Salmon Says

Hey guys! Thought I’d pop in real quick before I get back to battling my Google reader! There may be 218 unread posts, but I’m maaaaaaaaaakin’ headway! 😉

So, last week, I promised you guys a recipe…

But first, you have to do me a favor!

Say it with me now, “SAAAAAAAAAAM-on”

None of this sALmon stuff…because, you know, then my post title won’t make as much sense! 😉

Moving on!

My friend’s fiance returned home from Alaska a few weeks ago. While he was visiting the arctic oasis, he did a little fishing and well…much to the amazement (and later, panic) of my friend ended up bringing home a salmon big enough to feed an army! Knowing that her and her man would NEVER be able to eat the entire fish, she decided to share the wealth! And I couldn’t have been more grateful!

I swear it’s not just in my head, but this salmon was probably the BEST salmon I’ve ever eaten in my life!

So fresh…so flaky…so buttery smooth!

And if I had to describe this recipe in three words?

Gourmet….Succulent….and Quick!

Hmm, never thought those three words could go together, did you?

Coconut Curry Salmon & Grains

Coconut Curry Salmon with Spiced Grains

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients (Serves 4)

    For the Spiced Grains

    • 1 cup bulgur wheat (quinoa would also be a good choice)
    • 1/2 cup canned coconut milk
    • 1 1/2 cup water
    • 1/2 teaspoon cinnamon
    • 1/4 teaspoon nutmeg
    • 1/8 teaspoon ginger
    • S&P to taste

    For the Coconut Curry Salmon

    • 1 12 ounce wild-caught salmon filet, cut into 4 ounce servings
    • 1/4 cup canned coconut milk
    • 1 teaspoon curry powder
    • S&P to taste

    Instructions

    For the Spiced Grains

    Combine bulgur wheat, coconut milk, water, and spices in a medium pot and bring to a boil.

    Allow to cook for approximately 15 minutes or until most of the liquid is absorbed.

    Remove from heat and allow to sit for about 5 minutes to finish soaking up the coconut milky goodness.

    Fluff with fork, adjust seasonings as needed, and top with grilled salmon filet.

    For the Coconut Curry Salmon

    Preheat a grill pan (or better yet, an actual grill) over medium heat.

    Combine coconut milk and spices in a shallow bowl.

    Dip salmon filets in coconut milk mixture, turning to coat on both sides.

    Transfer filets to grill.

    Cook filets approximately 6-8 minutes, or until light pink halfway through the thickness of the filet.

    Turn and cook for another 5-6 minutes.

    This dish was undeniably delicious! I couldn’t believe how it tasted like I had spent hours slaving over a hot grill (pan) yet only took about 20 minutes for it to all come together!

    And it tastes even better with sides like fresh steamed greens and some cinnamon roasted sweet potatoes (loved my little purple people eater sweet potato that I snagged on my last trip to Whole Foods…sooo pretty)!

    If you could grill one thing…and ONE thing only for dinner tonight, what would it be?
    That’s easy for me! I’ve seriously been LOVING on some portobellos lately! Yummm!

    WIAW: What’s Your Flava?

    Tell me what’s your flava?!

    Alright, so now that we have our tune-age, let’s get this party started!

    And as always, a big thank you to Jenn of Peas & Crayonsfor allowing these shenanigans to go down week after week!

    Now, I didn’t pick that song for nothing folks, this WIAW post is heavy on the FLAVA…

    combos that is!

    Come…drool with me…

    Breakfast (6:30am)
    My go-to “in a hurry oats”:
    1/2 cup rolled oats, 1/2 cup almond milk, 1/2 cup water, 1 small banana (sliced thin), vanilla extract and cinnamon all thrown in a bowl and nuked in the microwave for 4 minutes!

    Topped with Studly Sunflower Seed Butter & orange dark chocolate squares

    The chocolate on it’s own is out of this world, but the addition of the  SSB put it over the top!

    Yaaaa-umm!

    Snack (10:30am)
    Watermelon, Cucumber, & Feta Salad

    Wish I could take credit for this one, but I got the idea from some magazine a couple of weeks ago. I couldn’t remember the exact recipe so I simply added freshly cracked black pepper and a drizzle of balsamic vinegar to the summer trinity…

    Sweet and salty and oh so refreshing!

    Lunch (12:30pm)
    Hugh Jass spinach salad topped with cucumber, zucchini, carrots, onion, bell pepper, sun-dried tomato, cottage cheese, pine nuts and a leftover bean & mushroom burger
    (recipe still needs tweaking)

    Maybe the question is: What did I NOT put in the salad!?

    With a side of HALF a kombucha
    (expensive little devils…gotta ration them out, ya know?)

    By the way, Gingerade is seriously rivaling Citrus as my favorite kombucha flavor!

    Afternoon pick-me-up (3:30pm)
    Iced coffee PLUS a shot of espresso and soy milk from a local coffee shop

    After forgetting/running out of time to make coffee this morning, this cup was…

    enjoyed…appreciated…NEEDED!

    Snack (4:00pm)
    Dry roasted edamame, Emerald’s cocoa roasted almonds, and dried tart cherries

    I literally “mmm-ed” my way through two big handfuls of this delicious combo!

    Dinner (8:00pm)
    Scrambled BBQ eggs on Cranberry Pecan Bread with my “favorite at the moment PB” and my ever trusty F.R.O.G preserves!

    C’mon guys, I couldn’t have a post dedicated to flavor combos without indulging in
    my most favorite foodie fusion of all!

    Mark my words…I will never EVER get tired of BBQ and PB&J!

    The recent PB obsession…SUPER crunchy (duh, like it says on the jar) with the PERFECT amount of sweetness!

    And yes my friends THAT would be an okra “tree” planted behind my plate!

    Who knew raw okra could be so tasty?!

    Annnnd just because I like the angle of this shot so much, you get another pic! 😉

    And for dessert?

    Gummies…and a cupcake 😉

    Now that’s an interesting combination!

    It may not be Jenn’s Red Velvet Cupcake, but it was DEFINITELY delicious!

    What’s your favorite “real” cupcake flavor? I would never turn down a free cupcake, but coconut cake is definitely one of my faves!
