It’s Not Easy Being Green!

The philosophical statement that has been stuck in the hearts of people around the world for years…

Well, while it may be hard to physically BE a certain shade of jade…

EATING GREEN has never been easier! 
That’s right folks, as if you haven’t seen enough of my GREEN-filled posts, I’ve got yet another one for this week’s edition of What I Ate Wednesday
But c’mon, you can never have too much green, right? 😉

Have you seen her Fiesta Tuna Salad? That is so happening in the VERY near future!

Breakfast
1/2 cup cottage cheese, 1/4 cup peanut flower, 1/4 cup rolled oats, maple extract and cinnamon all mixed up and topped with 1/2 a banana, some raisins, and a few chopped butter toffee peanuts.

Enjoyed alongside a mug of (unpictured) coffee and…

Some GREEN juice!

Snack #1
(Unpictured) carrots and celery dipped in creamy cashew butter (apparently, I’m not the only one who considers this combo tasty…thanks camera for deciding to get hungry!)

Snack #2
1 packet of Better Oats Dark Chocolate instant oatmeal mixed with water.

This was my first time trying these and I have to say for instant oats, they’re not too shabby!

Lunch
The best GREEN sandwich ever created: whole wheat bread, 1/2 a mashed avocado, spinach and roasted asparagus

Note: It’s not so easy to eat asparagus in sandwich form, but definitely worth the mess I made! 

I’m totally having the same thing for lunch tomorrow!

Snack #3/Post-workout
Vanilla protein powder, water, ice, 1/2 a banana, and “the gums” pictured in front of some GREEN grass! 😉

Let me just note the hilarity that is the smudge of GREEN smoothie from I don’t know when on the lid of the xanthan gum…you can tell what I use these babies for, that’s for sure! Lol

If you’ve never tried adding either one of these gems into your smoothies, you are missing out! The xanthan gum thickens it while the guar gum gives it a super creamy consistency…feels like you are drinking a thick and creamy milkshake!

Dinner
Baked BBQ tofu, smashed potatoes mixed with cottage cheese and topped with nutritional yeast and chives, and a big pile of steamed GREEN broccoli

How about another look at that gorgeous tofu?

Mmmm!!

      Bahahaha! Yeah, don’t you know? It’s all the new rage…out with rose petals and lavender and IN with peanut FLOWERS!

      ….needless to say I was exhausted while typing up this post! 😉

    Ummmm the last green thing I ate? Opps. I’m a little more obsessed with orange these days – pumpkin, sweet potato and carrots. But your sandwich – OH MY GOD. That is my kind of sandwich – filling and full of good stuff. Wow. That is definitely my lunch tomorrow!

      Oh my gosh, you’ll LOVE it! Sweet cottage cheese is my favorite! I just made a little mini version of this last night for my late night snack and it was perfect!

      Oh geez, it was NOT easy to keep that sandwich together…for sure! I probably looked like a caveman trying to eat it, but luckily my co-workers don’t really pay me and my food much attention anymore (because they never understand why I eat what I eat anyway!)

      Thank you Marisa! And yes, roasted asparagus is my absolute favorite…I love how it enhances the natural flavors!

      Haha! I made it! No real recipe to speak of, but if you check out my response to Amber’s comment, you’ll see the directions…SUPER easy!

    Teach me your tofu ways! I’ve always wanted to know how to make BBQ tofu.

      Haha! It’s super simple! I usually pan fry it (because I have a low amount of patience when it comes to cooking food…I want to eat NOW!), but that way of cooking tends to dry out the tofu a bit. Just make sure to press your tofu first…cover with a dish towel and stack something heavy on top for about an hour (plates or books work well). Then coat in your BBQ sauce (if using a dry rub, you may want to add a little olive oil to help with stickability) and pop in a 350F degree oven for about 30 minutes. It kept it’s moisture well, but I think I might experiment more in the future with coating to see if I can get more of a crunchy exterior. Oh and I may be a little weird, but I think the leftovers taste AMAZING straight out of the fridge!

  22. Big bird is my homie! Have you ever seen a little film called “Follow that Bird”? It’s bomb.
    Now, for the food. Where do you buy your gums? How much do you put in your smoothies?

      No, I’ve never heard of it…I’ll have to look it up sometime!

      I buy Bob’s Redmill’s brand of both the gums…which I have to go to Whole Foods for since my little town sucks in the way of natural food stores. Typically I add about 1/8 teaspoon of each to my smoothies…you have to be careful not to add to much though. I accidentally added a heaping measuring spoonful and it tasted like I put glue in it! :p

  23. For me, it’s so much easier to eat fruits. I just tend to skip veggies a lot.. but thats got to change! I’m missing out on so many great tasting veggies! Thanks for inspiring me to eat more greens. 🙂

      Aww, you’re welcome Shannon! I used to be the same way about fruit…they just seem to be so much more grab-and-go than veggies, but lately I’ve been trying to make a conscious effort to balance the fruit and the veg…especially with it being asparagus season!

      Thank you, Stef! It was a new one for me too, but I’ve been OBSESSED with asparagus lately (can’t they just stay in season year-round) and I wanted to try something different…plus I’m getting ready to go to the BLEND retreat this weekend and trying to clean out my fridge…win, win! 🙂

  26. Definately need to get these gums-I’ve heard they make all the difference in the world. Also, do you have the recipe for BBQ Baked Tofu up? I’m in love with any baked tofu, and this looks amazing!

      Check out my response to Janiek’s comment below…not a “real” recipe per se, but I got some tips from a fellow blogger and just winged the rest! Sometimes that’s the best way to do things! 😉

      Super easy…no real recipe though. I used Trader Joe’s organic firm tofu (it doesn’t need to be pressed first), cut it up into cubes and coated it with a dry rub BBQ seasoning. Then I brushed on some BBQ sauce and baked it in a 350F degree oven for about 30 minutes or so! 🙂
