What DID I Eat Wednesday??

Hey guys!

Thank you all so much for your comments on my rockin’ new banana bowl protein sundae the other day! Yeah, not quite sure which one I’m more excited about! Haha!

Well, here we are again, at the mid point of the week with maaaaaaa-uch more to celebrate than banana bowls…

Oh yeah, it’s time to get our WIAW party started!

When photographing the days eats yesterday, it didn’t take me long to notice a theme…

Misssssss-ter-eeeeeeey
(yes, you have to say it like you’re telling a scary story around a campfire)

I’ve gotten a bit bored in the kitchen lately…and I don’t have the patience required to figure out if I throw “some of this” and “all of that together,” will it taste ok?
So I’ve just been winging it!

Eh, sometimes you just have to fly by the seat of your pants! Live on the wild side! Invite a little mystery into your life!

Ahh, such is my life of reckless abandon as a dedicated foodie!

Below you have some of my mysterious meals mixed with a bit of the predictable…because you know, life’s all about balance…and I don’t need you guys looking at me TOO weirdly…

Breakfast:

Peanut flour omelet thingy stuffed with:
banana slices, raspberries, and carob chips
and topped with:
Flax Sprinkles and pure maple syrup

It started out innocent enough…

A two egg omelet with a little almond milk and cinnamon…

but then I saw the peanut flour when I reached into the cabinet for the cooking spray…

and THEN I took a bite…Mmmm!

It made my kitchen smell like a peanut butter cookie!
Well, an unsweetened peanut butter cookie…that’s where the maple syrup came in!

And then there was my new fave mug full of warm energy-inducing elixir annnnnnnnnnnnnnd grown-up vitamins!
(don’t worry, I’m not getting rid of the candy just yet…just experimenting!)

Lunch:

Cold tri-color shells, cubed zucchini, cottage cheese, and……salsa?

Hey, who says you can’t have a little Italian-Mexican fusion?

Right before devouring eating this like a lady, I topped it with some sliced avocado and a good dump dash of nutritional yeast for some cheezy action!

Hit.the.spot!

Very Boring Snack:

Carrots and pretzels in my WasteNot Saks I found on Etsy
Love these bags…reusable…washable…and super cute!

Dinner

Leftovers from my hibachi date with my mom and sis!
(Fried rice, onions, zucchini, shitake mushrooms, and shredded cabbage topped with fresh green onions so it looked a little better than a big bowl of brown mush)

Oh, and I’ve been meaning to tell you guys…if you haven’t already noticed by now…

I am a habitual “stirrer”

I’ve tried to stop, really I have…especially when I see other bloggers enjoying that last bite of oatmeal with a huge lump of peanut butter in it, but I just can’t help it!

Oats, yogurt messes, leftover fried rice and veggies…nothing stands a chance when the spoon hits my hand!

Dessert

A few spoonfuls of something you guys are just gonna have to wait for… 😉

French Vanilla Protein Sundae

Hey guys! I just got in from having dinner with my mom and sister at our favorite hibachi style restaurant. My belly is fully and my eyelids are heavy, but I thought I’d pop in real quick and say hi!

Plus, I just HAD to share with you guys the stroke of genius I had while making breakfast the other day…ok, well I’m sure I’m not the FIRST person to think of it, but hey, when you combine two of your favorite things for breakfast and it ends up tasting like a decadent dessert (that’s also healthy), I think it deserves a little morning dose of narcissism. 😉

It all started with a craving for yogurt…but not just any yogurt…

The sugar content is a bit high on these, especially being that it’s just vanilla flavored (21g) but lately I’ve had an out-of-this-world raving sweet tooth, so I haven’t even batted an eye…I mean c’mon, there are worse things I could be doing a face plant into, right?

So anyway, it started with a craving for yogurt…but then my ADD self got to thinking that maybe I wanted a protein smoothie…and then I spotted some preeeeeety ripe bananas…

Get it?

…”spotted”…

Oh, I crack myself up!

