WIAW: Quick, Easy, & Delicious

Hey guys!

Well, it’s that time of week again…yep, time for the latest edition of
What I Ate Wednesday!

As always, a big THANK YOU to the lovely Jenn of Peas & Crayons for putting this party together for all us foodies each and every week!

This week, I’ve been doing things a little differently.

I’ve actually gotten up each day this week and been at the gym by 6:00am! The only drawback? Less time for snoozing and being lazy before I have to leave for work by 8:30 am…

A cup of coffee pre-workout is not usually my thing, but 5:30am on a Monday morning sometimes requires routines to be changed up a little.

Once I got home, it was a mad dash for the shower, into the kitchen for cup of Joe numero dos and one of the best yogurt bowls I’ve made in while!

And the final masterpiece…before it was all stirred up and eaten in the car on the way to work!

What? You guys know I’m no stranger to seemingly non-portable breakfasts in the car…oh yeah, my knee driving skills are top notch! πŸ˜‰

Lunch was leftover Greek Lamb Burgers with Tzatziki and a side of steamed asparagus and oven roasted potato chips.

Just as delicious the next day!

Latest snack obsession: pistachios and citrus

I actually picked up a HUGE bag of pistachios at Sam’s Club for the first time the last week and now they are my go-to snack. I never thought they’d be worth the work to break open each.and.every.one, but boy was I wrong!

Citrus for the day was a Honey Tangerine!

Anyone tried these babies? They are amazing…so sweet! πŸ™‚

After a very LONG day (10 hour shift full of pure craziness), some leftover spaghetti squash came to my rescue for dinner.

Remember those vegan burgers from that amazing cookbookΒ review I did back in the summer?

Since they freeze outstandingly well, I had something quick on-hand to toss on top of my faux-ghetti! Topped with a little bit of crushed tomatoes (from a can) mixed with Italian spices, garlic, salt & pepper and I had a wonderful filling meal in all of about 10 minutes!

And get this! I am ROCKING the water consumption lately!

I filled this 500mL (16oz) bottle up EIGHT times!!
…and I peed about EIGHT THOUSAND times! πŸ˜‰

  2. I always try eating non portable breakfasts while I’m driving..it doesn’t always work out so well lol..that breakfast combo sounds amazing though! the passion fruit flavor is my new favorite chobani flavor!

  3. They laugh at me at work cause I drink so much water and tea I’m in the bathroom all the time! I really wish places had spaghetti squash, I have a huge craving! Best thing I ate today was some vanilla courgette bread oats topped with cranberries, pecans and maple syrup!

      Oh wow! Those oats sound fantastic! I’m seriously drooling…and I just finished my breakfast! Haha!

      And I agree, we need to start a petition for restaurants to start serving spaghetti squash…and keeping nutritional yeast on the table next to the S&P! Haha

  4. I love the looks of those burgers. I’m not a lamb eater but burgers with tzatziki sound perfect though…my mouth’s watering.

    I ate a granola bar in the car the other night out of desperation. I keep them all over — glove compartment, backpack, purse, etc.

    ugh. Some times I have to go to the bathroom twice in the middle of the night. I suppose that’s the price you pay for proper hydration! πŸ˜‰

  7. I ate pumpkin oatmeal in the car on Monday and I’m not proud of my driving skills while eating anymore. I am sadly out of practice. I’ve been out of bean burgers for months now. I need to fix that ASAP! Dang your eats look amazing!

      Haha, it definitely takes a bit of practice, huh? My stash of burgs is running pretty low. Since I didn’t prep much for lunches this week, I’ve been getting creative and raiding the freezer! Yesterday I just had a bowl of crumbled burger with a cup of steamed edamame mixed together with Bragg’s and nutritional yeast…you do what you gotta do! πŸ˜‰

    Dude, pistachios are the best – a large bag is SO dangerous around me, I will sit for hours, opening and eating them…. cannot stop munching them. My consumption was out of control when I was pregnant, salty joy.

  12. What did you think of the Passionfruit Chobani? I thought the seeds were kind of annoying! They weren’t really easily chewed :c

      I thought the texture at first was a little different, but I guess since I had so many other things combined with it in my bowl, after I stirred it up, I couldn’t really tell. Love the flavor though! And a friend of mine said it’s great in an avocado smoothie…I think that’ll be my next experiment!

    The best thing I ate today was Broccoli Cheese soup from Quiznos and the last thing I ate in the car was an Egg McMuffin without ham this morning.

    Is Passion Fruit a new flavor of Chobani????

      Yes ma’am! One of three that I know of: Passion Fruit, Blood Orange, and Apple Cinnamon. I’m still searching high and low for the Blood Orange, but so far the other two have been definite winners!

    Best thing I’ve eaten today was my tuna sandwich that I shoveled into my face 2 seconds after I got home from the gym. I was starving and I swear nothing has ever tasted so good to me haha!

    6 AM!?!?! (looking over that again to avoid the anchovy/artichoke mistake again lol) you crazy, girl. I don’t even get up before 7. I think you should be lending me a percentage of your self control. You obviously have enough to share. I always love getting there super early; A) no scary sweating muscly men staring at you B) it’s quiet, but c) nobody to internally-race-the-hell-out-of-with. What’s the point of the rowing machine if there’s not someone next to you getting really annoyed that you’re being obviously competitive? Hahah, I must piss everyone off so much. It’s such fun though. I never eat in the car…I had a really bad experience with a speed bump, a large glass of soy milk, and a completely stained dinner dress. (I looked so hilarious though. And grumpy.)

      Ah, but the self control comes and goes…I’m riding it out now hoping that it lasts a while since it’s the most committed I’ve been since the first of the year. I totally get your points! LOVE that all the meat heads are still in bed, but actually, I was quite surprised yesterday when I got there…it was the busiest I’ve seen it in the early morning hours. Hmm, wonder if there’s some sort of Wednesday morning reward system I’m not privy to… πŸ˜‰

      And yeah, I’m pretty sure I’m tempting the fates with all the stuff I deem “edible road fare”…one day I’m sure it will blow up in my face…or should I say in my lap?

  18. I just found the new flavors of Chobani the other day and I can’t wait to try them all out! I am aiming for 100 ounces of water every day and I’m in the bathroom 5 million times a day, it’s crazy!
