Fall Flair & Peanut Butter Heaven

As we gear up for Thanksgiving this week, I couldn’t help but notice that Sunday’s meals had a bit of fall flair to them…

Breakfast:
Plain non-fat Greek yogurt topped with a warmed morning glory breakfast cookie, cinnamon, and fresh cooked cranberries.

Lunch:
Toast topped with tuscan herb hummus, steamed kale and a DOUBLE YOLK egg with carrots and bell pepper on the side.

Ok, so maybe not very fall-ish, but c’mon, you gotta celebrate a double yolk in style! πŸ˜‰

Dinner:
Caramelized Onion, Cranberry & Kale saute with turkey-fied tofu

I seriously canNOT get enough of this dish…I just finished up the last of the leftovers today and have decided I’m DEFINITELY making it for Thanksgiving dinner!

Snackage:
World Peas (mmm, taste like they’ve been coated in ketchup), a Quest peanut butter cup, black grapes x 3, and a little bowl of Heaven!

I just added 1 tablespoon of cocoa powder and a few drops of stevia to my cottage cheese, stirred it up, then I topped it with Zandra’s Spunky Monkey Pumpkin Pie and drizzled on a little coconut peanut butter

OMG, SOOOOO GOOD!

And if you haven’t made Zandra’s pie, you are surely missing out! It’s perfectly sweet with just the addition of banana. I made mine into muffins and got ten out of the batch…three days later, I only have four left! πŸ˜‰

But wait, that peanut butter cup deserve a little more attention too!

Like I mentioned in my review a few weeks ago, as soon as I tried Quest’s peanut butter cups, I was smitten, but even though I thought the flavor was spot on, the consistency was a bit dry, but NOT anymore…

Quest took it upon themselves to reformulate the cup to produce a smoother, creamier center than the old version. They sent me a box of the new formula and since I still had some of the old ones left, I decided to do a photo/tasteΒ comparison…you can already SEE the difference in the texture…but seriously, the new version knocks the old one out of the park!

We’re talking stick-to-the-roof-of-your-mouth creamy peanut buttery goodness here people!

Ok, so maybe not the apple cider vinegar, but seriously, I’m tired of trying to find something to mix it with since I gave up my Fitmixer…and I’m not giving it up (I swear a shot a day has done WONDERS for my complexion…I haven’t had a single breakout in WEEKS!)

I do like adding it to a cup of Earl Grey, but there’s no way I’m compromising the sweet deliciousness of my sugar cookie tea or gingerbread coffee (which by the way, literally tastes like there are crumbled cookies in your mug!)

      The tea tastes JUST like cookies…it’s incredible! And the tofu is so good! The ACV takes a little getting used to, but definitely worth it! Hope you have a great Thanksgiving, Fran! πŸ™‚

    Er yum at everything, especially that little bowl of heaven ;)! I am loving fall food lately too, especially roasted squash with feta & rotisserie chicken with fruit preserves (no cranberry sauce on hand) and of course the necessary greens! Such a hearty, yet easy meal!

    I’ve been taking ACV daily for about 4 months now yet have never had a shot (at least not yet)…I have been going the easy route with tablets!

      CHEATER! Lol! I actually forgot that they sell them in pill form…have you noticed any differences since taking them? I always wondered if they would have the same effect.

      And now you have me craving feta cheese and roasted squash! YUM!

  3. There is so much goodness here. I want to face plant into each and every dish….and the peanut butter cup. Tell me it’s true…a non-chemicalized easy breasy, beautiful peanut cuppery….shit I lost it, but I want one of those. Back in the day, Reeses were my number one go to until I read the ingredients…eek. I want this new fangled cup.
    Speaking of Thanksgiving (I wasn’t, oh well…), I hope you have a great one with the family (I’m assuming you’ll be with them) and they lavishly devour every single bite of whatever delicious concoction you bring because I suspect you’re not stopping at the kale salad. Bring on the food. πŸ™‚

      Tis true m’dear…peanut cuppery deliciousness sans sketch! πŸ˜€ And thank you…I’ll be spending Thanksgiving afternoon at my grandmother’s and then Friday evening with my parents and sister…that’s right, I get TWO turkey days!! Hmm, I need to go find my yoga pants! πŸ˜‰

  4. Aaaah, I want your breakfast and lunch right now! Really, I need to keep my eyes open for kale and fresh cranberries but if ever I can only get kale by the pound. Who eats that much kale quickly enough to keep it from going bad?

    Can I come over for Sugar Cookie Tea and PB cups? I’ve made Speculoos spread cups – mmmh!

      Umm, me? I throw it in practically anything…including smoothies (you just have to steam it first otherwise it doesn’t blend really well…unless you have been blessed by the Vitamix fairy Lol). Speculoos spread cups?? You better get over here NOW! …I’ll get the tea brewing! πŸ˜‰

  6. I have a minor (and by minor, I mean massive) obsession with peanut butter cups, so I’m going to have to find that Quest version!