Confession: I may have been holding out on you with this post, until I could recreate it in my new pretty bowl!

True story…I went to TJ Maxx looking for a good “banana bowl”

Yep, some dreams DO come true! 😉

Meet my breakfast “sundae”!

1 cup French vanilla yogurt plus one scoop vanilla whey protein powder

Equals

Pure, decadent, make-you-forget-what-you-were-saying deliciousness!

Wait…where was I?

…………………..

Oh yeah, you know what you do when you find yourself on the cusp of the most brilliant “dessert meets breakfast” moments?

You raid your pantry for a bazillion toppings to take it over the top of course!

Go big or go home!

Ahhh, if only I had had some whipped topping…

Well, looks like banana, carob chips, goji berries, slivered almonds, chia seeds and super plump cherries will have to do!

Oh the troubled life I lead…

And you know what? Sometimes such deliciousness was meant to be shared…

Lickin’ it clean!

I think I got Tiger’s seal of approval on this one!

I’m not sure why it took me so long to combine yogurt and protein powder, but now I’m super excited to try out more combinations with different flavors of protein powder. I figure I’ll stay with the basic vanilla or maybe a plain flavor for the yogurt so it keeps it’s richness, but how good would this be with chocolate protein powder? Or peanut flour!?

Well, I’m off to bed! Gotta get up early for a run…I missed my workout this morning because the ever-so-soft cotton containment beneath my head just wouldn’t allow me to budge…even when my alarm went off for the FIFTH time! Let’s hope I can defeat the little cushy devil tomorrow! I don’t know…

Borrowed Banana Bread {Pancakes}

Hey hey my little broccoli bites!

I hope you guys are having a fantastically lazy Sunday afternoon! I’ve been super busy today! Super busy planting my rump on the couch that is! I do plan on getting up here soon so I can meet a friend at the gym for a little sweat sesh, but for now, I’m perfectly content sitting here with my lap top, sipping on my second cup of coffee…yes, I am having a cup of coffee in the middle of the afternoon, because it’s the weekend and everybody knows there aren’t any rules for the weekend! 😉

While perusing some foodie blogs this morning, I stumbled across Kate’s “7 Links” post from earlier this week. Let me just say that I am absolutely LOVING seeing these posts around blogworld…it’s such a great way to catch up and learn more about some of my favorite bloggers!

Anywho!

As soon as I saw Kate’s link to her Banana Bread Protein Pancakes, I knew I had to make them for Pancake Sunday…plus, after last week’s creative flavor combo, my brain needed a little rest! Haha! 😉

I followed her recipe exactly, but at the last minute decided to throw a few carob chips into the mix…

Only trouble is, with an oat-based pancake recipe, carob chips tend to make your final product look a little…er, well-done?

Well, nothing a little peanut butter drizzle, shredded coconut, and raspberries can’t fix!

Yeah, that’s much better! 😉

From the moment the batter was stirred up, my mouth was watering…and THEN the entire kitchen started smelling like freshly baked banana bread as they were doing they’re thing in the skillet!

Obviously it didn’t take long for me to figure out what to do with them once they were on my plate!

I usually like my pancakes with more of a fluffy consistency that you can only get from using some sort of flour, but every now and then I can appreciate a little variety and these were definitely good enough to make again! Besides the perfectly sweet flavor from the bananas and chewy texture of the oats, these babies pack a nutrient punch with the addition of chia seeds and protein powder…they kept me full for four hours!

Well, I’m off to go snag a quick run before meeting my friend for Bodypump! Honestly I can’t decide if the motivation to run is coming from the itch of not running in the past few days, or because I scored these babies while shopping yesterday:

I’m actually a pretty die hard Asics fan, but after walking around the store in one of each for about 20 minutes, the New Balances stole my sole! <- Shameless pun…can’t help it! 😉

I really REALLY needed a new pair of running shoes. Plus I figured since I got these during the tax free weekend with TWO coupons…one for $10 off and one for 20% off, they’ll get me by until I can get my booty to Nashville and grab a pair of  these!
