Happy Sunday, guys!

I hope you are all having a wonderful weekend! And before you get all, “Where’s the pancakes? Show me the pancakes, Jerry” hear me out…

I’ve been seeing these postsΒ all around blog world lately and I’ve really wanted to get in on the cleansing of my soul fun! So, since I’m gearing up for my trip to the land of milk and honey carbs and cheeseΒ today, why don’t we just roll with it? Plus, my first confession may help to explain things a bit…

Confession: I am not in any way shape or form, a baker.

But somehow by the grace of…GOD?!, I was attempting to make pancakes the other day and well, they turned into muffins! I know, right? Promise I’ll explain that interesting transition a bit later…after I can test the recipe again and make sure I have some decent picturesΒ it wasn’t a total fluke! πŸ˜‰

Confession: I seriously do have ADD.

Sincerely Nuts PistachiosNo…really. The lovely people over at Sincerely Nuts asked me if I would mind doing a review* of some of their pistachios. Once they sent me a flavor list and I spotted the chili lime flavor, I knew I had to try them! They arrived one rainy and overcast day…obviously not idea for pictures…so I just put them away for safekeeping…that was FIVE months ago!?! I just happened to find them the other day as I was packing my travel snacks, cracked one open and I discovered something…

Confession: I believe shelling nuts to be a form of therapy.

Seriously though, I rarely EVER snack on nuts because I don’t typically find them to be very filling, but I guess there’s just something about having sloooow done to remove each shell! I had just a handful of these and was so satisfied…and the flavor is incredible! Really makes me want to try Jenn’s salmon recipe!

Back in like January, while I was prowling the mark down section at Publix, I literally skipped a foot off the ground when I spotted what was on the shelf…

40 CANS OF PUMPKIN FOR 50 CENTS EACH!!! 😯

Obviously I had to buy a few them ALL! Don’t you frickin’ judge me! Besides, they don’t expire until 2015…you know, like that would really stop me! But now maybe you realize how those pistachios went missing? And speaking of traveling snacks…

Confession: I am an habitual over-packer.

Vacation Snacks

Whether it’s half my closet or half my PANTRY, I just don’t understand how to be a light packer! I’ll be in Cleveland for five days…you think this will be enough to last me? πŸ˜‰ Now who wants to come sit on my suitcase so I can get the damn thing zipped?!

  1. I’m an overpacker too. I’m always like but what if a rich billionaire invites us onto his yacht for a fancy dress cocktail party, surely I need an outfit just in case that and many other scenarios I dream up were to happen!

  2. lol great post, but i totally planned on making your pancakes today chicky πŸ˜‰ you’ve got me hooked hahahaha πŸ˜‰ anyways, one of my confessions….. hmmmm…. i always pack meat with me when i travel and it’s totally not “food safe” because i obviously don’t take gel packs/freezer packs along, so, yes, i eat meat that sits there for hours without refrigeration πŸ™‚ great example set by a nutritionist huh?? πŸ˜‰

  4. Holy pumpkin! That makes the one lone can sitting in my pantry pale by comparison :-p And I have a tendency to bring my entire closet whenever I travel, so I can’t help you much on the overpacking thing :-p

      Well you do have something I don’t have right now…and that would be a beauuuuuuuuutiful kabocha! My poor little guy only made it two days…and that wasn’t even a whole 48 hours! Ha!

  5. Well, seeing as my snack packing is the same as,or even bigger than, yours, I’m prolly the last person to give packing advice. At the end of the day, I’d rather have it and not need it than need it and not have it. That’s my story and I’m sticking to it πŸ˜‰

    As for my confession, there’s a new man in my life. His name is Keurig, and I have to admit that I love waking up to him. Just don’t tell the other guy πŸ˜‰

      Hahaha! At first, I was all like, “Geez Amanda, I know you have a new guy but you don’t have to get all ‘woo hoo, look at me, look at me’ about it! Haha! A Keurig? That’s awesome! I thought for a little while about getting one, but well…I’m cheap! Ha!

      And seriously…that has been my motto from day ONE!

  6. You do realize I have food in Cleveland…..yes….. πŸ˜‰
    Although you may need that for all the road trips. That’s right, I said plural road trips.
    You should also know you’re heading to the land of eggs because I have far too many in the fridge right now. I hope you’re ready for some omelets and quiches because it’s going to get eggy up in here, up in here. Y’all gonna make me lose my mind, up in Here, up in Here.
    Alright I’m off to make sure my home is presentable, which translates to the cat hair doesn’t attack you the moment you walk in the door. Although I have one cat who might. He’s a peach; you’re gonna love him.

  8. I just had a legitimate freak out over those chili lime pistachios!!! You know how much I love pistachios and anything spicy! Must get my hands on those ASAP!

    And 40 cans of pumpkin for 50 cents??? I would have bought out the store!!!

    I’m such an over packer too! Especially when it comes to food. I never want to be without something healthy that I can eat while traveling. My overpacking definitely saved us when we were traveling in Barcelona since the food was much different than we were used to. The endless granola bars, trial mix, Starbucks via, etc were lifesavers!

