My Favorite Cornbread Muffins

Light and fluffy with the perfect amount of sweetness, these cornbread muffins, made healthier by using Greek yogurt instead of oil, are one of my favorite snacks…especially with a bit of melted butter and honey drizzled on top!

I’ve said it once (ok, maybe a dozen or more times) that I’m a southern girl through and through. Pulled pork, turnip greens, fried green tomatoes, and well, we all know how I fee about okra! I love it all. And yes, I WILL take some sweet tea to wash it all down! But one of the things that I love most, that I can never find is a good, MOIST cornbread.

Yep, I said it…the “M” word! 😯

It had to be done. There just isn’t another way to describe whats lacking from practically EVERY cornbread I’ve come across in my thirty (gasp) years. Never have I come across one that could serve as anything more than a soup-soaker-upper because let’s face it, I’m only going to end up with a lap full of crumbs.

But then I found it…the recipe of my dreams. Which quickly became my own after I got halfway through the mixing and stirring and realized I made a boo boo. The original recipe called for regular non-fat yogurt but all I had was Greek. Knowing that Greek yogurt has a much thicker consistency, I had to do my best to guess how to balance it out. So I added “a bit” of milk, threw it in the oven, and crossed my fingers. And to my surprise…

It turned out to be the best damn cornbread EVER!

The first time I made it, I baked it in an 8×8 baking dish but when I went to try the recipe again to get the measurements exact, I didn’t want to wait 20 minutes for it to bake. So…? Enter the muffin pan to my rescue! Separating these suckers cuts the cooking time in HALF and we all know what that means…

Faster food to face time! 😉

I also chose to use whole wheat pastry flour in place of the whole wheat flour because I’m not a fan of super dense quick breads. I like my cake heavy but I want my muffins light! If you don’t have whole wheat pastry flour in your pantry but still want the light and fluffy consistency that mine had, you can substitute 1/2 cup whole wheat flour plus 1/2 cup of cake flour.

My Favorite Cornbread Muffins

Prep Time: 10 minutes

Cook Time: 12-14 minutes

Ingredients (12 muffins)

  • 1 cup medium ground cornmeal
  • 1 cup whole wheat pastry flour
  • 1/4 cup white sugar
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup plain nonfat Greek yogurt
  • 2 large eggs, beaten

Instructions

1. Preheat oven to 400°F
2. Coat a muffin pan with non-stick spray and set aside.
3. In a large bowl, combine dry ingredients.
4. In a medium bowl, stir together yogurt and eggs.
5. Add yogurt and egg mixture to flour mixture and stir until dry ingredients are incorporated.
6. Spoon batter into muffin cups, filling approximately 2/3 full.
7. Bake for 12-14 minutes or until golden brown.
8. Remove from oven and allow to cool 5 minutes before removing from tin.
9. Best served warm OR reheat in microwave for 15-20 seconds on high.
10. Store in an airtight container for up to one week or freeze for 1-2 months.

I really hope you guys like this recipe. Jason told me he’s never been a big cornbread fan but he couldn’t stay out of the first batch. After our initial dinner, we had it with butter and honey, peanut butter and jam, and then cut some in half and topped it with fried eggs. Since then I’ve made two MORE batches and have been snacking on them for the last week. FYI, they’re also great with cream cheese and jam. Eh, I always did think bagels where more of a northern thing. 😉

Thinking Out Loud: It’s About Time!

Annnnnnnnnd she’s BACK!

After nearly two months out of the game, hopefully if Amanda can find it in her heart to forgive me, then you guys will too. Also? Posting twice in the same week for TWO WEEKS in a row? Yeah, I may be onto something here. Maybe. 😉

While I’ve been getting that itch to throw shit away like I do every year (please tell me that’s not just me), I haven’t quite made it happen just yet. I blame it on the weather and the fact that it has.not.stopped.raining all week. So, instead of skipping around the house collecting things to add to the growing Goodwill pile in the garage, I’ve been a little more mellow in my motivation. I’m sorta easing into it, if you will, with a few things that have been neglected lately.

Gym Selfie

Getting my ass in the gym…for the first time…in over two weeks…and then leaving after a walk and fifteen short (and incredibly sweaty) minutes. Seriously, the amount of endurance you loose in such a short time always gets me! The selfie I took on the way out the door explains the weird looks I got. Ha, gotta love curly hair.

Chipotle Burrito Bowl

Making my way over to the “new” Chipotle on the other side of town that opened oh just like two years ago. Well? And I have to say that I only did this to myself BUT…it just wasn’t that good. I’m sorry, but my heart belongs to Cafe Rio…and their crack-like tomatillo ranch dressing that I could bathe in without a second thought. Womp womp. 🙁

Yoga

Finding a yoga class that fit into my schedule! I was a little disappointed that my favorite instructor wasn’t teaching due to illness, but I tried someone new and I really liked her…especially when she came over at the end of class and gave everyone a little head and shoulder rub with some fragrant oil! It’s been over two months since I was last in the studio so I had trouble with some of the poses…but the real trouble was holding down that burrito bowl from lunch four hours earlier. Ugh.

