Borrowed Banana Bread {Pancakes}

Hey hey my little broccoli bites!

I hope you guys are having a fantastically lazy Sunday afternoon! I’ve been super busy today! Super busy planting my rump on the couch that is! I do plan on getting up here soon so I can meet a friend at the gym for a little sweat sesh, but for now, I’m perfectly content sitting here with my lap top, sipping on my second cup of coffee…yes, I am having a cup of coffee in the middle of the afternoon, because it’s the weekend and everybody knows there aren’t any rules for the weekend! 😉

While perusing some foodie blogs this morning, I stumbled across Kate’s “7 Links” post from earlier this week. Let me just say that I am absolutely LOVING seeing these posts around blogworld…it’s such a great way to catch up and learn more about some of my favorite bloggers!

Anywho!

As soon as I saw Kate’s link to her Banana Bread Protein Pancakes, I knew I had to make them for Pancake Sunday…plus, after last week’s creative flavor combo, my brain needed a little rest! Haha! 😉

I followed her recipe exactly, but at the last minute decided to throw a few carob chips into the mix…

Only trouble is, with an oat-based pancake recipe, carob chips tend to make your final product look a little…er, well-done?

Well, nothing a little peanut butter drizzle, shredded coconut, and raspberries can’t fix!

Yeah, that’s much better! 😉

From the moment the batter was stirred up, my mouth was watering…and THEN the entire kitchen started smelling like freshly baked banana bread as they were doing they’re thing in the skillet!

Obviously it didn’t take long for me to figure out what to do with them once they were on my plate!

I usually like my pancakes with more of a fluffy consistency that you can only get from using some sort of flour, but every now and then I can appreciate a little variety and these were definitely good enough to make again! Besides the perfectly sweet flavor from the bananas and chewy texture of the oats, these babies pack a nutrient punch with the addition of chia seeds and protein powder…they kept me full for four hours!

Well, I’m off to go snag a quick run before meeting my friend for Bodypump! Honestly I can’t decide if the motivation to run is coming from the itch of not running in the past few days, or because I scored these babies while shopping yesterday:

I’m actually a pretty die hard Asics fan, but after walking around the store in one of each for about 20 minutes, the New Balances stole my sole! <- Shameless pun…can’t help it! 😉

I really REALLY needed a new pair of running shoes. Plus I figured since I got these during the tax free weekend with TWO coupons…one for $10 off and one for 20% off, they’ll get me by until I can get my booty to Nashville and grab a pair of  these!

Salmon Says

Hey guys! Thought I’d pop in real quick before I get back to battling my Google reader! There may be 218 unread posts, but I’m maaaaaaaaaakin’ headway! 😉

So, last week, I promised you guys a recipe…

But first, you have to do me a favor!

Say it with me now, “SAAAAAAAAAAM-on”

None of this sALmon stuff…because, you know, then my post title won’t make as much sense! 😉

Moving on!

My friend’s fiance returned home from Alaska a few weeks ago. While he was visiting the arctic oasis, he did a little fishing and well…much to the amazement (and later, panic) of my friend ended up bringing home a salmon big enough to feed an army! Knowing that her and her man would NEVER be able to eat the entire fish, she decided to share the wealth! And I couldn’t have been more grateful!

I swear it’s not just in my head, but this salmon was probably the BEST salmon I’ve ever eaten in my life!

So fresh…so flaky…so buttery smooth!

And if I had to describe this recipe in three words?

Gourmet….Succulent….and Quick!

Hmm, never thought those three words could go together, did you?

Coconut Curry Salmon & Grains

Coconut Curry Salmon with Spiced Grains

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients (Serves 4)

    For the Spiced Grains

    • 1 cup bulgur wheat (quinoa would also be a good choice)
    • 1/2 cup canned coconut milk
    • 1 1/2 cup water
    • 1/2 teaspoon cinnamon
    • 1/4 teaspoon nutmeg
    • 1/8 teaspoon ginger
    • S&P to taste

    For the Coconut Curry Salmon

    • 1 12 ounce wild-caught salmon filet, cut into 4 ounce servings
    • 1/4 cup canned coconut milk
    • 1 teaspoon curry powder
    • S&P to taste

    Instructions

    For the Spiced Grains

    Combine bulgur wheat, coconut milk, water, and spices in a medium pot and bring to a boil.

    Allow to cook for approximately 15 minutes or until most of the liquid is absorbed.

    Remove from heat and allow to sit for about 5 minutes to finish soaking up the coconut milky goodness.

    Fluff with fork, adjust seasonings as needed, and top with grilled salmon filet.

    For the Coconut Curry Salmon

    Preheat a grill pan (or better yet, an actual grill) over medium heat.

    Combine coconut milk and spices in a shallow bowl.

    Dip salmon filets in coconut milk mixture, turning to coat on both sides.

    Transfer filets to grill.

    Cook filets approximately 6-8 minutes, or until light pink halfway through the thickness of the filet.

    Turn and cook for another 5-6 minutes.

    This dish was undeniably delicious! I couldn’t believe how it tasted like I had spent hours slaving over a hot grill (pan) yet only took about 20 minutes for it to all come together!

    And it tastes even better with sides like fresh steamed greens and some cinnamon roasted sweet potatoes (loved my little purple people eater sweet potato that I snagged on my last trip to Whole Foods…sooo pretty)!

    If you could grill one thing…and ONE thing only for dinner tonight, what would it be?
    That’s easy for me! I’ve seriously been LOVING on some portobellos lately! Yummm!
