What I Ate in a Camper Down By the Lake

WIAW TealYep, it’s Wednesday and I’m here to share some of the deliciousness from this past weekend! So, on Monday, I hinted at some delicious eats shared with my mom while escaping life visiting her at the camper this past weekend….and today I am here to share them with you guys…in the VISUAL sense anyway…sorry, but there were no leftovers! πŸ˜‰

For the drive out there, I enjoyed a big ol’ mug of coffee and a new-to-me bar, gifted to me by the lovely Laura, that I now HAVE to recreate…

Pure Bliss Bar

Great flavor, amazing crunch and only SIX INGREDIENTS!

Not long after I arrived, mom and I jumped into our swimsuits and headed for some out for some water therapy. We ended up coming back to the camper completely ravenous after only about an hour or so (what is it about being in a pool that stirs up an raging appetite?) so I whipped up a couple of delicious salads…

Shrimp SaladRomaine, kale, bell peppers, yellow squash, cucumbers, carrots, tomatoes, walnuts, gorgonzola cheese and my mom’s addition of cocktail shrimp at the last minute…
best idea EVER!

A few hours later, we both were in the mood for something sweet…

Strawberry Poundcake & Caramel

Vanilla pound cake, fresh strawberries, ice cream, and caramel sauce (which I have seriously dreamt about on more than one occasion since…Y-U-M!)

The rest of the night was spent catching up about SOOOO much and well, I there was a late night incident of animal crackers and a jar of peanut butter…but that somehowΒ managed to go unpictured! πŸ˜‰

The next morning, I surprised my mom with waffles for breakfast!

Pumpkin WafflesTrader Joe’s pumpkin waffles (yeah, the same mixΒ from CHRISTMAS! #noshame) topped with pure maple syrup and sliced peaches.

For the record, peaches and pumpkin totally work! πŸ˜€

Just before heading out Friday afternoon, we whipped up a quick lunch/snack since our waffles had proved to be more than filling that morning…

Cucumber Tomato & Onion Salad

A small bowl of spinach topped with cucumber, tomato, and onion “salad” (chopped veggies marinated in Italian dressing for a few hours)

Quest Bar

And then I had a Quest bar on the road!

The perfect amount of food so as not to ruin my appetite for dinner with the man-friend later that evening…

Vegetarian Mexican Lasagna

I know…I’m such a tease! πŸ˜‰

  2. Strawberries, pound cake and vanilla ice cream…it doesn’t get any better than that- YUM! Everything looks so delicious and it’s almost impossible to give you JUST one favorite fruit/veg combo so here goes:

    *Applesauce & Greek yogurt
    *Bananas with peanut butter…and nutella
    *Carrot sticks with hummus
    *Stawberries with goat cheese
    *Pears with feta
    *Grilled mushrooms with balsamic

    …oh this is just a fraction of my faves πŸ™‚

  6. Looks like some great eats while camping! How did you pull that off?!?! I love watermelon in salads or in salsas….I’ll have to try the peach and pumpkin combo because I love both of those foods.

  9. YUM! I want all of this!!! I made a feast on Sunday of lentil burgers, homemade buns and home fries for father’s day…that was so much fun and so delicious! Sounds like you had a great time with your mom!

  13. OMG the whole time I was so confused. I was like “Why is she using my photos?!” and I looked harder and then I realized…. we have the same plates!! Hahaha Look at this:

    haha! well technically they belong to my parents but I use them every time I go to visit them which is almost every Sunday. Yay plate friends! πŸ˜›

    One of the best things I ate last weekend was the peanut butter and jam chicken wings I had on Friday night. It was all kinds of amazing, and proof that absolutely anything can be a vehicle for pb & j.

    Summer always brings lots of good fruit/veggie combos and I love figs and arugula or strawberries and spinach in my salads.

  22. You’re so right about swimming – whenever I used to swim laps at my campus pool, I would come home absolutely ravenous!!!

    Whatever that recipe is, it looks Mexican and therefore I know I’m going to love it. πŸ˜‰

    The best thing I ate over the weekend was salmon with pesto butter at a French restaurant we went to for my graduation dinner. Fish + butter = absolute perfection.

      Oh my gosh, that fish sounds incredible! I only recently realized the wonder of pairing seafood with butter and butter sauces…I still dream of the halibut I had at the wedding the man-friend took me to in April! Lol

  23. Vanilla pound cake, ice cream, and caramel syrup are definitely what dreams are made of. Holy.yum does that sound and look amazing. I can’t think of a favorite fruit/veg combo at the moment, but the best thing I ate this past weekend was definitely the homemade Black Forest cake that I made for my dad for Father’s Day. Talk about dreaming of dessert… although maybe that was just part of sleeping off a sugar coma πŸ˜‰

  24. Wow! Gourmet camping trailer food! Looks like a fun trip just after seeing the food! I love adding fruit to my salads. Lately it’s strawberries in my spinach salad with goat cheese and pecans. Yum! We actually had it while on vacation and it was a huge hit!

  26. That’s great you got to spend a weekend away with your mom; they’re the best aren’t they, especially when it includes your version of strawberry shortcake. I’ve been on a strawberry kick lately so of course I want that. I wouldn’t say no to the salads or the waffles either, and I guess I’ll just have to wait for dinner. Although I won’t be patient about it. I’m pretty sure I’m pouting now.

  31. Big salads are the best things to have in the summer! I’m actually not a big fan of mixing fruits and vegetables though, unless it’s a veggie that tastes good sweet, like pumpkin. So, great idea!

    Ahhh…pound cake (or angel food cake) with whipped cream and berries was one of my favorite desserts growing up! It’s such a perfect summertime treat.

    My favorite fruit and veggie pairings are strawberries with spinach, avocado, goat cheese, roasted walnuts and balsamic vinegar, grilled peaches with spinach or arugula, goat cheese and roasted walnuts, or peaches and avocados (although avocados are technically fruits!).

  36. Somehow I can imagine that pumpkin and peach would be a great combo! My favorite veggie/fruit combo is probably grilled bell peppers and onions with grilled pineapple.
