Happy Birthday to My Mum!

What makes for a great birthday celebration?

Delicious eats?

New recipes?
(coming soon!)

Mom’s “swoon of approval” ?

Family time?

Lots of laughs?

(We’re such a serious family!) πŸ˜‰

And lastly, wine that causes my mom and me to start talking in British accents?

(I totally bought this for the label!)

I’m gonna go with D.) All of the above!

πŸ˜‰

What is your favorite birthday memory?
Mine would have to be my 12th birthday…back in the day of the “beanie baby craze”! I had about 6 of my best friends and we spent the entire night (my poor mama) giggling, playing games, being loud, and eating a delicious spread of foods and snacks! And somewhere during the night, the beanie babies morphed into grenades and the living room became a warzone! Haha!

My Breakfast Date

So you know how I mentioned in my WIAW post that I was a little “fond” of my newest combo of dates and sunflower seed butter? Well, what I failed to disclose is that me and SSSB (“Studley Sunflower Seed Butter) have been “talking” for a while.

I was a little nervous, but I agreed to meet him for breakfast this morning…which gave me a good reason to break out the new hair straightener that Santa I just got me!

Ok, so I was a teeeensy bit excited…

And then he showed up!

In all his banana slice/carob chip glory!

Isn’t he breathtaking?

You think he’s gotten any work done?

Eh, I digress…

I could feel the chemistry from the very beginning…

But I just closed my eyes and jumped inΒ took a bite…

(Ok, ok…so my eyes were open!) but then I knew for sure…

Love at first sight bite!

Sadly my romance was short-lived.

That is, until his twin brother showed up!

The world is right again!

Banana Carob Chip Oats (In a Jar):

  • 1/2 cup rolled oats
  • 1/2 cup unsweetened almond milk
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 1/2 Tablespoon chia seeds
  • 1 1/2 Tablespoons nutritional yeast (trust me on this one!*)
  • 1 small banana, sliced
  • 1/2-1 Tablespoon carob chips
  • 1 near-empty SSB jar

1. In a microwave-safe bowl, combine oats, milk, water, and extract and cook on high for 3-4 minutes, stirring halfway through.
2. Stir in nutritional yeast and chia seeds and allow 2-3 minutes to thicken.
3. Transfer to waning nut butter jar, layering with banana slices and carob chips.
4. Prepare to swoon!

Β *If you’ve never tried it before, let me just tell you now that SSB and nutritional yeast were MADE for each other…the mild sweetness from the butter…the savory taste of the nooch…match made in heaven!

What’s the last breakfast that made you swoon?

Have you ever tried OIAJ?

WIAW: Still Chugging Along

Hey guys and gals! I’m so glad you enjoyed the coupon post yesterday! If you missed it, be sure check it out…lots of resources and links for saving some moolah (and let’s face it, no one has a problem with that)!

Guess what time it is!

WIAW: Edition numero 2749

It’s hard to believe I’ve been doing WIAW posts for over 6 months now! What’s even harder to believe is that I’m still not bored with them yet…and that’s saying a lot since I have selective ADD…oh look, a puppy!

Memory of a goldfish…attention span of a toddler…
only a few of the qualities that make me so lovable! πŸ˜‰

Annnnnnd since I know you guys also love me for my foodie photos, how bout we get this party started?

And as always, a big thank you to the beautiful Jenn of Peas & Crayons for being our hostess with the most-ess!

Pre-Run Fuel (4:45am)
Big fat Mejool date stuffed with sunflower seed butter (my newest favorite combo!)

Breakfast (7:45am)
Deconstructed yogurt parfait: French Vanilla Chobani, banana, cinnamon Puffins, carob chips, thinned Mighty Maple PB, and a sprinkle of chia seeds

And of course I had my daily cuppa Joe!

I’ve actually been loving coffee lately sans cinnamon. Been drinkin’ it black…like a soldier…well a soldier that has refined tastes and access to Starbucks caramel flavored coffee! πŸ˜‰

As always, breakfast was quickly followed by “dessert”
(vita gummies)

Snack: (Grazing throughout the day)
The sweetest juiciest organic carrots I’ve ever had…by the fistful!

Lunch (12:00pm)
PB oats with 2% Cottage Cheese, BBQ seasoning, and FROG preserves.

If you’re getting tired of seeing this combo pop up all over the blog, I’m sorry, but I’m afraid it’s not going anywhere any time soon…it’s just too darn tasty!

Snack (4:00pm)
My last peach from the farmer’s market. So juicy that I had to hold it over the sink to eat!

Yeahhhh buddy!

Snack (5:00pm)
Cookies ‘n Cream Luna Bar

I’m working on trying every flavor of the Luna Bars…so far, none can hold a candle to the Peppermint Stick flavor!

Water Consumption: 2.5 Liters

Dinner (7:45pm)
Stir Fry over spinach

I had some bell peppers, onions, and yellow squash leftover from this weekend’s barbeque so I sauteed them in a skillet with some sesame oil and added some Bragg’s liquid aminos (soy sauce) and dijon mustard. Then I mixed in some (pre-packaged) seitan, added a few diced tomatoes and some sesame seeds.

Mmm, mmm, mmm!

Confession:Β

Trips for “Milk & Yogurt” end up like this far more than I’d like to admit!

This is my loot from a few weeks ago! First time ever buying seitan…now I think I’m in love! Definitely going to be looking into making some of my own very soon!

What are your favorite stir fry ingredients? Veggies? Sauces?
Just about every stir fry I make starts out with peppers and onions, but I love adding sugar snap peas and carrots and peanut sauces are my absolute fave!
