Peanut Butter Chocolate Chip Pancakes

Happy Easter my little bunnies!

Seriously? You HAD to know this was coming…

After FORTY days of a nut/seed/cookie butter-less life,

I was awake for a total of 5 minutes this morning before I had my first taste…

The sweet taste of victory!

Obviously, I did what any normal nut butter deprived person would do on a Sunday morning…

I made peanut butter pancakes!

You wouldn’t believe how long it took me to decide which one to use, but I really wanted the natural peanut flavor to come through in these and not be outshone by too many other flavors. So, as orgasmic (I kid you not) as the PB Crave Cookie Nookie* was, I decided to keep things pure and simple.

*Be on the lookout for a review on the full line of PB Crave peanut butters in a few weeks!

Remember this little guy from my Foodie Pen Pal box?

Well, he just happened to bump into these guys on the way out of the pantry and…

C’mon, who am I to deny the unquestionable deliciousness of peanut butter and chocolate?

So in they went!

Peanut Butter Chocolate Chip Pancakes

by Heather Powers

Prep Time: 10 minutes

Cook Time: 10-12 minutes

Ingredients (Serves 2)

  • 1 cup whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons peanut butter
  • 3/4 cup milk (I used vanilla soy milk)*
  • 1 teaspoon vanilla extract
  • 3 tablespoons mini semi-sweet chocolate chips

* The peanut butter I used for this recipe was runnier than some so if you are using a thick peanut butter (closer to the consistency of JIF), add up to 1/8 cup more milk.

Instructions

1. Preheat a non-stick skillet or grilled to medium heat and coat with a bit of coconut oil or cooking spray.
2. In a medium-sized bowl, combine flour, baking powder, and salt.
3. In a smaller bowl, add peanut butter, milk, and vanilla and whisk or stir with a fork until smooth.
4. Add wet ingredients to the dry ingredients and stir until just combined.
5. Fold in chocolate chips.
6. Spoon batter onto skillet and cook for approximately 5-6 minutes or until the edges start to brown.
7. Flip and continue cooking for 4-5 minutes until done.
8. Serve with a drizzle of pure maple syrup.

Not only is this recipe super simple with only 7 ingredients, but it’s also EGGLESS!
So pop in some carob chips or other dairy free chocolate and
you’ve got yourself a stack of…

Vegan pancakes!

I’m not quite sure if it was the absence of the egg and or the presence of the peanut butter, but the pancakes cooked up nice and crisp on the outside, soft on the inside, and I swear to you these had almost a cookie dough-like flavor to them!

And I promise that’s not just the peanut butter high talking! 😉

I hope everyone has a great Easter Sunday full of family, fun, good food and all the things you abstained from for Lent!

PS, Just thought you guys should know I found it funny that I typed “peanut butter” THIRTEEN times in this post…can you tell I’m a little excited?

Your Good Friday Just Got Better!

Hey guys!

I know a lot of you are probably pretty excited to have today off from work/school for Good Friday so I thought I’d give you something to be even MORE excited about…

Remember that super sale I found on Chobani a few weeks ago?

My fridge was oh so happy to meet it’s new inhabitants!

Well,  I started getting a little sad the other day when I noticed that my stash was down to this:

It seems BB and I know how to take down some Greek yogurt…in a little over 3 weeks, we’ve put away 3 large containers and 25 individuals!

I guess all good things do come to an end…

That is until you come home to this on your doorstep:

A box filled with “nothing but good[ness]”! 🙂

Ahhh, that’s better!

Not long after posting my recipe for my Cookies ‘N Cream Pancakes, I received an email from Lindsay with Chobani’s marketing team wanting to know if she could help me restock my fridge. After I dusted myself off and got back in the chair I fell out of , I quickly responded to her message with my address and favorite flavors!

So what does all of this have to do with you?

How does a FREE CASE of Chobani sound?

Bunny-fied Delicious Eats

Hey guys and Happy What I Ate Wednesday!

I am absolutely loving the new “themes” Jenn has been creating for us party rockers each month. It not only gives us a chance to share our latest ideas for meals and snacks, but also motivates us to eat more veggies!

And with Easter being right around the corner, I hopped right on this month’s challenge!

Starting with my newest overnight oats creation:

Can I interest anyone in some carrot cake for breakfast?

Carrot Cake Overnight Oats

by Heather Powers

Prep Time: 10 minutes

Cook Time: N/A

Ingredients (Serves 1)

  • 1/2 cup shredded carrots
  • 1/2 cup rolled oats
  • 1 cup vanilla Greek yogurt*
  • 1/2 cup almond milk
  • 1/2 cup water
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • Toppings: shredded coconut, raisins, and/or granola

Instructions

1. Place shredded carrots in a microwave-safe bowl, cover with plastic wrap (leaving a little vent on the side) and cook on high for 1-2 minutes or until tender.
2. Rinse carrots in cold water and pat dry with paper towels.
3. Combine carrots with all other ingredients (except toppings), cover and place in refrigerator overnight.
4. In the morning, stir in a bit of liquid if needed to thin and add desired toppings.

For some reason, I’ve been craving carrot cake like mad crazy lately.

So when I saw this little guy on sale at Publix the other day, this combo almost immediately popped into my head. Unfortunately the date and fig flavors weren’t as pronounced as I thought they would be so I think a vanilla or honey-flavored Greek yogurt would work just as well.

Just don’t forget the coconut and raisin topping…it totally makes it!

Let me just say I was glad I prepped breakfast the night before! You see…apparently, when you hit snooze “x” amount of times (not sure how many that is…I lost count), my alarm clock

SHUTS OFF!!!

So yeah, this is more of what my breakfast looked like…eaten haphazardly in the car…with a BIG mug of black coffee to finish waking me up!

Luckily, I had enough time made time (priorities people, it’s WIAW!) to snap a pic of my “throw-together lunch” before I practically hopped out the door!

A couple of tablespoons of hummus and the Chobani were mixed together…half eaten with the tuna on some whole wheat French bread and the other half with my bowl-o-veggies!

Obviously, I didn’t get my fill of carrots over breakfast 😉

And I know what you’re probably thinking about that tub of pre-made hummus. But hear me out…it’s a brand new flavor and I just HAD to taste it before I attempting to make my own…you know, so I can ensure quality assurance for my version!

On my way home from work, I snacked on a PERFECTLY ripe banana.

Love it when they’re all freckly!

After a quick shower (a must when you work in a hospital) and a bit of chill time with BB, we decided to go out for dinner. When he asked me what I wanted, all I could say was VEGETABLES! The first thing that came to mind was Ruby Tuesday. I’m not usually a fan of chain restaurants, but you can’t deny they have a pretty slamming salad bar! Looking for restaurants at the restaurants downtown mall Charlottesville? Plate numero uno

Plate numero dos!

I seriously wouldn’t be surprised if I woke up with a cotton tail tomorrow…

How many servings of veggies did YOU get in today?

How do you like your bananas?
