I drove. I have no idea why…

      Oh yes, homemade pizza > restaurant/delivery by far! Plus homemade pizza never wrecks havoc on my digestive system! TMI? Eh! ๐Ÿ˜‰

    Everything looks great! I can’t believe that was your to-go breakfast! I can’t imagine trying to drive and eat that thing!

    Sometimes I throw random stuff in my lunch bag when I’m running late. I’ll have a whole avocado, pita bread, crackers, carrots.. just random things. Haha :]

    The pizza is making me hungry! I need a pizza sometime this week I’m thinkin’.

  19. hahahaha I love that you ate your breakfast in the car IN a melon. That literally made me laugh out loud. I suck at grab-and-go breakfast. I need time to sit and eat it! Unless its a smoothie, then I can sip on the go! But even then I like to scoop pb on the side… haha

  21. Changed clothes while driving too! I agree, not the brightest move on my part. Last thing I ate in the car while driving was my pb sandwich on my way to my 10k. Lol.
    That pizza looks so good and healthy! I love homemade pizzas. I just got to figure out how not to burn my toppings while not getting a soggy unbaked middle crust.

      The Trader Joe’s crust I used wasn’t a problem…I think it really depends on how thin you roll it out. But you could also try pre-baking or even grilling your crust first and then adding the toppings!

  22. Mmm Larabar! It may have been difficult to eat in the car but your breakfast looks great, taste and presentation-wise ๐Ÿ™‚

    I prepared some edamame (in the pod) and was surprised to discover how hard they are to eat and dispose of while driving! Next time I’ll buy the shelled variety!

  23. You name it, I’ve eaten it while driving! I try to stick with things that don’t require utensils- that can be dangerous, haha. Now I need to work on eating and biking at the same time ๐Ÿ™‚

    I NEED to find that Sabra hummus! I’ve only seen plain and spinach and artichoke near me. The basil pesto looks amazing!

      They just started stocking the basil pesto flavor at Sam’s and I snatched it up 2 milliseconds after spotting it! Maybe they’ll have it at Costco?

  26. Omagosh I don’t know which one I want to eat more… the chips and salsa (addiction!) or your pizza. Probably the pizza because it looks absolutely amazing, but I used to be able to polish off a bag of tortillas and a jar of salsa in a few days, no problem. They’re just so darned tasty!

    And I can’t believe you drove with a melon in your hands ๐Ÿ˜† If I tried that, it would probably be all over the passenger seat of my car.

    Ohhh yummm, so THAT’S the eggplant pizza you were talking about. Wowie that looks delicious! I love making my own pizzas at home. I made one the other night with an eggplant puree as a spread for the bottom. Turned out really yum. Btw I’m picturing you driving with a melon in your lap and it’s def got me in stitches. lol ๐Ÿ˜‰
