Fall Flair & Peanut Butter Heaven

Happy What I Ate Wednesday!

As we gear up for Thanksgiving this week, I couldn’t help but notice that Sunday’s meals had a bit of fall flair to them…

Breakfast:
Plain non-fat Greek yogurt topped with a warmed morning glory breakfast cookie, cinnamon, and fresh cooked cranberries.

Lunch:
Toast topped with tuscan herb hummus, steamed kale and a DOUBLE YOLK egg with carrots and bell pepper on the side.

Ok, so maybe not very fall-ish, but c’mon, you gotta celebrate a double yolk in style! 😉

Dinner:
Caramelized Onion, Cranberry & Kale saute with turkey-fied tofu

I seriously canNOT get enough of this dish…I just finished up the last of the leftovers today and have decided I’m DEFINITELY making it for Thanksgiving dinner!

Snackage:
World Peas (mmm, taste like they’ve been coated in ketchup), a Quest peanut butter cup, black grapes x 3, and a little bowl of Heaven!

I just added 1 tablespoon of cocoa powder and a few drops of stevia to my cottage cheese, stirred it up, then I topped it with Zandra’s Spunky Monkey Pumpkin Pie and drizzled on a little coconut peanut butter

OMG, SOOOOO GOOD!

And if you haven’t made Zandra’s pie, you are surely missing out! It’s perfectly sweet with just the addition of banana. I made mine into muffins and got ten out of the batch…three days later, I only have four left! 😉

But wait, that peanut butter cup deserve a little more attention too!

Like I mentioned in my review a few weeks ago, as soon as I tried Quest’s peanut butter cups, I was smitten, but even though I thought the flavor was spot on, the consistency was a bit dry, but NOT anymore…

Quest took it upon themselves to reformulate the cup to produce a smoother, creamier center than the old version. They sent me a box of the new formula and since I still had some of the old ones left, I decided to do a photo/taste comparison…you can already SEE the difference in the texture…but seriously, the new version knocks the old one out of the park!

We’re talking stick-to-the-roof-of-your-mouth creamy peanut buttery goodness here people!

Drinkage:
Sugar cookie tea, gingerbread coffee, water, ACV shot

Ok, so maybe not the apple cider vinegar, but seriously, I’m tired of trying to find something to mix it with since I gave up my Fitmixer…and I’m not giving it up (I swear a shot a day has done WONDERS for my complexion…I haven’t had a single breakout in WEEKS!)

I do like adding it to a cup of Earl Grey, but there’s no way I’m compromising the sweet deliciousness of my sugar cookie tea or gingerbread coffee (which by the way, literally tastes like there are crumbled cookies in your mug!)

In an effort to figure out what I’M making this year, I went back and searched through some of my old recipes (and finally got some of them transferred over to my Recipage!) and figured maybe there are a few of you out there who are still don’t have a plan.

Caramelized Onion, Cranberry & Kale Saute

Happy Monday, loves!

After TWO MONTHS of missing out, I’m finally jumping back on the Meatless Monday train with Heather and all my veggie lovin’ friends!

Since it took me so long, I figured I’d cover a few bases with this one:

This week’s ONIONS

Last week’s NUTMEG

Last month’s KALE

Then I threw in some CRANBERRIES just because it’s Thanksgiving week!

And maybe because they’re pretty in pictures delicious! 

And speaking of Thanksgiving…if any of you out there are total procrastinators like I am and haven’t even THOUGHT of what you’re going to make/take to dinner this week, this dish comes together in 20 minutes or less!

Just sayin’ 😉

Sweet and savory with a touch of warm cinnamon spice.

I thought about shortening the title of this recipe since it doesn’t really roll off the tongue well, but I really wanted to get the point of the caramelization across because the difference between onions and caramelized onions can mean the difference between a good meal and a “slap yo mama” meal. Plus, once I thought about abbreviating it…

C – O – C – …?!

Yeah, for obvious family-friendly reasons, the long title remains. 😉

Caramelized Onion, Cranberry and Kale Saute

Prep Time: 5 minutes

Cook Time: 15-20 minutes

Ingredients (Serves 2)

  • 2 Tablespoons balsamic vinegar
  • 1 Tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon freshly ground nutmeg*
  • 1 1/2 Tablespoons olive oil
  • 1 large onion, halved and sliced (I used a mix of red and yellow)
  • 1 garlic clove, minced
  • 1 cup fresh cranberries
  • 6 cups fresh kale, roughly chopped
  • 2 Tablespoons chopped walnuts, toasted (optional)
*Never underestimate the power of adding a dash of fresh nutmeg to greens…the way it enhances the flavors is beyond amazing!

Instructions

1. In a small bowl combine vinegar, maple syrup, and spices, set aside.
2. Heat olive oil in a large skillet over medium heat.
3. Add onion, stir to coat in oil and cook, stirring occasionally, until translucent
4. Add garlic and cranberries, continue cooking until cranberries start to soften.
5. Add kale and drizzle vinegar mixture overtop.
6. Continue cooking, stirring frequently, until kale is wilted.
7. Plate and top with toasted walnuts.

Talk about a POWERMEAL…619% of vitamin A?!

Like I said, this makes a super quick and easy side dish, BUT if you’d like to go ahead and make a meatless MEAL out of it, just add some grilled tofu…

All I did was splash on some liquid smoke and then rubbed it down with a mix of sage, garlic, and a few other random spices, cooked it in a grill pan for about 5 minutes per side and…

Voila…turkey-fied tofu! 😉
