Gettin Figgy Wit It!

I wonder if I’m the only one who has been DYING to use that as a post title since fig season started?

Na na na na na na-na, na na na na na-naaaaaaa!

Have you ever thrown some random ingredients together and then ended up with something so surprisingly delicious that you had no choice but to pat yourself on the back for your stroke of culinary genius?

Well, this was NOT one of those times…

At least not the first time…

Or the second time…

But hey, you know what they say! πŸ˜‰

Since I decided to give fresh figs another shot after over a year of just thinking they were “meh”, I think I have finally developed an appreciation for them.

So obviously, I couldn’t pass up the chance to share in the figgy love with some of my favorite bloggers for Heather’s Meatless Monday linkup this week!

One thing I’ve learned about fresh figs (in stark contrast to their candy-like dried brothers) is that they are best when paired with something that has a sharp flavor…certain spices enhance their natural sweetness, and in turn the figs will mellow out any tartness or spice.

With that in mind, I came up with these Coconut Fig Muffins!

They are subtly sweet, with hints of cinnamon and ginger, filled with warm bits of fresh fig and chewy coconut…

You know, because EVERYTHING is better with coconut! πŸ˜‰

Fig Coconut Muffins

Prep Time: 10-15 minutes

Cook Time: 24-28 minutes

Ingredients (4 Muffins)

  • 1/2 cup whole wheat pastry flour
  • 1/2 teaspoon sodium-free baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon ground flax + 3 tablespoons water (or 1 egg, whisked)
  • 1/4 cup mashed banana
  • 1/3 cup almond milk
  • 2 tablespoon coconut oil
  • 20-25 drops liquid vanilla stevia (or other preferred sweetener)
  • 1/4 cup unsweetened shredded coconut
  • 1/2 cup chopped fresh figs (3 small ones) + 1 small fig, sliced for topping.

Instructions

1. Preheat oven to 350F and prepare a regular-sized muffin pan by spraying it with non-stick spray or use cupcake liners for easy clean up!
2. Prepare flax egg (if using) by mixing flax and water, allow at least 5 minutes to set.
3. In a medium-sized bowl, combine flour, baking powder, and spices.
4. In a separate bowl, combine mashed banana, coconut oil, almond milk, flax (or regular) egg, and stevia.
5. Add wet ingredients to dry ingredients and stir just until flour is incorporated.
6. Fold in coconut and figs.
7. Spoon batter into prepared muffin tin, filling the cups to the top.
8. Bake for 24-28 minutes or until a toothpick inserted in the center comes out clean.
9. Allow muffins to cool on a wire rack for at least 10 minutes before serving.
10. Store in an airtight container in the refrigerator for 3-4 days.

Pair one of these with a bowl of cool Greek yogurt, and you’ve got yourself a perfectly balanced AND delicious breakfast!

And just because I hope that my baking nightmare adventure might help others learn from my mistakes…a few things I learned:

1. Don’t fear the fat! Unless you’re curious about how to formulate your own foodie version of superglue…cupcake liner wins EVERY time!
2. Too much baking powder makes really salty muffins.
3. Don’t forget to add the sweetener…oops?

Now go make these and enjoy some perfectly sweetened, not over-salted, figgy muffins that you can actually get OUT of the liner!

  3. I pretty much suck at baking. I don’t like having to follow “rules” or measure things. πŸ™‚
    These look incredible- glad you kept going! Figs are one of the best things ever- and I totally dropped the ball on this one. I even bought figs on Saturday to do something with for Heather’s post and totally forgot. Guess I’ll just have to go grill up my figs and top ’em with goat cheese and eat them like that.. darn. πŸ™‚

      I think that’s why I suck at baking too. I’m a rebel (of course without a single cause but that’s beside the point) and I like being able to just skip through the kitchen randomly throwing things together…rules? Who needs ’em? πŸ˜›

    I cannot for the life of me find figs in my area. It makes me sad. I was wanting to recreate that bacon-wrapped goat cheese stuffed fig that I had at a restaurant in KC a few months ago. :/ And of course make all the #MMAZ recipes.

      It’s so weird, they were ALL over the place around here for a couple of months and now, not a single fig in sight! I hope you find some around you…I didn’t do bacon, but I tried the same combo with prosciutto…prepare yourself…it’s pretty life changing! πŸ˜‰

    This weekend I had a movie night with my roommate, went to the farmer's market, and went shopping and out to dinner with my mom who came to visit!

      First off, yes…the song was ABSOLUTELY necessary! And now, consequently, I’ve gotten it stuck in my head all over again…so there, we’re even! πŸ˜›

      Second, don’t wait on your bananas! Pop those suckers in the freezer overnight and then defrost them in the microwave…BAM! Instant “ripeness”! πŸ˜€

    Something fun I did this weekend: I saw my middle school band teacher on stage at the Train concert. He’s now the trumpet player touring with the band!

      Haha! Yep, they’ve been in season for a couple of months, but I just recently noticed them popping up around here last month. I think they stay in season until sometime in November so you’ll have to keep an eye out!

      That is SO COOl about your band teacher! Funny the places life takes us, isn’t it?

I want to invest in the silicone ones, I hear they are pretty amazing when it comes to baking. And pssht, forget sugar? Just tell everyone you were making “bread.” Not that I’ve ever done that. Nope.

    Also–going to Whole Foods for din tonight and already planning what flavor Zevia treat to get ;D

      Haha! I used to be so obsessed with the CD this song was on…I’d play it all day on repeat and drive my mom CRAZY! Lol

      I’ve heard about those silicone cups…haha, that kind makes them sound like something else, no? πŸ˜‰ Anywho! I had a silicon loaf pan once, but it was waaaaaaaay awkward once you filled it with batter…but it DID bake pretty evenly! I think the cups would be perfect since they’re smaller and easier to hold on to!

      Yay for Zevia! I found the black cherry flavor at Kroger, but I want to print off a coupon I found on their website before I go pick them up! Can’t wait to try it though…everybody seems to love that one!

        Not gonna lie, the day after this? I put my Will Smith Greatest Hits CD on loop and hit the gym. Ahh, the 90s. And you should try Blue Sky (I think that’s the brand?)–same ingredients as Zevia, $2 cheaper for a six pack, and potentially even more delicious (I ended up getting the vanilla black cherry in that brand instead, so good!).

          And hello?! VANILLA black cherry?! Oh my gosh that sounds sooooo good! I haven’t seen that brand around here. Are they at Whole Foods? I’ll have to remember to check next time I go to Nashville.

      Thanks girlie! I rarely ever throw food away so you KNOW the test batches were pretty bad! But I was pretty determined! Just glad I was smart enough to wait until I got a good base before throwing in the flippin expensive figs! Lol
