“Beet” Me Baby One More Time

Well, it’s that time of week again…

So why don’t we get started with the very FIRST thing I ate today?

Cottage cheese topped (and bottomed) with my latest kitchen failure.

I was going for a crispy peanut butter cereal bar, but unfortunately I ended up with soggy cereal crumbles coated in peanut butter. And well, since no food goes to waste around here…yeah, I’ve been eating them like every day! Lol

Four hours later, I was off work, exhausted AND STARVING! All I wanted was to stuff my face and and then dive head-first under the covers in a matter of minutes. So I mixed up a quick bowl of oats mixed with my GNC casein protein, threw on some toppings, snapped a pic, and did just that!

Blueberries, cinnamon, almonds, shredded coconut, and a spoonful of peanut butter.

But not just ANY peanut butter…

Mr. Peanut himself contacted me about a week ago and said he’d LOVE for me to try the newest of the Planter’s peanut butter line, Nut-trition Cinnamon Raisin Granola Nut! Flattered, and swooning of course (over the thought of the pb, not the cartoon nut),
I graciously accepted and it arrived on my doorstep in a couple of days.

Although it has a few more ingredients than I would like, it really does have an amazing flavor! And with all the bits of crunchy granola and squishy raisins, it was like a party in my mouth!

When I woke up later in the day, I had what I like to refer to now as my
Morning Cocktail

Fitmixer aminos + apple cider vinegar…TWO WEEKS people…that’s how long it’s been since I’ve had a single cup of coffee! I still can’t believe it!

After a bit of house cleaning, errand running, and a quick shoulder workout at home, it was finally time for some lunch!

Being a little hot and sweaty from the aforementioned activities, all I wanted was something cool and refreshing…

Oops, I did it again! 😉

I know, I know…first Sunday’s pancakes, then yesterday’s parfait…I just CAN’T stop throwing beets into everything lately and today was no exception with my newest creation, a Red Velvet Cake Smoothie!

Sorry, I’m not sorry…for the beets OR the shameless use of Britney Spears references! 😉

On the way to work, I snacked on a delicious Asian pear from my local farmer’s market…

Nothing like a ripe juicy pear…as in I had juice all over my hand, arm, and lap…note to self, restock Elvira’s supply of paper towels! 😉

For dinner, I was going to have the last Lauren’s Beet Burgers, but since I know I’m already bordering on “beeting” you guys to death, I decided against it. After a few minutes of throwing things around in the kitchen, I ended up coming up with something a little new, a little different, and a whole lotta cute!

Wait, can food be cute?

Well, this guy can!

Portobello + sprouts + Greek tuna salad + olives =

Wilson?

I still need to work on the ratios in the tuna salad, but hopefully I can post the recipe for you guys soon…I promise not to add any beets! 😉

Until then, you’ll just have to make this smoothie!

Red Velvet Cake Smoothie

Prep Time: 5 minutes

Cook Time: N/A

Keywords: beets cottage cheese protein powder

Ingredients (Serves 1)

  • heaping 1/4 cup grated beets (about 1/2 of one small beet)
  • 1/2 cup cottage cheese
  • 1 scoop chocolate protein powder
  • 1/3 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon butter extract (optional)
  • 1/8 teaspoon cake batter extract (optional)
  • 1/2 cup water or milk
  • 5-6 ice cubes
  • unsweetened cocoa and mini chocolate chips for garnishing

Instructions

1. Combine all ingredients in a blender and puree until smooth.
2. Spoon out a bit of cocoa on a small plate. Dip the rim of your glass in 1/4 inch of water and then press the rim down lightly into the plate of cocoa.
3. Top with mini chocolate chips.

  1. Ok. How is the WORLD have I not made a chocolate beet shake?! I always go the citrus route. Or last night the strawberry-beet route. I have 1 beet left and I know what will be done with it.

      Haha! I had EVERY intention of making your orange/beet smoothie, but after yesterday’s parfait, I just couldn’t shake the craving for the the chocolate “cake” 😉 Luckily, I stocked UP at the farmer’s market…I still have 4 beets left! That should be enough to make your recipe and then….hmmm, maybe I could squeak out one more recipe before people start to think I’ve lost my mind? 😉

      That’s what I always said! I love love LOVE the flavor of coffee and used to swear that the only reason I drank it was for the taste…but then my cups started getting larger and more frequent so I thought I’d try something a little different. I’ve tried the ACV before…mixed in warm water with a little lemon juice (bloggers everywhere swear by it) but I wasn’t really a fan. I mean, I could get past the bitterness, but it’s not like it was “giving me wings” or anything! And if you could only SEE me in the mornings…I NEED help! LOL I think the combination with the Fitmixer aminos is really the game changer for me. It gives me a good amount of energy already, and then with the ACV it’s just a bit more “boost”…plus, my complexion has GREAT since I started drinking it every day. Actually, now that I think about it, I can’t remember when I last had a breakout! #winning 😉

  3. I don’t think I can get tired of beets, I already loved them but after that slew of recipes I am desperate for the weekend to get here for some quality kitchen time!! Beet-isize All The Foods!!!!!

  7. No joke- your posts are like food porn..all looks so yum :)! I love my coffee (a habit which has recently developed) but luckily I think I could go without if I really put my mind to it. I sometimes have to resist the urge especially if it hits in the evening…depending on the brand/amount of coffee, there have been far too many nights that coffee has made me miss out on sleep!

  11. I love Wilson, but sadly not beets. I’ve tried to love them though and I can tell you, your beet pictures look so good that if we get them in the CSA again, I’m going to make your parfait and smoothie. The Hubby is a big beet fan so whether you convert me or not, he’ll definitely be thrilled.
    P.S. There’s no shame is borrowing a few lines from Britney….maybe her school girl skirt, but certainly not her lines. 🙂

  13. Haha I recently had a peanut butter bar fail too!!! I tried to bake crispy rice with a PB2 mixture but it ended up soggy and gross 🙁 *sigh* can’t win ’em all!

  14. I used to drink coffee every morning but then I switched to tea, and I don’t really miss my morning cuppa Joe at all! I’ll sometimes still drink it if I feel like it though.

  21. Can you send me like, six of those smoothies? I love the way you presented it in the photo – so pretty, and a great setup! Especially the cocoa powder rim, reminds me of salt on a margarita (but more nutritious, of course). I think I have to go buy some beets now.

I’m totally the same way when it comes to failed kitchen experiments… I really hate to waste food so I try and find ways to eat them, even if it means I have to drown it under chocolate or almond butter to get it down. Okay, maybe that’s a bit of an exaggeration… my failures are never -that- bad, but they definitely need a little sprucing up every now and then. And I totally see Wilson in your salad 😉

    I’ve been throwing beets into everything all week- thanks to you! I can’t get enough. Plus, they make everything so colorful and pretty.
    I’m definitely a coffee-love. I stopped drinking caffeine recently and made it 6 months! But, with my crazy schedule, my addiction has come back with a vengeance. I try to rotate between coffee and tea though and I’m considering trying Fitmixer- it sounds amazing!

    That smoothie looks fantastic!! The best thing I have eaten so far today was a chocolate-cinnamon green monster smoothie (OK, so that is technically something I DRANK, but oh well:D It was still delicious!). I am actually not a coffee drinker–I think I have only tasted coffee maybe twice in my life…Of course, that may change at some point! Still, I don’t like the idea of getting addicted to caffeine:P

      Thank you Sunnie! I just can’t believe it took me THIS long to experiment with beets! I thought about adding greens but didn’t want to mess with the color…next time, there’s gonna be some kale action fo sho! 😉