Buying my plane ticket to Blend! And then proceeding to harass Melissa with emojis. I had to wait for.ev.er to get my time off approve for work and then, I don’t know, I just kept putting if off. But I have to say I was pleasantly surprised by the cost…especially after waiting so long. Gotta love not having to fly into Salt Lake City airport!

Bob's Redmill Giftcard

Finding AND spending the Bob’s Redmill gift card that I won in the Blend raffle TWO YEARS AGO! Oh and can I just say how amazing those people are? When I got online to make my purchase and realized that I had to call to make a gift card purchase, I was a little put off, but after dialing the number, an actual person picked up! “Bonita” helped me pick all my items quickly and easily and even evened out the shipping so I wouldn’t have to pay a couple of dollars extra. 😀

Cheesy Potatoes

Busting out the Trader Joe’s cheese that I bought back in um…January? The amazing caramelized onion cheddar has already come and gone, but SOMEhow, the truffle cheddar got pushed to the back of the cheese drawer and was almost forgotten about. Yeah, I had to scrape off a fair amount of homemade penicillin but I have to say, it made a DAMN good lunch melted over these leftover potatoes!

Breaking out the big guns and taking some REAL pictures! Which was actually more of a process than it sounds because I had to…find the battery charger, curse a lot while searching for it, charge the battery, remember how the hell to use the damn camera, take my pictures, find the cord that connects it to my computer, curse a lot while searching for it, upload my pictures, deem them marvelous and then…

A Marvelous Anniversary

Jason and I had an AMAZING anniversary!

And now I just have to take a second to fan my face, because I’m getting all flushed with this goofy grin on my face! Oh and speaking of, I wish I could give you all HUGE hugs (cuz I’m a hugger) for all the super sweet comments left on my last post. Thank you all so so much! I’ve never in my life been happier than I am right now. 😀

anniversarEEEEEEEEEEEy!

Anniversary Flowers

First, he surprised me with flowers!

And he did a very good job…gorgeous tulips, a big fluffy hydrangea, and my favorite “special” roses (aka, the ones whose petals are darker at the tips than at the base). But the card is what really got me. He always knows what to say to make my heart do backflips.

Neither one of us really had a plan for the day, but when we found out that the forecasted rains were coming in later than expected, we both knew exactly what we wanted to do. We decided to go back to where it all began…on Ashland City’s Greenway Trail where we went on our first date. But before we decided to tackle the 7+ mile hike, we knew we’d need fuel first!

Jason suggested sushi since it’s relatively light and he surprised me by actually ordering a roll of his own. He usually just tries a bite of mine but says that sushi’s not really his thing. Well, obviously, I’m rubbing off on him because he LOVED his Cowboy roll and didn’t think my Playboy roll was half bad either…a definite #strangebutgood choice. 😉

I have to say, Kori has definitely redeemed itself. I’ve been to this restaurant several times over the years but I’ve never been completely happy with my experience (read: the service was always lacking), but it looks like they’ve changed some things. Our waiter was fantastic…as I was sure to tell him in the note I left with my generous tip. The steak was cooked perfectly and both the rolls and our appetizers came out quick.

Me & Jason Anniversary

After we finished eating, we made our way to the trails and over the next two and a half hours, we walked and talked, pointed at flowers, Googled flowers, and of course, I had to stop periodically to pee take pictures. 😉

Fire Pinks, Bluebonnets, Phlox, Columbines and more, but the ones that really stole the show…ANDwere the freakin’ hardest ones to find online were these Shooting Stars. Aren’t they gorgeous?! Move outta the way Daffodils, there’s a new favorite in town!

Owl

 We also saw this HUGE owl! He may look small since he flew further away while I was fumbling with my phone (ohhhh, love that accidental alliteration), but he had to be at least the size of Atticus! I’m willing to bet he could’ve eaten him. Sorry Sam.

After walking the last couple of miles to the car in the dark because we are both seriously good planners like that, we munched on some bars that we had stashed in the car because we ARE seriously good planners like that know how we get when we get hangry. And the rest of the night was spent cuddling and being incredibly gross in love. I’ll spare you the details. 😉

But just when we thought the anniversary fun was done, we both surprised each other yesterday with little “gifts”…at the same time…without knowing the other was doing anything. Actually, it was kinda creepy. Lol.

 Flowers, sushi, getting a dose of vitamin D while enjoying some good company in B-E-A-utiful weather, cuddles, cookies, and selfies? Maybe I’m not much of a girl, but I thought this was the perfect day, ie, I see a reason to stress yourself out about a day that is supposed to be special just as it is. I loved the simplicity of it all. How it kinda felt like any other day, but we both knew that it was so much more.

One year down, many more to go!
