Caramelized Onion, Cranberry & Kale Saute

Happy Monday, loves!

After TWO MONTHS of missing out, I’m finally jumping back on the Meatless Monday train with Heather and all my veggie lovin’ friends!

Since it took me so long, I figured I’d cover a few bases with this one:

This week’s ONIONS

Last week’s NUTMEG

Last month’s KALE

Then I threw in some CRANBERRIES just because it’s Thanksgiving week!

And maybe because they’re pretty in pictures delicious! 

And speaking of Thanksgiving…if any of you out there are total procrastinators like I am and haven’t even THOUGHT of what you’re going to make/take to dinner this week, this dish comes together in 20 minutes or less!

Just sayin’ 😉

Sweet and savory with a touch of warm cinnamon spice.

I thought about shortening the title of this recipe since it doesn’t really roll off the tongue well, but I really wanted to get the point of the caramelization across because the difference between onions and caramelized onions can mean the difference between a good meal and a “slap yo mama” meal. Plus, once I thought about abbreviating it…

C – O – C – …?!

Yeah, for obvious family-friendly reasons, the long title remains. 😉

Caramelized Onion, Cranberry and Kale Saute

Prep Time: 5 minutes

Cook Time: 15-20 minutes

Ingredients (Serves 2)

  • 2 Tablespoons balsamic vinegar
  • 1 Tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon freshly ground nutmeg*
  • 1 1/2 Tablespoons olive oil
  • 1 large onion, halved and sliced (I used a mix of red and yellow)
  • 1 garlic clove, minced
  • 1 cup fresh cranberries
  • 6 cups fresh kale, roughly chopped
  • 2 Tablespoons chopped walnuts, toasted (optional)
*Never underestimate the power of adding a dash of fresh nutmeg to greens…the way it enhances the flavors is beyond amazing!

Instructions

1. In a small bowl combine vinegar, maple syrup, and spices, set aside.
2. Heat olive oil in a large skillet over medium heat.
3. Add onion, stir to coat in oil and cook, stirring occasionally, until translucent
4. Add garlic and cranberries, continue cooking until cranberries start to soften.
5. Add kale and drizzle vinegar mixture overtop.
6. Continue cooking, stirring frequently, until kale is wilted.
7. Plate and top with toasted walnuts.

Talk about a POWERMEAL…619% of vitamin A?!

Like I said, this makes a super quick and easy side dish, BUT if you’d like to go ahead and make a meatless MEAL out of it, just add some grilled tofu…

All I did was splash on some liquid smoke and then rubbed it down with a mix of sage, garlic, and a few other random spices, cooked it in a grill pan for about 5 minutes per side and…

Voila…turkey-fied tofu! 😉

Peanuuuuuut, Peanut Butter…

You had to know it was coming…

I mean, seriously…

What could food bloggers (barring any allergies) possibly love more than cinnamon?

Especially when paired with a little LOT of chocolate? 😉

Peanut Butter Cookie Pancakes

Prep Time: 5-10 minutes

Cook Time: 10-12 minutes

Ingredients (Serves 1)

For the Pancakes

  • 1/4 cup peanut flour
  • 1/8 cup brown rice flour (or other preferred flour)
  • 1/8 cup coconut flour
  • 1/2 teaspoon sodium-free baking powder
  • 1/2 cup unsweetened almond milk
  • 1 egg white
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon butter extract (optional)
  • 5-10 drop liquid Stevia (or other preferred sweetener)
  • 1-2 Tablespoons chopped peanuts (optional)

For the Cocoa-Infused Maple Syrup

  • 1 Tablespoon unsweetened cocoa powder
  • 1/8 cup maple syrup

Instructions

For the Pancakes

1. Preheat a skillet or griddle to medium heat and coat with cooking spray.
2. Combine flours and baking powder.
3. In a separate bowl, whisk egg white until frothy.
4. Add milk and extracts to egg, stir.
5. Add wet ingredients to dry ingredients and stir well.
6. Fold in chopped peanuts if using.
7. Spoon batter onto hot skillet, forming 3 small-medium sized pancakes.
8. Cook 5-6 minutes per side or until golden brown.
9. Plate, drizzle with cocoa-infused maple syrup, and top with chopped peanuts and chocolate pieces (I used cacao nibs).

For the Cocoa-Infused Maple Syrup

Combine cocoa powder and maple syrup, whisk well.

Well, after about 156 camera clicks, 6 different fork placements, and 5 plate rotations, the photo session ends right about the time the drool starts to slide down my chin.

Wolves, Waffles, and a Winner!

Hey guys and happy Friday!

I hope you all had a fantastic week!

Last night, I met up with my best friend, Sherri, my mom, and my sister, Tori for the Breaking Dawn Part 2 premier…

I may not be a Twilight groupie…of course, if I had to choose, I’d go with Team Jacob just because Taylor Lautner has such incredible abs….I mean seriously, I’d take a sledge-hammer to my front loader if it meant I could use his stomach to wash my wardrobe.

Hmm, could I go to jail for saying that?

Nope! Just checked…he’s twenty! 😉

Anywho! Like I was saying…I read the book series just before the first film was made, and it just became our “thing” to go and see each movie when it came out…however horrible the acting was.

BUT, I will say, out of all five movies, this one was by far the BEST!

Great special effects, a couple of twists and turns, and ok, there was still a good amount of bad acting, but hey, you get a sex scene within the first 10 minutes! 😀

After the show, we followed up with a tradition we started last year

Waffle House!

As soon as we sat down, I knew exactly what I wanted…the latest menu addition…

The pumpkin waffle!

Oh, and a side of bacon! 😉

Instead of it being made with pumpkin puree like I was expecting, it was a traditional batter with bits of pumpkin “nougat” (waitress’ words, not mine) spread throughout. I was a little skeptical…but then I had my first bite…

It’s official…I want to live in a bucket of pumpkin “nougat”

And then came this genius idea…

Pumpkin Bacon Wafflewich!

Dipped it in a little syrup and the sweet salty combo nearly had me on my knees!

But that’s not even the best part. That came today with the leftovers…

A pumpkin bacon wafflewich with CHOCOLATE SYRUP*

1 Tbsp cocoa + 2 Tbsp maple syrup = pure and utter deliciousness!

Seriously, Waffle House, get on this!
