So Long June!

 Happy Monday peoples!

I hope everyone had a good start to the week today.

Since it is now July (seriously, where the heck is my year going?), I thought I’d do a little recap of my June goals. Wanna see how I did?

Finish reading Mockingjay…

Although I found the ending very disappointing, I’m happy to say that after a MONTH I finally finished the book. Then I handed it off to my sis who had it done in just TWO days! Lol!

Paint a picture (without a tutorial)…

While I didn’t paint a picture, I DID get some Crayola action going on!

Ahh, the smell of a fresh box of crayons…

Unplug for a one full day…

BB was out of town this weekend for work, so there’s no way I was going to miss out on the occasional text, but I did go a FULL twenty four hours without tv, internet, or any kind of social media.

The results?

Oops? At least BB’s happy! 😉

Of course, the next day, I went straight back to my old habits…

Before yesterday’s Pancake Sunday celebration, there was the most exquisite breakfast sandwich made of sourdough bread, Vegemite, tomatoes, cottage cheese, and a perfectly fried egg…I mean seriously, HOW could I not share that on Instagram?!

Juice every other day…

Can I interest anyone in a tasty beverage! I had so much fun breaking in my new juicer and I can’t wait to share some of my favorite combinations with you guys!

Aim for 4 liters (128oz) of water each day…

Strength training at least 3 days a week…

Not only have I been doing strength training, but I’ve also been experimenting with different circuit training, cardio workouts (the TKO Workout from Lindsay’s Tuesday Trainer is my new favorite…and I HATE kickboxing!), and enjoying some of the classes at my gym…love me some Bodypump and Vinyasa Yoga!

And apparently, I also love making awkward faces at the gym…AND taking pictures of myself!

Run 5K at LESS THAN a 9:00 pace…

 So how’s THAT for kicking some goal booty? I think setting those goals and holding myself accountable for them was JUST what I needed. I was just thinking during yoga class tonight how great June was to me.

I had so much fun experimenting with juicing and different workouts, and pushing myself toward something…I can honestly say that I feel 100% better than I did when I wrote
this post and I’m so excited about that.

 I don’t really plan on making any goals for this month. I just figure I’ll keep doing what I’m doing since it seems to be working so well!

Lemon Blueberry Coconut Pancakes

Lemon Blueberry Coconut Pancakes

Prep Time: 5-10 minutes

Cook Time: 10-15 minutes

Ingredients (Serves 1)

  • 1/4 cup whole wheat pastry flour
  • 1/4 cup oat flour (ground up rolled oats)
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 tablespoon unsweetened shredded coconut
  • 1/3 cup unsweetened almond milk
  • 1 egg white
  • 1 teaspoon coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 5-7 drops NuNaturals Lemon Stevia
  • 1/2-1 teaspoon lemon zest
  • 1/2 cup blueberries

Instructions

1. Heat a non-stick skillet or griddle to medium heat and coat with a thin layer of coconut oil or non-stick spray.
2. In a smal bowl, combine flours, baking powder, salt, and coconut.
3. In a separate bowl, add milk, egg white, oil, extract, stevia (or other sweetener), and lemon zest and whisk to combine.
4. Add wet ingredients to dry ingredients, then carefully fold in blueberries.
5. Spoon batter onto skillet or griddle (mine made three cakes) and cook each side approx. 5-6 minutes or until golden brown and crisp.
6. Layer with lemon-flavored Greek yogurt and top with more blueberries, toasted coconut*, and lemon zest.

*To toast coconut, scatter in a dry skillet heated to medium heat for a couple of minutes until brown. Shake the skillet occasionally to mix it up. Do NOT walk away from the pan…believe me, you will only make that mistake ONCE! Burnt coconut is no bueno!

No lemon flavored yogurt on hand? Easy, just stir in the juice of half a lemon and about 1 teaspoon of zest into a cup of plain or vanilla yogurt (Chobani is my favorite) and…

VOILA!

I kid you not when I say that halfway through this plate, I literally stopped…

Exhaled…

And sighed.

