WIAW: Still Chugging Along

Guess what time it is!

WIAW: Edition numero 2749

It’s hard to believe I’ve been doing WIAW posts for over 6 months now! What’s even harder to believe is that I’m still not bored with them yet…and that’s saying a lot since I have selective ADD…oh look, a puppy!

Annnnnnd since I know you guys also love me for my foodie photos, how bout we get this party started?

And as always, a big thank you to the beautiful Jenn of Peas & Crayons for being our hostess with the most-ess!

Pre-Run Fuel (4:45am)
Big fat Mejool date stuffed with sunflower seed butter (my newest favorite combo!)

Breakfast (7:45am)
Deconstructed yogurt parfait: French Vanilla Chobani, banana, cinnamon Puffins, carob chips, thinned Mighty Maple PB, and a sprinkle of chia seeds

And of course I had my daily cuppa Joe!

I’ve actually been loving coffee lately sans cinnamon. Been drinkin’ it black…like a soldier…well a soldier that has refined tastes and access to Starbucks caramel flavored coffee! 😉

As always, breakfast was quickly followed by “dessert”

Snack: (Grazing throughout the day)
The sweetest juiciest organic carrots I’ve ever had…by the fistful!

Lunch (12:00pm)
PB oats with 2% Cottage Cheese, BBQ seasoning, and FROG preserves.

If you’re getting tired of seeing this combo pop up all over the blog, I’m sorry, but I’m afraid it’s not going anywhere any time soon…it’s just too darn tasty!

Snack (4:00pm)
My last peach from the farmer’s market. So juicy that I had to hold it over the sink to eat!

Yeahhhh buddy!

Snack (5:00pm)
Cookies ‘n Cream Luna Bar

I’m working on trying every flavor of the Luna Bars…so far, none can hold a candle to the Peppermint Stick flavor!

Water Consumption: 2.5 Liters

Dinner (7:45pm)
Stir Fry over spinach

I had some bell peppers, onions, and yellow squash leftover from this weekend’s barbeque so I sauteed them in a skillet with some sesame oil and added some Bragg’s liquid aminos (soy sauce) and dijon mustard. Then I mixed in some (pre-packaged) seitan, added a few diced tomatoes and some sesame seeds.

Mmm, mmm, mmm!

Confession: 

Trips for “Milk & Yogurt” end up like this far more than I’d like to admit!

This is my loot from a few weeks ago! First time ever buying seitan…now I think I’m in love! Definitely going to be looking into making some of my own very soon!

What are your favorite stir fry ingredients? Veggies? Sauces?
Just about every stir fry I make starts out with peppers and onions, but I love adding sugar snap peas and carrots and peanut sauces are my absolute fave!

  2. Peppers and onions are a must in a stir fry – I also love traditional bean sprouts and leftover cooked pumpkin – yummy!

    That is my favorit favorit way to eat bananas!! Only that I just use nut butter and some kind of berries! It is one beautiful meal either way 😉
    Stir fries are so good! First of all, I need to use coconut oil for the frying- gives such a wonderful flavor. I love sugarsnaps, broccoli and tofu and nudon nuddles, and some kind of seaweed in them. SO yum!

  4. I saw your post and immediately thought “crap! it’s WIAW!” Totally snuck up on me! Not sure if I’ll have time to do one too 🙁
    Anyways. You go with those sales! I wouldn’t be able to just run in for milk if I saw mega-sales going on, either!
    Love the deconstructed parfait, too. Similar to what I’ve been swearing by for breakfast…I swear it’s 10x more gratifying to eat a banana off a plate with a spoon…

      Not gonna lie…I totally got the idea from you! Though I wish I had had the foresight to make some of your chia pudding to go on top! I still haven’t tried it yet!

  7. Yum, all of that looks delicious, especially the banana split breakfast, I already have one planned for breakfast tomorrow! As for stir fries I love crunchy broccoli, pak choy and ginger and soy sauce is always a must!

    Have you tried the White Chocolate Macadamia Nut or Chocolate Dipped Coconut Luna Bars? I like those the best.

      I’ve tried the Chocolate Dipped Coconut (which I thought was good, but I think I was expecting more “in your face” coconut flavor) but I haven’t had the White Chocolate Macadamia Nut yet. I’ll have to look for that one!

    Manager’s Special – HOLLA!!! haha! I *love* seeing those bright orange stickers when I’m at Kroger’s. It’s always on the natural foods too because no one in my area wants to eat those.

    Your photos are so great and I’m lovin’ the deconstructed yogurt parfait! And you are hardcore for getting up at 4:45 for a run.

