Wow!

I am absolutely BLOWN AWAY by all the comments on yesterday’s Pumpkin Cake! You guys are the best!

But I’m telling you, I may just have a hard time making pancakes this coming
Pancake Sunday because for the last three days, all I’ve wanted is this cake!

Original, Chocolate Peanut Butter, and Vanilla

For the chocolate version I made yesterday, I just added in a 1/2 tablespoon cocoa powder and a few chocolate chips into the batter. The vanilla one I made this morning subbing in 1 scoop of vanilla protein powder (30g) plus 1 tablespoon of coconut flour. It came out a bit more crumbly in texture (next time, I’ll omit the milk from the recipe) but it was definitely JUST as delicious as the others!

But I wasn’t the only one swooning over my breakfast this morning…

Both Allie and Rebekah (my number one fan and loyal blog reader) couldn’t wait to get in on the pumpkin cake action either!

Honestly, I STILL can’t get over how well the first one came out on the FIRST try. I was listening to one of my favorite talk shows on the radio while I was driving home from work and they started talking about muffins with streusel topping (which the guy kept referring to as “crumblies”…not to be confused with Sarah’s patented crumblies, but still delicious!)

Anywho, next thing I know they’re talking about fall…and fall treats…and pumpkin pie…and how omg, wouldn’t it be incredible to have pumpkin pie topped with crumblies?!

Get on that Sarah! 😉

Microwave cakes can be difficult…all it takes is one missing ingredient and you end up gnawing on something that much more resembles a rubber tire or sponge than a cake or muffin.

It wasn’t until recently, that a few ladies helped me see otherwise:

Seriously guys, AFTER you make my pumpkin cake, you really should try this! 😉

And in case you’re wondering, I use of peanut flour (and I purchase it from that website)…yes, it’s worth it…don’t even bother asking! Peanut flour has been one of my TOP kitchen staples for almost two years now! Endless possibilities!

      Haha! I made the cake for dinner the other night…served it “ala mode” with cottage cheese and melty peanut butter! So flippin good!

      And Rebekah is @dmclvsrcc on Instagram…I think she’s your number TWO fan too (because I of course am your numero uno! ;))

  3. hmm…I’d have to say protein powder, eggs, Greek yogurt, cottage cheese, and almond butter. All get consumed almost daily. 🙂

  7. I tried a microwave cake for a snack once, but it didn’t turn out that well… but I think that was mostly because I didn’t like the protein powder I used. 😛 I need to start experimenting with them more!

    My top 5 staples are bananas, oats, soy nut butter, sweet potatoes, and Greek yogurt. It’s hard to narrow it down to just 5 though. Honestly I lose my mind if I don’t have a fully stocked fridge/cupboard at all times haha.

      Haha! Oh yeah, me too! Actually, when I went to answer my own question, I realized how hard it was to only list five! I’m a totally spoiled foodie!

      I’m sure your cake was STILL better than my first experience…I’m pretty my very first protein cake could have doubled as a bouncy ball! lol

  9. Your micro cake is basically my powercake but i cook mine in the oven! I highly suggest adding some peppermint to the chocolate version and letting it cool in the fridge. It is amazing!!! Possibilities are endless!!

  10. I agree that it’s easy to mess up a microwave cake but thankfully I’ve had just as many (if not more) successes rather than failures with microwave cakes. I had a total phase for them a month ago, now I’ve calmed down and I’m more into my yogurt concoctions as a snack/dessert instead. I love all of your photos of the microwave cakes you tried by other bloggers!

      Thanks girlie! Kinda funny how we can get fixated on certain foods sometimes isn’t it? I’m always jumping from one “obsession” to the next! Lol

  11. I am definitely the queen of microwave cakes- I had my lemon blueberry one this morning! Your pumpkin cake looks divine- and I make ALMOST the identical recipe all the time! The pumpkin/peanut flour combo is awesome!
    I’ve used Vega Vanilla Chai AND the Chocolate flavors before – vanilla chai is way better. 🙂
    I just need to go get some more figs to throw on top!

      You know I was thisclose to buying the chocolate instead of the vanilla because I wasn’t sure how spicy the chai was going to taste. So glad I chose the right one!

      And omg, right? Pumpkin and peanut flour were meant to beeeeeee! 😀
