Sweet Potato Pie Pancakes

Good morning loves!

With today being the first official Pancake Sunday of fall, I figured it was finally time to bust out some of the fall flavors we all love!

But why should pumpkin have all the fun?

Oh yeah, I went there!

And I even brought the maple syrup along for the ride!

Sweet Potato Pie Pancakes

Prep Time: 10 minutes

Cook Time: 10-12 minutes

Ingredients (Serves 1)

  • 1/3 cup whole wheat pastry flour
  • 1/2 scoop vanilla protein powder
  • 1/2 teaspoon sodium-free baking powder
  • 1/2 teaspoon pumpkin pie spice
  • 1 egg white
  • 1/4 cup mashed sweet potato
  • 1/2 banana, mashed
  • 1/4 cup water (or milk)

Instructions

1. Heat a non-stick skillet over medium heat.
2. In a small bowl, combine flour, protein powder, baking powder, and spice.
3. In a separate bowl, stir together egg white, sweet potato, banana, and water (or milk).
4. Add wet ingredients to dry and stir until flour is incorporated.
5. Spoon batter onto skillet forming three medium-sized pancakes.
6. Cook 5-6 minutes per side or edges are crisp and golden brown.
7. Serve with pure maple syrup…or, if your feeling extra frisky, layer with mini marshmallows, pop ’em in the microwave to “melt” and top with crushed pecans!! 😉

    My favourite fall dessert is hands down pumpkin pie. My mom’s recipe is the best! Probably because it contains lots of sugar and cream… but I don’t care. It’s worth every decadent bite!

      Mmm, yes, nothing beats a slice of perfectly smooth, homemade pumpkin pie! Yum!

  2. Holy perfect fall breakfast. Especially with the pecans on top!

    Favourite fall dessert…that’s a tough one! Probably pumpkin pie – I made one for Thanksgiving last year with a pecan crumble topping, and it was amazing.

      Just so you know, as soon as I read “pecan crumble topping,” I immediately made me start drooling! That sounds amazing! And I’m totally with you…pumpkin pie is my FAVE!

      But see, the thing is…I’m pretty sure once I got there, I’d never want to leave…and we’d both probably gain 20 pounds in a matter of weeks! Lol

  4. Ohhhh looks delicious. I’ve been thinking the same thing, and meaning to make something with sweet potatoes as well – they are the other fall flavor after all. I’ve never had them “sweet” though, just as a side for a main course or as fries (and chips). I bet the marshmallow topping would be awesome for this though, its too bad marshmallows are not the healthiest out there 🙁 or I wonder if they have healthier options for that too

      I’ve had plenty of savory stuffed sweet potatoes and chips, but for me, sweet potatoes were meant to be just that…SWEET! One of my favorite holiday side dishes growing up was sweet potato casserole…my mom would cover the top in mini marshmallows that would get perfectly toasted while in the oven…that’s where I got the idea for the marshmallows with these! Definitely not the healthiest, but since the only real ingredients in marshmallows are sugar and air, I doubt they could come up with any “healthier” option that didn’t end up tasting like chalk! LOL

      • Haha, makes sense! Is sugar really the only ingredient? I never really looked at the packaging but wow I thought it’d be something else in there too but I guess that makes sense. I still like marshmallows though. Damn it! haha I’ll probably get some once it gets closer to Xmas…. make it a seasonal thing otherwise I’ll just munch on it too much (so good).     Wow, those look like the epitome of a scrumptious-yet-healthy autumn breakfast!! I love sweet potatoes, especially since they can satisfy my sweet tooth without sending me into a refined-sugar coma:) My favorite fall dessert is probably apple pie–I had apple pie on my birthday last year instead of cake, and it was amazing:D

    Fall desserts, Fall desserts… hmm… you know, that’s actually a tough one. The first thing that comes to mind when I think of Fall desserts is pumpkin pie, but I don’t really like pumpkin pie, sooooo… OH! My mom makes this fabulous apple crumble cake, and when it’s warm out of the oven with a scoop of vanilla ice cream on top? Heaven.

    Aaand another one of your pancake recipes ends up on my “make this now” list. And I have all the ingredients! Except marshmallows, but I’m not a marshmallow lover. I bet some cashew-whipped cream would be a perfect sub, though ;D

    Wow, that looks amazing! Are those Sweet & Sara marshmallows? I’ve been wanting to try them. As far as I know those are the only mini-marshmallows available that don’t contain gelatin.

      I hadn’t heard of the Sweet & Sara’s before…these were just your standard, run-of the mill sugar pillows that I happened to find in the back of the pantry! Lol

        I’m just loving all of your inventive recipes and the joy and creativity you bring to your cooking! A little over a year ago, I made the move from life-long vegetarian (with a little experimentation in college — I tried meat a few times and just didn’t like it) to vegan. I have been amazed at how healthy and energized I feel! There are a few things I do miss, though, such as butter on my toast, a good omelet, goat cheese, real whipped cream….

        I am not sure if this will be a new lifestyle for me, but it has been really interesting to learn how much I used animal products without thinking about it. If I do return to using some dairy and eggs, I’ll be a lot more mindful about it. It’s amazing how much more enjoyable food is when you’re actually paying attention to it, isn’t it? That’s one of the things I really “clicked with” about your blog!

        You probably already know this site and blog, but the Post Punk Kitchen (http://www.theppk.com/) is a fantastic place to learn about vegan cooking/baking, as well as to chat with others about everything under the sun. I have learned a great deal about finding my way in the kitchen there!