      I hear ya girlie! I’ve been in too many instances where the overpacking has paid off to NOT do it! And I make sure to remind all my friends/fellow travelers of that should they forget and think about picking at me for it! haha!

  10. Lalalalala I can’t hear you! You did NOT get that obscene amount of canned pumpkin while we can’t get it at all (!) over here. It’s just a dream, Heather. Once you come back from the land of well-cracked jokes [and carbs and cheese] they’ll all have disappeared [and hopefully magically found their way to my doorstep].
    Until then, though, why not pretend the cans actually were there and drop them on your suitcase for easier zipping up?! And oh, I guess you don’t trust Meghan to have a stocked pantry looking at what you’ll bring along ;).

    • That’s what I’m saying. It’s like she doesn’t even know me…or my pantry. Good god, you’d think she’d never seen them before….oh wait…hmmm.
      She was smart to bring the protein powder, although she probably doesn’t know I have a ridiculous amount of eggs which need to be eaten. πŸ™‚

        EGGGGGGS! Oh my god, I was drooling all over that Greek quiche you put on IG today! Oh…sorry…I got excited! I know, I know…I probably won’t even need HALF the stuff I packed, but C’MON it’s an eight hour friggin trip…who KNOWS what could happen in that amount of time?! I mean, it’s not like there could possibly be any stores between Tennessee and Ohio! 😯

      Haha! What can I say? It’s an eight hour trip…and I won’t be charged with assault and battery for gnawing off one of the man-friend’s arms on the way up there! Lol And seriously? I STILL can’t believe you can’t get this stuff! I’ve really gotta work on that damn teleportation device…or invest in a good shovel for an underground tunnel! πŸ˜‰

  12. That is I think the funniest product review I’ve read lately.
    If you get bored with the pumpkin (bored? with pumpkin?) you could shuffle off a few cans to a food bank–it may be appreciated.
    That sounds preachy, and I don’t mean it to–I love a bargain, but I don’t love being compelled to eat something that I bought a ton of just because it was a bargain, so passing it along to the food bank is freeing for me because it lightens my load and helps out some other folks. I just did it with 55 lbs of ground beef, because I was getting a new cow in the freezer. And now I have 110 lbs of ground beef, and am planning a 110 uses for ground beef round up.
    Have fun with Meghan and you must try the dark chocolate sea salt caramel gelato.

      Oh wow! I didn’t even know you could donate cold-stuffs to a food bank! I love to help whenever I can, but I’m pretty sure every one of these cans will be put to GOOD use before 2015…though I DO have a pantry full of grains that I’ve been giving the stank eye! Haha!

  13. LOL! That is the most epic stash of pumpkin I’ve ever seen. I don’t even think my grocery store has that much pumpkin on its shelves!

    My confession: I went out for drinks with my friends on Friday night… and was home by 9:15 pm hahaha. Total grandma right here.

      Awww! Hey, you went out for drinks…that’s something! Just let me know if you start getting the itch to play bingo or shuffleboard and I’ll make sure I overpack a bag for an emergency run to Canada! πŸ˜‰

  14. I confess….the dirty part of my mind is ridiculously excited for the antics you and Megan get up to. Just please be kind to zucchini- I’ve been digging them lately in everything and don’t even want to know what phallic comparisons this elongated, green vegetable will be tortured with.

    I am definitely an over packer, and even with snacks, I go overboard and probably end up buying more during the trip too…oops.

    I also confess that when I see cans stacked like that at a grocery store I get an overwhelming urge to knock them over and run. πŸ˜‰

  16. I overpack a lot! I always think I need to take a MILLION snacks with me too because I just can’t be caught someplace gettin’ all hangry!! πŸ˜‰

  17. I have done a very similar thing with pumpkin… Except in the opposite direction. Haha. One time during the great pumpkin shortage I really needed a can for a recipe that I was making for extra credit at school. Since our grocery store was out of canned pumpkin puree, I had to buy one of those Libby Pumpkin Bread KITS to get the pumpkin puree inside. Lol. I ended up just using the kit with bananas for banana bread and it was quite good. But I had to have my pumpkin!! πŸ˜€

      Oh my god, the pumpkin shortage…such a dark, dark time for squash-addicts everywhere! Haha! Way to go on using your resources! I would have done the SAME thing!

  18. I confess: I went out for brown sugar the other day…and it took me over 2 hours to get back home because I went to TJ Maxx and then Target…and you know how that goes!

      Hahaha! Well that would be a pretty sweet deal, but unfortunately we’re driving the EIGHT HOURS to get there…let’s just hope all these snacks distract me from my butt going numb! Haha!

    50 cent pumpkin is nothing to joke about. I would definitely also buy all 40 cans.

    I am also a habitual over-packer. I backpacked through Southeast Asia for 3 weeks with just a backpacking-sized bag (obviously) but pack half my closet AND pantry as well if I’m going on a weekend trip. You can’t be hungry or naked, right?

      Ha! Thanks, Cassie! I have to say, the odd looks I was getting at the store did NOT go unnoticed, but it was totally worth it! And omg, I can’t imagine having to pack everything in a backpack…I’d fall over backwards for sure! Lol
