New Breakfast Pizza & Green Eats

Hey loves!

I hope you all are having a great week so far…sorry I went a little MIA on you guys. BB and I had a busy yet FUN weekend and well, I guess it took me a couple of days to recover! Lol

So, it’s already that time of week again…time to bring out our very best foodie photos and inspire others to get in the kitchen and create drool-worthy food of their own!

And our lovely Jenn just came up with a new theme for the month of March…

I am MORE than excited for this month’s weekly parties…

Not only because green is my favorite color, my signature veggie is a broccoli, and I’m part Irish, but because including more greens into your diet is incredibly easy and so much fun once you get to experimenting.

I can’t wait to see what everyone comes up with!

Ok, enough rambling, how about we get to the goods?

After I got home from the gym yesterday (day 23 of the LiveFit trainer…woo hoo!), I was craving protein in a major way and what better way to get a good dose of healthy protein but to whip up a Breakfast “Dessert” Pizza?!

This time I used cream cheese as the base instead of peanut butter (for obvious Lenty reasons) and swiped on a bit of pumpkin butter before adding some banana slices, dried cranberries, and coconut.

I swear it was even BETTER than the original version!

For lunch, I had a salad of spinach, mushrooms, and carrots and topped it off with a big ol’ spoonful of salsa.

But that’s not all I had…

I’ve been on a bit of a hot dog kick since I picked up these chicken onesΒ again from Trader Joe’s over the weekend (grocery post soon to come).

Yesterday I remembered to pack some bread in my lunchbox…the day before, I sorta forgot and had to get resourceful…

Enter leftover taco shells from our Mexican themed potluck a few months ago!
(don’t worry, they were still sealed…I’m not THAT desperate)

I have to say, the “taco” dogs weren’t bad, but there’s nothing like sinking your teeth into soft fluffy bread.

Mmm, carbs!!

Snacks throughout the day included some of my favorites:

Honeycrisp apple, individual Smart Pop popcorn, and my latest Luna bar steal…I got 6 of these babies marked down for 49 CENTS!

I’m working my late shift this week, so by the time I got home around 7:45pm, all I wanted was dinner in my face in 15 minutes or less.

It took 17 minutes.

Another TJ’s find: Pesto-marinated chicken breast, sweet potato topped with avocado and steamed broccoli

Think I could’ve gotten any more green on that plate?

Wait, I know my audience…don’t answer that!

    Guac stuffed sweet potato sounds like a delicious creation!! I will be following suit. Broccoli is also my go-to veggie. I crave it… mmmm. πŸ˜€

  7. I’m a spinach sneaker. I sneak it into everything! Especially smoothies. I’ll also bury steamed broccoli under my pasta, and then the spag sauce gets on it and I forget I’m eating vegetables with my bowl of carbs πŸ™‚

  8. Okay, this is going to sound sort of weird, but I’m jealous of your broccoli. Steamed broccoli > chocolate (on some days.) If you make it right, it’s freakin’ fantastic.
    And on your sandwich dog, when I was a little kid, my parents never bought buns. So we always used a slice of bread, clumsily folded together in a sort of makeshift bun. Not as good as regular buns though.

    I like to green up my meals by having roasted broccoli or kale chips as a side.

    So glad you’re doing the LiveFit Trainer. I’m a couple days ahead. Love it! But my cardio stamina seems a little down now!

    To green things up, I always add spinach. It’s so neutral.

    and ive totoally done the scavenge for random carbs that can fill in for my lack of bread right now over the past week since we have been in a random state of limbo. grocery shopping needs to happen asap!!

      Pot set to high…enough water to cover the bottom of the pot (about and inch up)…throw in the broccoli and top with a lid. Takes about 5 minutes! πŸ™‚

  17. Avocado is definitely my favorite way to green up a meal. You can seriously eat it for a snack, breakfast, lunch and dinner!
