You Mocha Me Crazy!

Yesterday I did some exploring around town.

I found the cutest little shop selling antiques, crafts, and other fun thrifty items.

One of those items…handmade, mocha latte…SOAP??

I picked it up.

I took a whiff.

It smelled like pure Heaven.

I drooled.

I sat it down andย walked away.

I came back.

I took another whiff…

Then, before I tried to take a bite of a BAR OF SOAP…
I turned around, headed for the door, raced home and made these:

And I about dropped my fork after my first taste.

Seriously guys, I think I’ve outdone myself!

Since I had SO much success with my Tiramisu Protein Pancakes, I based this recipe off of that one, but I just COULDN’T RESISTย mixing it up a bit…

So I added a layer of pumpkin “cream”

You know, ’cause I’m still working on that naturalย October glow! ๐Ÿ˜‰

Mochoa Latte Protein Pancakes

Prep Time: 15 minutes

Cook Time: 10-12 minutes

Ingredients (Serves 1)

For the Pancakes

  • 1/3 cup rolled oats
  • 1 scoop (30g) chocolate protein powder
  • 1 1/2 teaspoons unsweetened cocoa powder (I used Hershey’s Special Dark)
  • 2 Tablespoons ground flax seed
  • 1/2 teaspoon sodium-free baking powder
  • 1 egg white
  • 1/4 cup strong brewed cold coffee
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon coffee extract

For the Pumpkin “Cream”

  • 1/3 cup low-fat no-salt-added cottage cheese
  • 1/4 cup pumpkin puree
  • 5-7 drops liquid stevia
  • unsweetened ย cocoa powder and mini chocolate chips for garnish

Instructions

For the Pancakes

1. Heat a non-stick skillet or pancake griddle over medium heat.
2. In a small food processor or blender, grind oats into flour.
3. Combine oat flour, protein powder, cocoa powder, ground flax, and baking powder in a medium-sized bowl.
4. In a separate bowl, whisk egg white until frothy.
5. Add coffee and extracts to egg white, stir and add to dry ingredients.
6. Stir until flour is incorporated.
7. Let batter sit at least 5 minutes before continuing.
8. Spoon batter onto skillet surface, forming 3 medium-sized pancakes.
9. Cook 5-6 minutes per side, or until golden brown with crisp edges.

For the Pumpkin “Cream”

Combine cottage cheese, pumpkin puree, and stevia in a small food processor or blender and blend until smooth.

  4. So…thinking I should be making these this week. I don’t even like coffee but they sound fabulous. (I hate coffee but I like coffee-flavoured things…kinda weird).

    My pumpkin cupcake candle from BBW makes me want to take a big bite of it. ๐Ÿ™‚

    Yum! What kind or protein powder? Would casein work??

      I used whey protein powder. Casein has more absorbability, so if you sub it in, you may have to add more liquid to compensate. I’d love to know how they turn out if you try it! ๐Ÿ™‚

    And don’t worry, you’re not the only person who has wanted to eat yummy smelling non-food products. ๐Ÿ˜‰ I feel that way every time I’m in Bath & Body Works. Their pumpkin caramel latte candle smells so good!

Pancake inspiration from a bar of soap… now THAT is what I call culinary genius ๐Ÿ˜‰ I actually kind of hate it when beauty products smell like food because I get incredibly tempted to lick them, and I know from accidentally getting stuff like shampoo/soap in my mouth that they do NOT taste anywhere near as good as they smell. I have a body cream from Sephora that smells like a combination of chocolate and espresso, and every single time I open it, I swear I get tempted to give it a lick… especially because it’s all whipped and creamy! That and scented candles from B&BW… Frosted Cupcake and Salted Caramel will be the death of me…

  13. Oh how I miss cottage cheese in my lactose-averse, dairy-free life. I’ve been having some success with Greek yogurt, so perhaps once Vegan MoFo is over I’ll try to get back on the cottage cheese wagon (train? steam ship?).

    Also, I need to stop simply drinking my coffee and start COOKING with it.

    what always gets me are the flavoured lip chaps. Lipsmackers Dr. Pepper gets me every time! I almost always feel like just eating it straight u[p, thankfully I settle for over the top licking my lips ๐Ÿ™‚

    I can’t handle the food scented candles because they make me want to shove cookies in my face. Give me flowers or tropical any day though.

    Made these this morning and absolutely amazing!! I don’t know how you do it, but your pancake recipes are the fluffiest I’ve ever had. Also, I have been having weird pumpkin cravings, lately – I guess I miss fall in the 90+ heat we have. But so good. I added a little cinnamon. I might make them again tomorrow….