I continued on, savoring each and every warm pocket of gushy blueberry goodness…

And then…

I shed a tear.

It’s Officially Summer When…

I can’t get over how fast this year seems to be flying by! And without a doubt, you can tell that summer has come to Tennessee!

Yep, that would be the temperature reading from Elvira just the other day…not taking into account the 400% humidity!

Wanna know another way I can tell it’s summer?

Last week, when my Foodie Pen Pal package arrived on my doorstep, I had more than one surprise waiting for me…

When Lindsey from Live Love Nutrition asked me what I was interested in for this month’s foodie swap, I told her I was looking for some quick on-th-go snackage for those unfortunate days at the hospital where it is just impossible to catch a break.

She sent me a couple of Lara Bars and these convenient nut and trail mix packets from Trader Joe’s that have settled quite nicely in my locker at work for those “I feel like I’m going to gnaw my own arm off” emergencies! 😉

As for the other surprise…

I shake my fist at you, Mother Nature!

Too bad she didn’t send eggs…they would have been perfectly fried by the time they arrived! 😉

Luckily, the package I sent off to former blogger, Esther, arrived safe, unbroken, and unmelted. She no longer blogs regularly, but she was so gracious to type up a guest post to showcase all of her pen pal goodies!

Hi!  I’m Esther, and this was my fourth month participating in the Foodie Pen Pals program started by the amazing Lindsay over at the Lean Green Bean.

This month I had the pleasure of being paired up with Heather, and I could not have been more pleased.  Right from the start her emails made me smile and when I started reading her blog, I knew I was going to be in for a treat.  Heather’s approach to food and nutrition are so fun and are very similar to mine.  I told her I was interested in healthy, but delicious, snacks, and that I was open to trying new things.  She even offered to send me a sample of a fun new-to-me ingredient to that I might have been wanting to try out in the kitchen.  Perfect!  For a long time now my fiance and I have been cooking primarily vegetarian and vegan meals, but I had yet to venture into the world of nutritional yeast.  So, I requested that she send some along!

I received my foodie pen pal box upon returning home from dinner late one night, and despite being stuffed from dinner, I could not wait to dig in.

The goods:
Pure fruit and nut bar, a Honey Peanut Pretzel Lunabar, a Caramel Peanut Simply Bar, a Power Crunch chocolate wafer bar, a box of Wasa crackers, honey whole wheat puffs, Vidalia Onion Peach hot sauce, Guy Fieri salsa, two flavors of awesome Happy Squeeze fruity protein blend, Oogie’s gourmet popcorn (in chili lime flavor!), Calico Bunch cereal and….nooch!  I also got an awesome card from Heather with her favorite ways to enjoy some of the treats.

Fact: It IS time!

So, ordinarily I share my bounty with my fiance, but this time around I hoarded all the bars for myself.  He was jealous, but dutifully accepted a couple of Lunabars as a consolation prize, once I assured him that he wouldn’t grow boobs from eating a “women’s” protein bar.

My favorite of the bars was the Power Crunch – it basically was a giant chocolate wafer cookie, and I may or may have scraped the chocolate from inside the wrapper.  In public.  The honey wheat puffs have been enjoyed with peanut butter and almond butter and just plain.

We’ve been traveling a lot, so we haven’t done much cooking at home, but plans are in the works for the salsa, hot sauce, and, of course, nutritional yeast!  Heather recommended sprinkling it on popcorn or veggies, and I found a recipe for vegan spanakopita that I’m going to make to try it out as well.  The Oogie’s popcorn will be making a sneak appearance at the movie theater when we go to see Brave this weekend for my birthday
(being a redhead with curly hair, this movie has been too long in coming).

So, like what you see? Or, since this is the first time you’ve seen what kind of packages leave MY house, jealous of the former recipients? Well lucky for you, Lindsey, the brains behind the operation, has a pen pal for everyone!

Program Deets:

On the 5th of every month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.

You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!

The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!

Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you are to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.
