What I Ate Wednesday: Pumpkin Paleo “Oatmeal”

Well, hello there, gorgeous!

I’ll be honest, I really haven’t felt like taking pictures of my food lately…

But after fiddling around with a peanut flour-less version of my Pumpkin Cake the other day and landing myself with a bowl of thick, creamy, pumpkin-y deliciousness?

The camera was in my hand within SECONDS!

Pumpkin Paleo Oatmeal

Prep Time: 2 minutes

Cook Time: 2 minutes

Keywords: microwave breakfast no sugar added paleo eggs pumpkin ground flax fall

Ingredients (Serves 1)

  • 3 egg whites (1/2 cup)
  • 1 tablespoon ground flax
  • 1 scoop vanilla protein powder
  • 1/2 cup pumpkin puree
  • 1/2 teaspoon maple extract
  • 1 teaspoon pumpkin pie spice
  • added sweetener if desired

Instructions

1. Combine all ingredients in a microwave-safe bowl and whisk well.
2. Microwave on high for 1-2 minutes, stopping to stir every 30 seconds (so you don’t end up with scramble eggs!) or cook on the stove over medium heat for 5-6 minutes…just remember to STIR!

Not only is the flavor enough to make me swoon, but this has been the PERFECT meal for me after I get off work…low carb, FULL of protein, and with plenty of room to get crazy with the toppings…

Mmm, coconut crack butter!

I swear there’s “oatmeal” under there somewhere! 

Weirdest thing…I dreamt the other night that I turned into a pumpkin!

Wonder where THAT came from? 😉

  1. That sounds delicious, Heather! I should give it a try. Could you add a whole egg instead of the egg whites? Or I guess I could buy them in the container. Yeah, that would work!! Have a great day!

      Hey Fran, not speaking for Heather but I posted a paleo oatmeal recipe on my blog a while back very similar to this one that calls for whole eggs instead of just the whites (but I normally just use the whites). Normally you would use half the amount of whole eggs as egg whites (although 1.5 eggs is a bit hard to measure!). You could double the recipe and use 3 eggs.

      You could probably just use one whole egg, but I’d maybe only use 1/2 scoop of protein powder to make up for the lesser amount of liquid. Definitely let me know if you try it! I’d love to hear how it comes out!

      More like a weird person/pumpkin…I had a pumpkin for a head, twigs for arms, and my own legs! It was scary! Lol

  11. OMG – I DONE this! Meg posted something like it after my PB & Jeggs, but without the powder. I LOVE pumpkin oats. Though I have to say… the Pumpkin TVP Oats have my heart this week. In 17 more days I’m totally making it with egg again.

  12. Are you living in my brain?!?! I had this same thing for breakfast this morning except I didn’t have maple extract- I need that, and I topped mine with a banana and walnuts. Can we just be neighbors??

      Whoa! No way! Oh my gosh, I can only IMAGINE what we’d get into if we lived next to one another! Let’s just say Luvy would be WELL fed! Lol

      Oh, actually I didn’t know…oops! I’ve just seen a couple of versions of “paleo” oats with protein powder and just assumed. My bad! :-/

  15. As much as I want to like oatless oatmeal… I just can’t! I love my oats too much! 😛 Those are some awesome protein stats though!

    The best thing I had for breakfast this week was oatmeal with roasted figs. Swoon!

    I swear, you’re out to change my mind about everything! Thought I hated coconut flour–then I made your coconut pancakes. Thought I never got particularly excited about anything with pumpkin in it–then I made your PB cake. Though I would never willingly try a recipe with the word “paleo” in the name–now I have this bookmarked ;D

    I have tried SO many different variations of “noatmeal” made with either pumpkin or another type of squash. I like the ones WITHOUT coconut flour best, but haven’t tried any with protein powder! Hmmmm 🙂

      I actually got the idea from Laura since she used 1/2 scoop in her “paleo” oats a few months ago…I love the consistency that it gives! You’ve got to try it! And, of course, I love YOU too, babe! 😀 xoxox

    I LOVE paleo oatmeal! Its SO much better than regular oats in my opinion, not to mention filling. I posted a recipe for paleo oatmeal a while back also which rocks my world every time I have it. I love your seasonal spin on it too!

  23. Since the whole oatmeal intolerance hit, I’m -almost- tempted to try out oatless ‘oatmeal’, but I’m kind of too in love with my yogurt mess bowls at the moment to do much experimenting. I’ve eaten one for breakfast every day this week, and it doesn’t look like the addiction is going to let up any time soon.

      Haha! Yeah, I’m not sure what I’d think if I didn’t see your usual bowl of yogurt and harvest wheat in the mornings. Hey, if it’s not broke…;)

  24. I recently made “paleo” oats for the first time and loved the texture. This is a great way to change it up from the usual bow of pumpkin oatmeal!

  25. I love this version of “No Oat Oatmeal!” I will have to try this! The best breakfast I have eaten this week is pumpkin pie greek yogurt topped with granola!

      I’m the same way. I don’t really agree with restricting certain foods, but it’s fun to play around with other diet concepts just to mix things up a bit! So glad you found me too! Pull up a chair…stay awhile! 😉
