It’s Officially Summer When…

I can’t get over how fast this year seems to be flying by! And without a doubt, you can tell that summer has come to Tennessee!

Yep, that would be the temperature reading from Elvira just the other day…not taking into account the 400% humidity!

Wanna know another way I can tell it’s summer?

Last week, when my Foodie Pen Pal package arrived on my doorstep, I had more than one surprise waiting for me…

When Lindsey from Live Love Nutrition asked me what I was interested in for this month’s foodie swap, I told her I was looking for some quick on-th-go snackage for those unfortunate days at the hospital where it is just impossible to catch a break.

She sent me a couple of Lara Bars and these convenient nut and trail mix packets from Trader Joe’s that have settled quite nicely in my locker at work for those “I feel like I’m going to gnaw my own arm off” emergencies! 😉

As for the other surprise…

I shake my fist at you, Mother Nature!

Too bad she didn’t send eggs…they would have been perfectly fried by the time they arrived! 😉

But seriously, thank you for the treats, Lindsey!

Luckily, the package I sent off to former blogger, Esther, arrived safe, unbroken, and unmelted. She no longer blogs regularly, but she was so gracious to type up a guest post to showcase all of her pen pal goodies!

Hi!  I’m Esther, and this was my fourth month participating in the Foodie Pen Pals program started by the amazing Lindsay over at the Lean Green Bean.

This month I had the pleasure of being paired up with Heather, and I could not have been more pleased.  Right from the start her emails made me smile and when I started reading her blog, I knew I was going to be in for a treat.  Heather’s approach to food and nutrition are so fun and are very similar to mine.  I told her I was interested in healthy, but delicious, snacks, and that I was open to trying new things.  She even offered to send me a sample of a fun new-to-me ingredient to that I might have been wanting to try out in the kitchen.  Perfect!  For a long time now my fiance and I have been cooking primarily vegetarian and vegan meals, but I had yet to venture into the world of nutritional yeast.  So, I requested that she send some along!

I received my foodie pen pal box upon returning home from dinner late one night, and despite being stuffed from dinner, I could not wait to dig in.

The goods:
Pure fruit and nut bar, a Honey Peanut Pretzel Lunabar, a Caramel Peanut Simply Bar, a Power Crunch chocolate wafer bar, a box of Wasa crackers, honey whole wheat puffs, Vidalia Onion Peach hot sauce, Guy Fieri salsa, two flavors of awesome Happy Squeeze fruity protein blend, Oogie’s gourmet popcorn (in chili lime flavor!), Calico Bunch cereal and….nooch!  I also got an awesome card from Heather with her favorite ways to enjoy some of the treats.

Fact: It IS time!

So, ordinarily I share my bounty with my fiance, but this time around I hoarded all the bars for myself.  He was jealous, but dutifully accepted a couple of Lunabars as a consolation prize, once I assured him that he wouldn’t grow boobs from eating a “women’s” protein bar.

My favorite of the bars was the Power Crunch – it basically was a giant chocolate wafer cookie, and I may or may have scraped the chocolate from inside the wrapper.  In public.  The honey wheat puffs have been enjoyed with peanut butter and almond butter and just plain.

We’ve been traveling a lot, so we haven’t done much cooking at home, but plans are in the works for the salsa, hot sauce, and, of course, nutritional yeast!  Heather recommended sprinkling it on popcorn or veggies, and I found a recipe for vegan spanakopita that I’m going to make to try it out as well.  The Oogie’s popcorn will be making a sneak appearance at the movie theater when we go to see Brave this weekend for my birthday
(being a redhead with curly hair, this movie has been too long in coming).

So, like what you see? Or, since this is the first time you’ve seen what kind of packages leave MY house, jealous of the former recipients? Well lucky for you, Lindsey, the brains behind the operation, has a pen pal for everyone!

Program Deets:

On the 5th of every month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.

You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!

The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!

Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you are to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.

Orange You Glad I Made Muffins?

Guyssssssssss!

Oh my gosh, I am SO SO excited to get this post up tonight!