      Curiosity is what got me to try it! I kept seeing it on Jessica’s blog until I couldn’t take it anymore…I just had to see for myself. It works best with lighter jams like peach, apricot, or raspberry. Let me know what you think if you give it a try…I’d love to welcome another to the “dark side”! Lol

      Good to know I’m not the only “weirdo” whipping out a bowl of oats for lunch! I ate this bowl cold, but I swear the one day I made oats in the microwave at work, I got about 1/2 a dozen people looking at me funny! *eye roll*

      Thanks girl, it REALLY helps that I’m meeting up with my friends when I get up that early…not sure I could keep it up if I was doing it alone!

    Apparently I need to try Luna bars! I’m bar dependent for work snacks so I don’t know how it’s possible that I’ve never had Luna before. Are nut butter dates not the best pre-work out fuel ever?? I’m in love with that combo, it’s just so doughy tasting! I haven’t had stir-fry in so long. I swear, it’s always the simple meals I forget about.

  20. My stir fries always start with onions and whatever else i add varies drastically. But I do love me some peppers, or mushrooms, or let’s be honest I love every vegetable imaginable 😉

    Also, seitan is DELICIOUS. I bought vital wheat gluten back home so I could make it but um, that hasnt’ happened. Ooops…

    Hi – I love your blog. I am usually lurking but decided to post today.
    First off – I have been seeing the dates with nut butter for awhile and really need to try this combo. Everytime I see it my mouth drools.
    You’re deconstructed parfait is lovely – Wish I could eat yogurt – I cannot have it or any kind of milk. It messes with my stomach too much.
    Can’t wait to try the Peppermint Stick bar – have never had that flavor – Hopefully I can get it in my area.
    Stir fry is one of my favorite meals to make at home. I love any kind of veggie – from Celery, carrot, onion, brocolli, green beans, corn – the more the better. Of course I still eat meat ( in moderation) so usually grilled and marinated lean meat to go with the stir fry. And of course any kind of rice for the side.

      Aww, thank you so much for “de-lurking”! You just made my night! You HAVE to try the date and nut butter combo…I swear it is life altering! 😉 I assume you mean that you are lactose intolerant…have you ever tried soy yogurt? Or I heard So Delicious just came out with coconut milk yogurt that’s supposed to be preeeeety tasty! I’ve yet to get my hands on some of it, but I can imagine…mmm!

      Can you believe I’ve never actually made a stir-fry over rice? Not sure why, but I always forget about it…and well, I’m also lazy and unless I have some of the quick cooking stuff, I know I don’t have enough commitment to wait 50 minutes for rice to cook! I love using soba noodles though…that’s probably my absolute fave!

    And I like any kind of veggie/meat/tempeh/tofu/whatever else I can throw i, but PEANUTS make the stir fry.

      I agree! I LOVE adding peanuts!

      Honestly, I can’t believe I was up either…especially since I kinda lost track of time the night before and didn’t get to bed until 11:00! Whoops! Not sure what’s been up with me lately, but I really haven’t minded getting up early for my workouts. Funny, because just a few months ago, I was complaining about never being able to do it!

  28. Oh I’m so all over your lunch. You know I love me some sweet and savory oats 😀 I haven’t tried the BBQ thing yet, but I have a good excuse… I don’t know what kind of seasoning to use! Any recommendations?

    As for stir fries, I love adding bell peppers, mushrooms, onions, garlic, and carrots, with a whole bunch of soy sauce and sunflower seed butter mixed in.

      Ohh, I’ve never tried a stir-fry with SSB! That’s sounds great! As for the BBQ seasoning, I use what Jess uses, McCormick BBQ seasoning. I think it’s the perfect balance of sweet, spicy, and smokey. Can you get that brand in Canada? If not, let me know! I’d be glad to send you some! 🙂

  31. bahahah I take those SAME gummy vitamins!!! (The square ones are calcium, am I right??) LOVE it. Although, now when I eat regular gummy bears, I feel like I’m eating vitamins. It doesn’t happen often, but it happens.

  36. That banana yogurt combo looks delicious! I had something similar today- with bits of plain yogurt flavored with vanilla, chocolate, and strawberry. Loving it! Banana split parfait 😉

    Your eats look so good! I’ve never been a huge fan of carrots, but the ones you got sound way better than anything I’ve ever gotten!

    My absolute favorite stir-fry ingredient is: mushrooms! Love love love them, especially cooked into the sauces. I’ve not made my own stir fry before so I’m not sure what kind of sauce they use at the place in my college’s food court, but oh my gosh is it good with brown rice and those ‘shrooms!
