Choose Your Chick Salad

Hey hey to all my bad bowlers out there…glad to know I’m not the only one out there making a fool out of myself on the lanes!

So I had another post in mind for tonight, but so many of you seemed interested in yesterday’s chicken salad recipe, that I just didn’t have the heart to make you wait for it!

Annnnnnd? Guess what!

You get TWO recipes for the price of one! Wait, now how does that work exactly when the first one is free to begin with? Hmm, I digress…

The flavors in this salad are just TOO good to only share with my fellow meat lovers out there so I just had to put a little twist on it so that all my little veg-heads could enjoy it as well!

Choose Your Chick Salad

Honey Curried ChickEN Salad: (serves 3-4)

  • 1 large chicken breast, cooked and diced (about 1 cup)
  • 1/2 cup plain Greek yogurt
  • 1/4 cup diced onion
  • 1 heaping teaspoon curry powder
  • salt & pepper to taste
  • 1 Tablespoon honey
  • 1/3 cup dried cranberries
  • 1/4 cup sliced almonds

1. Combine all ingredients in a medium-sized bowl and stir well.
2. Serve as a sandwich or alongside crackers for dipping!

Mmm, sammich!

Honey Curried ChickPEA Salad: (serves 3-4)

  • 1 can chickpeas, drained and (partially) mashed
  • 1/2 cup Greek yogurt
  • 1/4 cup diced onion
  • 1 heaping teaspoon curry powder
  • salt & pepper to taste
  • 1 Tablespoon honey
  • 1/3 cup dried cranberries
  • 1/4 cup sliced almonds

1. Combine all ingredients in a medium-sized bowl and stir well.
2. Serve as a sandwich or alongside crackers for dipping!

You can hardly tell which salad is which!

And the best thing about this recipe?

No thinking about tomorrow’s lunch!

What I Ate Wednesday: Instagrammed

Hey hey my food lovin’ friends!

What I Instagrammed Wednesday!

For those of you who don’t know about Instagram, it’s a free photo sharing app for the iPhone

and I’m totally addicted!

Breakfast: Oats with peanut flour, maple extract, Baker’s chocolate, and some more of my travel loot…honey roasted peanuts!

Mmmm!

And of course, what would breakfast be without the “usual suspects”?

Snack: New-to-me protein energy bar

I swear this thing tasted like dessert!

A low in sugar dessert with a protein PUNCH!

Lunch: Honey Curried Chicken Salad on whole wheat bread with romaine and cukes

One of the best chicken salads I’ve ever tasted!

Where’s My Cabana Boy Recovery Shake:

  • 6 ounces cold water
  • 1 serving vanilla protein powder
  • 1 cup diced fresh pineapple
  • 1 teaspoon freshly grated ginger (or 1/4-1/2 teaspoon ground ginger)
  • 1 Tablespoon coconut flour
  • 4-5 ice cubes
Throw everything in a blender (or in my case, magic bullet) and blend away! Pour into a glass (or just drink it out of the blender/magic bullet container like a classy, middle-aged, drunken woman on the beach). Grab your shades, kick back and wait for “Fernando” to come and take your order (he’s the one in the blue Speedo) ๐Ÿ˜‰

A friend of mine and I decided to go out for a game of bowling…

With a friendly little wager…

Loser pays for dinner!

I had high hopes in the first game…yeah, “You Loser” would be me…and that strike would be a first of many granny-bowl mini victories!

Second game: Check out those spares!

Sadly, in the third and final game, granny got tired while he got his second win…

THREE strikes?! Are you kidding me?

Even sadder (more sad?) was his choice in victory dinner…

I’m sure you can recognize this combo: House salad and Minestrone

Yep, of all the places in Clarksville, he chose Olive Garden!

The victory meal itself: The Seafood Brodetto
Scallops, shrimp and delicate tilapia with spinach and mushrooms simmered in a light white wine and marinara-saffron broth. Served with toasted ciabatta bread <- Yeah, believe me, not as fancy as it sounds!

The (only) highlight of the meal:

C’mon, who can turn down an Andes?

I think my highest was around 140 or so…but I’m thinking of improving that someday…I just need to rent a couple of kids so I can score those bumper guards! ๐Ÿ˜‰

Perfectly Sweet With a Little Heat

Hey guys!

Thank you all so SO much for all the sweet comments on my
first 10 miler!

Yesterday was definitely a rocking day for sure! After my “celebratory” pancake brunch, I drove into Nashville to meet up with my good friend Heather…

aka HEAB ๐Ÿ™‚

After nearly five months of not seeing each other, with her just getting back from a long vacation in Michigan and me not far removed from the California shore, we knew there would be a lot to catch each other up on. And what better way to do it than over a nice big trough bowl of fro-yo?

My very first bowl ofย Sweet CeCe’sย fro-yo!

At first I was impressed by the variety of the flavors (nice change of pace to the boring rotation here in Clarksville), but then…then I had a sample, and…

Oh my gosh, it was the thickest, densest, BEST frozen yogurt I’ve ever had!

After I tried about half of the flavors and was pretty disappointed in the cake batter flavor (totally just tasted like an extra sweet vanilla), we both decided to go with a mix of the
Original Tart and Strawberry Banana.

Topped with granola, almonds, and shredded coconut!

Then we decided to take advantage of the beautiful weather and enjoyed our fro-yo/chit chat al fresco!

And Heather, being the sweetheart that she is, also brought a little “present” for me:

Which I already put to good use in tonight’s dinner!

Whole wheat toast with scrambled cheesy eggs and hot pepper preserves

And you better believe those pieces of toast came together to make one of the best sweet/savory and smooth/spicy sandwiches yet!