    I can honestly say I’ve never done at ACV shot…considering the acidity, wouldn’t that be awful for your teeth? I mix 2 tablespoons ACV, 1/4 cup apple juice, and a few shots of stevia, fill the rest of the glass with water and throw a straw in there.

      Eh, well, it doesn’t really touch my teeth whenever I’m just knocking back a shot anyway. I’m not a big fan of fruit juices, but like I said, I do like mixing it in my Earl Grey! πŸ™‚

      You will DIE when you try these pb cups…for sure!

    I love the Sugar Cookie Sleigh Ride tea–so yummy! I’ve never tried and ACV shot, but have been considering it. What exactly is all the hype about? Does it REALLY benefit you at all, or is it just the latest health craze?

      Well, I know a lot of people say that it helps give them energy, but I don’t really see any difference as far as that. But like I said, it has done WONDERS for my complexion! And I know the ACV is to thank because when I ran out of it a few weeks ago, I started breaking out again!

    For fall I’m good with anything sweet potato. No ACV shot for me. πŸ™‚

      Oh, you’ve GOT to try the chocolate cheese! I just had it again last night and topped it with warm cranberries and it was so good!

    The best fall inspired thing I’ve eaten lately was the sweet dumpling squash I roasted this week – it was my first time trying one! It had a really good sweet but nutty flavour to it.

      Mmm, just the name of it sounds delicious! I swear there are so many varieties of squash out there that I haven’t tried! I really want to try a delicata since I’ve heard so many people say they love them!

  14. I really need to try those Quest peanut butter cups, and don’t worry, I will let you know how the peanut butter chocolate quest bar is when I get around to eating it! I mean, it’s been sitting in a drawer, but I think it just looks so delicious that I want to save it for the perfect time or something. I won’t lose it, don’t worry.

  15. I love the idea of cooked cranberries as a topping. I have a whole bunch of frozen ones, but not exactly ideal for cold weather. Cooking them would be perfection.

    That little bowl of heaven looks delicious. Chocolate and pumpkin—Can’t go wrong there!

    Those muffins ROCK! I got 12 out of mine… maybe I should have filled them more to get 10 bigger ones. Thought It doesn’t really mater since I just ate 2. Haha!

  18. Well pft. All of your meals make mine look like nothing! Seriously, I’ve been eating a lot of cereal, sandwiches, and wraps. I’ve yet to turn on my stove after the 3+ months that it hasn’t been used, and I’m getting too lazy to think up new food combinations πŸ˜† Oh it’s horrible. I’m ashamed at the non-foodie that I’ve become πŸ˜›

    I drank ACV for a few months but didn’t notice any significant effects, and then my stomach started to complain a bit so I stopped. I still have no idea if all the hype is true, but it’s great that you’re seeing some positive effects!

    I have an ACV shot before every meal to help with digestion. My naturopath says it does wonders for digestion. It is too rough on its own so I add a bit of lemon stevia to get it down!

  23. Your turkified tofu dish looks sooo good!! And I am a little obsessed with celestial seasonings seasonal teas! The sugar cookie is awesome by itself or cooked into oatmeal, and the gingerbread and pumpkin harvest are amazing mixed half and half with coffee and almond milk for “lattes”. yuumm. Call me a weirdo, but I actually like to mix acv with water and stevia, kinda like lemonade. Add cinnamon and it tastes like apple pie, or mix with lime or lemon juice for an apple-lemon/limeade!!

      Oh man, how have I not tried the cookie tea in oats yet?? That needs to happen VERY soon! I’m still on the lookout for the gingerbread and pumpkin…so far, I’ve yet to track them down!

  24. I knew they must have reinvented the Quest PB cups! I got the new ones too and I wasn’t sure why but I can tell.. it tastes a lot better and the consistency is a lot more creamy and just more desserty. I actually LIKE these! πŸ™‚ whew.

  25. I’ve been eating lots of cranberry and pumpkin too! Never had a ACV shot….I really don’t think I could stomach it. Gingerbread coffee sounds terrific.

      Aww, thanks Shreya! Easy peasy on the cranberries…just 30 seconds in the microwave with a bit of cinnamon and stevia! Simple yet delicious! πŸ™‚

  31. I had so many things to comment on and then I was shocked with the giving up of fitmixer. How did I miss that? Although I’m not super into dyes and artificial flavorings, I probably won’t give it up. However, I have been taking ACV shots every morning this week with just water and some NuNaturals Orange Stevia and I must say, it goes down pretty smooth.

    I just ordered the Sugar Cookie tea from Lucky Vitamin but have yet to try it (although I did smell it…is that weird?). I also ordered the plum and gingerbread flavors…loving the plum, but the gingerbread has also only had the sniff test. πŸ™‚ Trader Joe’s Gingerbread coffee has been in my mug every morning since before Thanksgiving, though!
