Like getting one of these loaves of bread for FREE just because it rang up at the wrong price!

Two loaves of organic Β bread for only three dollars?! Thank youuuuu, Kroger! Half points for almost matching the manicure!

Roasted Portobello Sandwich

Like using your FREE basil and FREE bread to whip up one HELL of a roasted veggie sandwich!

That would be kale, portobello, cheese, tomato, a basil with homemade pasta sauce.

Homemade Marinara Sauce

Like deciding that one little can of tomato paste was all your homemade sauce needed to reach that thick consistency you were looking for.

Blueberry Basil Grilled Cheese

Like finally taking a break from the tomatoes and throwing something #strangebutgood into your grilled cheese sandwich!

This was SO good, there was NO WAY I could wait till Friday to share…warm blueberry basil sauce, ooey gooey melty cheese, crisp toasty bread…a little bit of sweet and savory HEAVEN!

Blueberry Basil Grilled Cheese

Prep Time: 3-5 minutes

Cook Time: 8-10 minutes

Ingredients (Serves 1)

  • 2 slices whole wheat bread
  • olive oil spray (or butter)
  • 1-2 slices sharp flavored cheese (I used white cheddar, but Asiago would also be a good choice…or goat cheese for the less adventurous! ;))
  • 1/3 cup blueberries
  • 1/8 teaspoon arrowroot powder (or preferred thickener, ie: cornstarch, xanthan gum)
  • 1 1/2 teaspoon honey
  • 1-2 Tablespoons fresh chopped basil

Instructions

1. Heat a non-stick skillet (or grill pan) over medium heat and coat with cooking spray.
2. In a microwave-safe bowl, combine blueberries, honey, and basil and cook on high for 1 minute.
3. Remove from microwave and stir in arrowroot powder (or choice thickener)
4. Take your bread slices and coat one side of each with a spritz of olive oil (or spread with butter).
5. Place one slice of bread spritzed (or buttered) side down in your skillet and top with cheese slice(s).
6. Spoon blueberry basil sauce over cheese and place the other side of bread on top.
7. Cook for 4-5 minutes or until bread is golden brown and cheese is melted before flipping and cooking an additional 4-5 minutes on the other side.

      AaaaaasaaaaMEN! And seriously, I was just telling my friend at work (the one who gave me the basil) that it has now officially booted cilantro off the top of my favorites list! Lol

      It’s not really a recipe…all I did was grill a portobello cap in my grill pan until it got soft, topped it with some cheese and then layered it up with all the other stuff…easy peasy! πŸ™‚

    Why is homemade pasta sauce so good. I literally just eat it as a meal itself sometimes. Who needs pasta when you have the sauce?!

  14. Hummm something marvelous? Well I made a bajillion things! I made homemade Harissa which turned out AMAZING and you’d hate it because it was spicy but that didn’t stop me from licking the spatula (and then coughing quite violently because it was spice—ay!).

    Oh my lord!! I neeeed those sandwiches. Holy freaking crap. Both of them sound so good! Although I must admit, I am slightly intimidated by the basil and bloob one. I don’t often mix sweet and savory…Im that girl who prefers her sweet taters with ketchup and not nut butter if you catch my drift!

    I love farmer’s markets because you can get so much produce for such a little price! I miss ours because I could get a week’s worth of produce that would feed our family for under $20!

    And that chocolate edamame bar sounds heavenly! I buy the dark chocolate covered edamame from Trader Joe’s and it’s one of my all-time favorite treats. I’m actually embarrassed to admit how quickly I go through those little cartons!

  24. If there was anything exciting me almost [read: there isn’t] as much as grammar it’d be manicure matching food :D. All I’d be able to offer on that terms today would be – not even intentionally – manicure matching my running short and (!) the dress I wore for my [kind of] graduation ceremony later in the day. You beat me to it by colour-coordinating your foods to your nails, though ;). I’m currently trying to decide on which Essie polish to buy next and you didn’t make my decision any easier adding two more options. However, if I was to simply match them with my favourite food … hm, not sure how I’d feel about kabocha green nails, though πŸ˜‰ …
    Marvelous about my weekend were a walk in the woods with my parents and dad hugs – you know me.

      Hmmm, maybe not green but orange kabocha nails just might work! Hmmm, that might just have to by MY next color…obviously the seasonal denial extends past food since I refuse to give up my summer manicure colors! πŸ˜‰

  25. Essie is my favorite! I definitely notice that it stays on longer…except at my new job where I break my nails once a week now. Sad days!!

      Oh girl, I feel your pain! It is SO hard for me to keep my nails looking good while working at the hospital. I’ve been doing really well keeping them up since I got back from vacation, but after ONE day of going without polish, I swear half of them ripped and/or broke! I had to bite the bullet and cut them all off yesterday! Boo!

  29. 6 dollars for all that produce??? 😯 Okay, I seriously have to start cozying up to my farmers a little bit… I have to pay 6 dollars for one medium sized bag of sweet carrots. Maybe I need to start coming at the end of the day and keeping my fingers crossed that they’re just wanting to get rid of some things πŸ˜‰ And I can’t even talk about that sandwich right now. It’s almost time for bed and if I think about it too long, I’ll have visions of blueberries and cheese dancing through my head all night long.

      I can’t really see how that would be a bad thing…unless you wake up in the middle of the night with blueberry sauce all over your sheets! πŸ˜‰ Six dollars for ONE bag of carrots? Dude! Are they made of gold?! I started visiting this particular booth a couple of months ago and the lady and I just happened to strike up a conversation…since then, she always recognizes me and instead of pricing everything out individually for me, she just gives me a price for whatever I shove in my bag! Of course, on the days she’s not there, I have to pay “common people” prices! Lol