After several hours of kitchen experimentation, I present you with this:

But before I get into any details…I have to get into some details!

Not making much sense? Don’t worry, I will!

See, a few months back, I was contacted by the lovely people over at NuNaturals
(shout out for one of our awesome Blend Retreat contributors…whoo!)
about trying two of their newest products:

I was immediately intrigued!

Little did I know that in a few days THIS is what would show up at my door:

More Stevia than you can shake a sugar-free stick at!

Not to be confused with Pixi Sticks, or any sort of limb coming from a tree that inspires nineties country music! 😉

 But any who…onto the sweet stuff!

As soon as my “loot” arrived, I got to work seeing what magic it could make out of my meals…

Remember these guys?

Yep, my bottle of lemon Stevia saved the day when, after a trip to the store for ingredients to make lemon poppy seed pancakes, I forgot the frickin’ lemons!

So what else did I try?

There’s just something about the combo of lemon and blueberries!

And this breakfast of OIAJ (oats in a jar) definitely did NOT disappoint! The lemon Stevia sweetened my oats just enough and gave a nice crisp, buttery lemon flavor that paired SO well with the tart frozen blueberries!

But as fantastic as both the pancakes and the oats were, the star of tonight’s post are these beauties:

Soft and flakey, orange and creamy, these muffins just scream SUMMER!

And guess what…they’re vegan AND gluten-free!

Orange Creamsicle Protein Muffins

Prep Time: 10-15 minutes

Cook Time: 22-24 minutes

Ingredients (6 regular-sized muffins)

  • 1/2 cup brown rice flour
  • 1/8 cup coconut flour
  • 1 scoop vanilla plant-based protein powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon xanthan gum
  • 1 tablespoon chia seeds
  • 1 cup milk
  • 1 1/2 tablespoons coconut oil
  • 1/8 cup agave syrup
  • 20 drops Orange NuStevia
  • zest of one orange (about 1-2 teaspoons)

Instructions

1. Preheat oven to 350F and line a muffin tin with foil liners (or coat pan with a generous amount of non-stick spray)
2. In a medium-sized bowl combine flours, protein powder, baking powder, salt, xanthan gum, and chia seeds and stir together.
3. In a separate bowl, add milk, oil, agave, stevia, and orange zest and stir to combine.
4. Add wet ingredients to dry ingredients and stir until all the flour is incorporated.
5. Spoon batter into muffin liners filling 3/4 of the way full.
5. Bake for 22-24 minutes or until the tops are slightly browned.
6. Once done, transfer to a wire rack and allow to cool for 10 minutes.
7. Enjoy alone with a glass of milk or coffee, or crumble over your favorite yogurt for a protein packed breakfast!

Mmm, mmm, MMM!

Even though I’m not a huge sweets person and rarely ever sweeten my foods, I do occasionally get a craving for something more. I found the NuNaturals liquid Stevia drops to be the perfect way to give just enough sweetness to satisfy my momentary sweet tooth.

I just can’t believe it took me so long to try baking with it!

Call me a procrastinator…or call me genius…I DO think I perform best under a bit of pressure…but I DID in fact wait until the last week of the month to knock out one of my main goals for June…

Thursday Things: Recipes!

What up peeps?

I hope everyone is having a maaaaaaaah-velous week…only one more day and you’ve made it to the weekend!

I’m actually already there since last night was my “Friday”…and boy am I glad THAT week is over! I made it a point to get my workout in every day to help with my sleep cycle, but I have no idea why I even bothered since I got in MORE than enough cardio pushing stretchers and wheelchairs back and forth from the emergency room each night! Hey, just remember to keep your abs in, right? 😉

So, whether you follow me on Twitter, Instagram, or just swing by the blog each day (all of course is GREATLY appreciated), you may have noticed that I’ve made a few promises regarding recipes as of late.

And well, I’m never one to disappoint am I?

The RECIPE Edition!

It all started with dinner on Saturday night. After BB and I got done frolicking amidst the foodtrucks, we stopped by Whole Foods and grabbed up some gorgeous JUMBO scallops and fresh shrimp!

