I mean, seriously…

What could food bloggers (barring any allergies) possibly love more than cinnamon?

Especially when paired with a little LOT of chocolate? πŸ˜‰

Peanut Butter Cookie Pancakes

Prep Time: 5-10 minutes

Cook Time: 10-12 minutes

Ingredients (Serves 1)

For the Pancakes

  • 1/4 cup peanut flour
  • 1/8 cup brown rice flour (or other preferred flour)
  • 1/8 cup coconut flour
  • 1/2 teaspoon sodium-free baking powder
  • 1/2 cup unsweetened almond milk
  • 1 egg white
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon butter extract (optional)
  • 5-10 drop liquid Stevia (or other preferred sweetener)
  • 1-2 Tablespoons chopped peanuts (optional)

For the Cocoa-Infused Maple Syrup

  • 1 Tablespoon unsweetened cocoa powder
  • 1/8 cup maple syrup

Instructions

For the Pancakes

1. Preheat a skillet or griddle to medium heat and coat with cooking spray.
2. Combine flours and baking powder.
3. In a separate bowl, whisk egg white until frothy.
4. Add milk and extracts to egg, stir.
5. Add wet ingredients to dry ingredients and stir well.
6. Fold in chopped peanuts if using.
7. Spoon batter onto hot skillet, forming 3 small-medium sized pancakes.
8. Cook 5-6 minutes per side or until golden brown.
9. Plate, drizzle with cocoa-infused maple syrup, and top with chopped peanuts and chocolate pieces (I used cacao nibs).

For the Cocoa-Infused Maple Syrup

Combine cocoa powder and maple syrup, whisk well.

And for all of you out there who wonder if I actually eat the pancakes I post each week?

Well, after about 156 camera clicks, 6 different fork placements, and 5 plate rotations, the photo session ends right about the time the drool starts to slide down my chin.

  4. YUM, YUM, YUM times a million! I’ve made a stack super similar but subbed white wheat flour for the brown rice and coconut flour πŸ˜€ Mad love for cinnamon, peanut butter, and chocolate = loveee!

      I’ve done a version with just peanut flour and whole wheat flour before but I thought the addition of the coconut flour took it to a whole new level…you just can’t beat the spongey consistency that comes with adding a bit of coconut flour! Love it!

    Mmmm….those pancookies look fantastic!! I have always been a fan of peanut butter cookies, so I am sure I would love these. And that “chocolate syrup” looks delicious as well; it is much healthier than your typical corn syrup and artificial flavor-loaded chocolate syrup:)

  9. Just the title of this post made my heart skip a beat. Is that normal? Maybe I need a boyfriend, so that peanut butter isn’t the most romantic relationship in my life… Anyway, this is brilliant. There is no better combo than peanut butter and chocolate (except maybe peanut butter and banana), and from the Pancake Queen herself? If you opened a bunch restaurant, I would fly all the way from Canada to eat there.

    Ok so, first of all, these look incredible. Like, so yummy I’m drooling. I need to get around to making them. The thing is my pancakes always turn into scrambles…

    Anyways, I have a question for you that may make me sound like a bit of an idiot, but oh well. How do you get the nutriton label in your post like that? I’d like to post it for some recipes on my blog, but can’t figure out how the heck to get one to show up. Thanks so much, and I can’t wait for next weeks creation!

      Thank you, Sophie! The trick to avoiding the infamous pancake scramble is pure and simple…patience. Just make sure you let them cook long enough to set first (the edges will start to turn up just a bit and turn crisp), then with one swift movement, slide the spatula all the way under the cake, and flip! πŸ™‚

      And seriously? That is NOT a stupid question at all! I had no idea how to do it either a few months ago. It’s not exactly “official” and sometimes I have to enter things in trial/error style when I can’t get it to come up in the search, but I use the website called Calorie Count. They have an option to enter recipes for calorie counting on their website, but I just use the “analyzer” to enter my ingredients and then take a screen shot of it.
