I’ve spoken of Nerdy Birdy Cookies before…and ever since I first discovered them on the opening day of the Clarksville farmer’s market, I’ve been hooked!

I had the awesome privilege of trying all of the flavors deliciously showcased at the market last week. Remember this drool-worthy cookie plate?

Obviously, I couldn’t wait to try the Fudge Brownie…

Don’t judge.

Soft, cakey, light, and fluffy…and still warm from the morning sun! Mmm!

Next up was the Chocolate Chip Cookie…

Nice crispy edges with a doughy soft middle.

And then…then, there was the LEMON!!

I don’t even consider myself a lover of lemon flavored treats, but HOLY FRUIT CAKES! It was like sinking my teeth into a lemon flavored pillow…

A little weird? Nah! 😉

And lastly, the old faithful Maple Almond Butter Cookie which is now BB’s most favorite cookie…he bought THREE yesterday and ate them ALL for breakfast!
Boys…gotta be jealous of love their metabolisms!

Speaking of cookies for breakfast…

Just when I thought the lemon flavor was the cookie of my dreams, a trip to the market  on Saturday morning changed my world forever!

That would be the Butter Pecan Cookie…aka HEAVEN…aka
 “second breakfast”:

And dipped in coffee?

Let’s just say you should probably enjoy in a private place…unless you’re okay with random strangers/family/friends hearing you making “odd” noises 😉

And then, just a nibble of her newest creation:

“Fushia” Velvet Cookie

Made to be like red velvet cake using beet juice for the coloring resulting in more of a “pink” color and drizzled with a lightly sweetened cream cheese icing.

Perfectly sweet, buttery…popcorn?

I swear it tasted JUST like movie theater style popcorn! And just to be sure I wasn’t having some sort of cookie-induced stroke, I had BB take a bite…same verdict!

May not be spot on red velvet, but I’ll take a healthy version of buttery popcorn ANY day!

And this is just ONE of many new cookies to come!

Juicin’ June & Other Goals

Did you guys remember to say “rabbit, rabbit, rabbit” this morning?

I know it’s a British tradition (shout out to my UK readers), and although I’m not really superstitious, it’s something my family has done for years! Of course, I did NOT remember this morning so I guess I’ll just be on the lookout for black cats and broken mirrors 😉

So, with this year already at the halfway point, I’ve been doing some thinking…

After reading this post by Amanda and this post by Colleen, I started considering the making a few goals of my own. While I’m not usually a goal-setter…I mean, how many of last year’s New Year’s resolutions did I keep?

The answer…um, 0.5?

But like my girls Janetha and Lindsay, I AM a list maker…and a wanna-be artsy fartsy type.

So…allow me to present to you what took up about 4 hours of my afternoon today:

Ta-daaaaaaa!

And in case you’re wondering, I AM still picking dried bits of mod-podge off my fingers! 😉

So why did I spend the majority of my Friday off, pouring over a table covered in
half a dozen magazines with scissors in my hand and cut out letters stuck to my face (don’t ask)? Well, I think there are a few things you should know about me…

1. I have an EXTREMELY poor memory

2. I am a visual person when it comes to ANYTHING

3. Ever since I got back from BLEND I’ve had a really hard time regaining my focus and direction (guess my brain’s still on vacation)

So now, I not only have a constant reminder of my goals (that fits oh so perfectly on my refrigerator door) with lots of pretty pictures to look at, but it is also something to hold me accountable and motivate me in a positive way.

June Goals:

Mind:
Finish reading Mockingjay
Paint a picture (without a tutorial)
Go ONE WHOLE DAY un-plugged…no internet, no Netflix, NO CELL PHONE!

Yeah, pretty sure that last one’s gonna kill me, but I have become SO dependent on my connection to social media lately that it has really gotten sad and that really needs to change! BB doesn’t even have to ask what I’m doing half the time…he knows I’m Instagram stalking! 😉

As for Mockingjay…I’m halfway through today!

Body:
Juice every other day
Aim for 4 liters (128oz) of water each day
Strength training at least 3 days a week
Run 5K at LESS THAN a 9:00 pace

It’s been a LONG time since I’ve had a good run…barring any MORE self-inflicted injuries, I hope to get back that inner peace I used to find out on the pavement.

Now I know you’re probably wondering about the whole juicing thing…but Heather, you don’t have a juicer!

Well, I do now!

BB and I went into K-Mart last weekend to check out patio furniture…they didn’t have anything I liked so we ended up wandering around for a bit. BB headed straight for the tools while I just happened to find myself in the kitchen aisle (I know, who knew, right?).

After about 15 minutes of perusing, I turned to leave the aisl and track down BB when all of a sudden, a yellow clearance tag caught my eye…

20% off baby!!

And, since I made a trip to Sam’s Club last night JUST to pick up some carrots in bulk, I decided to break it in today!

Yum!

Lemon Parrot Juice

Prep Time: 5 minutes

Cook Time: N/A

Ingredients (1 serving)

  • 4-5 large carrots
  • 1 whole peach
  • 1/2 lemon

Instructions

1. Combine all ingredients in a juicer
2. Serve in a glass (with or without paper umbrella)
3. Sit back and smile as you sip your juice knowing you are getting like 200 BILLION milligrams of beta carotene
4. Wash hands 201 BILLION times to get the orange off your fingers 😉

Parrot juice…get it?

It was soooo fresh and delicious…took me straight back last summer in Cali!

“May” I Have Some Delicious Snacks?

Hey guys!

Can you believe it’s the last day of May?! We’re already halfway through the year…before we know it, it’ll be Christmas again…geesh!

The one good thing about this month flying by is that NOW I can finally share the deets from my May Foodie Pen Pal package!

A big THANK YOU to Lindsay of The Lean Green Bean for the amount of dedication she puts into this program each and every month. She really had her work cut out for her this month with OVER 700 pen pal patches just in the United States alone!

You are awesome, girl!

I was so excited when I first opened my package from Jamie at Farm Fabulosity

Like a 3 year old, my immediate focus went to the container. I kept telling BB, “Look, I got a bowl! She gave me a bowl!”

For the record, yes, I had been drinking…just a bit. 😉

After a momentary relapse to childhood, I refilled my glass of wine and I turned my attention to what was INSIDE the bowl…

Holy snack jackpot!

Nuts, bars, cookies, and more…the perfect blend of sweet and salty!

Can you guess what I went for first?

Coooooooooooooooookie!

Jamie was SO sweet and whipped up a batch of her grandmother’s “famous” sugar cookies to go along in my package. They were crispy, crunchy, and with just enough sweetness…

Actually, they reminded me a lot of these butter cookies that my mom used to buy for us when I was a kid…man, I could put half a tin of those away in NO time!

Over the last couple of weeks, I’ve been picking from my pen pal huge “stash” of snacks. I haven’t made it through each and every bar just yet, but I will tell you right now those honey mustard pretzels are definitely last with crack! I literally had to tell myself to stop, wrapped them up, and put them in the back of the pantry just so I wouldn’t polish off the entire bag in one sitting!

The spinach and herb dip mix is like pure Heaven mixed in some plain Greek yogurt…onion-y, garlicky goodness! I can’t wait to try adding it to my next baked potato!

My favorite part about being a Foodie Pen Pal is being able to try new things and also sharing some of your favorites with others. Before this month, I had never actually tasted a Biscoff cookie. And guess what…they taste JUST like Biscoff spread! Omg, who would have thought?! 😉

Thank you SO much, Jamie, for all my goodies!

 -On the 5th of every month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.

-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal! 

-The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!

-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you are to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month. 

-Foodie Penplas is open to US & Canadian residents.  Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa.