Now, I’ve been saying to myself for like FOREVER that I’m gonna start trying more recipes from my favorite bloggers…and Jenn of course is one of them…I mean, c’mon, have you seen the deliciousness that comes out of her brain? Hello!

So the first thing that came to mind when BB said he wanted scallops was Jenn’s
Sriracha Scallops:

And BB’s favorite, asparagus…roasted with olive oil and a little S&P!

But of course, I couldn’t just stop there…because if we learned anything from yesterday’s post, it is that all food is a vehicle for…DIP!

You’ll have to excuse the lazy ass Instagram photos…it was a long day and Big Bertha wasn’t coming out to play…

Oh snap! I made a rhyme! 😉

FROG’n Chili Sauce

Adapted from this recipe

Prep Time: N/A

Cook Time: 5-10 minutes plus cooling time

 

Ingredients (Serves 3-4)

  • 1/4 cup apple cider vinegar
  • 1/8 cup Xagave agave syrup
  • 1/8 cup FROG preserves, or other tart jam (orange, apricot, plum)
  • 1 garlic clove, minced
  • 1/2 tablespoon sriracha sauce
  • 1 teaspoon white wine (or water)
  • 1/2 tablespoon cornstarch
  • 1 1/2 tablespoons cold water
  • Cilantro for an optional garnish

Instructions

1. In a small sauce pan, heat the vinegar, agave syrup, and jelly until thinned.
2. Add the garlic, sriracha sauce, and wine and simmer for about 5 minutes.
3. Whisk the cornstarch and cold water together. Add to sauce mixture, whisking until thickened to a sauce consistency.
4. Remove from heat and let cool for 1 hour.
5. Garnish with cilantro before serving.

*Or 10 minutes in the freezer if you’re impatient like me! 😉

Apparently the shrimp wanted to join in on the sriracha fun as well!

I cannot even tell you guys how good this stuff is AND how easy it was to whip up! It is definitely going to be making more appearances in the near future!

Allow that to act as my segue into my next recipe that isn’t really a recipe at all but more of a work of art!

Thanks again to Jenn for the inspiration that led to Sunday night’s dinner…my very first savory sweet potato!

Sweet P topped with sprouts, leftover shrimp, and steamed asparagus all drizzled in what was left of the FROG’n chili sauce!

The sweet, the heat, the savory…I’m telling you people, this was sensory overload in the best way possible! YUM!

Since that night, I’ve been experimenting with what I like to call my Build-a-Bowl Meals!

Like Build-a-Bear, only without the stuffing in your teeth! 😉

The Build-a-Bowl How To:

Step 1: Stake out your starch!
I like whole wheat pasta, quinoa, or of course sweet potatoes
Step 2: Pimp some protein!
Plain Greek yogurt, cottage cheese and/or beans
Step 3: Go GREEN!
Zucchini, sprouts, massaged kale…the list could go on a on…
Step 4: Top ‘er off!
I love adding fresh herbs, crumbled chips (or in the case of the above pic, broiled Flat Out wrap), salsa, hummus, avocado, and/or my new favorite:

Bruschetta!

Anyone else take on Giada DeLaurentis’s accent when saying that? 😉

And finally, with all this bowl lovin’ going on for dinner, you KNOW I just had to bust it out for breakfast too!

Carrot Cake Parfait anyone?

Carrot Cake Parfait

Prep Time: 5-10 minutes

Cook Time: N/A

 

Ingredients (Serves 1)

For the Carrot Puree

  • 1 cup baby carrots
  • 3 Tablespoons water
  • 1/2-1 teaspoon pumpkin pie spice

For the Parfait

  • 1 cup Greek yougurt
  • 1/2 cup carrot puree
  • 1/4 cup of your favorite granola
  • 1/2 tablespoon shredded coconut
  • 1 Tablespoon honey

Instructions

For the Carrot Puree
1. Combine carrots, water, and pumpkin pie spice in a Magic Bullet (or blender) and process until smooth.
2. May add more water as necessary to thin.

For the Parfait
1. Layer yogurt, puree, granola, and coconut and then drizzle with honey.
